Crispy Tofu Katsu Curry
I don’t know about you, but a crispy Katsu Curry is my idea of some serious comfort food. I’ve made this simple curry sauce made using Lifeforce almond butter to top this recipe off. The curry sauce is so delicious over this crispy tofu but also over vegetables, chips, and anything really!

Miso Aubergine
Ok, get ready for this. I love roasted aubergine and if this is not the best version you have I don’t know what is. It’s so good you won’t want to share so maybe make double. The miso really gives a memorable taste to this aubergine that will almost be falling apart for a moreish veggie side dish.

Sweet Potato + Cauliflower Fritters
I love fritters as a nice way to use up veg in your fridge and let’s be honest, a tasty way to get some veg in full stop. I usually make these fritters with cauliflower florets but increasingly I’m using the stalks of my favourite cruciferous vegetables as the main component. So, next time you’re making something with cauliflower be sure to save the stalk for some fritters! Peanut Butter Pad Thai Style Noodles
When my favourite tofu Pad Thai meets peanut buttery noodles it’s a combination that keeps you coming back for more.
Soft noodles wrapped in the tangy creamy peanut butter sauce with crispy onion, crunchy carrot, it’s a bowl bursting with flavour and textures that have me honestly mouth-watering and tummy rumbling as I type this. The recipe was made using Irish brand, LifeForce Peanut butter.
