Sweet Potato & Chickpea Fritters

Breakfast? Sorted! I have to say this is the greatest way to start the day. These fritters are perfect served alongside some soft poached eggs. I like to make the mix the night before so its ready to cook the next morning. I picked up some handy silicone egg poaching pods which makes poaching super easy.

What I love about waffles, they offer everything pancakes do but a little less fuss! No worries about flipping them over, they’re almost foul proof! One of the best purchases I made last year was a waffle maker, you can pick them up for around €20-30 in Argos, home stores and online. This recipe is an all in one mix, ready in under 10 minutes!

NBF Cheesecake

This cheesecake is a winner all round, easy and delicious! I will warn you I managed to demolish the whole thing… over 2 days though so don’t judge me:) Its the type of cake that tastes even better the next day. Its important to let it cool fully before cooking to let the middle fully set and lemon soak up. I can’t wait for you to try this, its been a huge hit in your place!

Granola Bites

Crunchy little snacks to have on the go! I love energy balls to keep at arms length to warn off hanger but sometimes raw ones just don’t hit the spot. These granola bites have a delicious toasty outer layer packed full of crunch and chewiness! They can be tricky to roll hence why letting the mix sit in the fridge is key, the coconut oil sets a little to make the mix nice and sticky. The bites are suitable for storing at room temperature and last 10 days in an airtight container.

Salted Coconut Cookies

Ok these are my favorite new recipe and so easy to make! These came about by complete mistake I was in a rush and wanted to make something for friends calling over and winged it with whatever was in my kitchen press et voila a perfect mistake! Make sure the tbsp. readings are correct, you can get very good spoon measurements in baking stores and larger supermarkets. The method is easy to follow and they bake in no time, its important to let them cool even for 15 minutes to get crisp and hard before cutting. I have given the option to dunk in dark chocolate but they honestly don’t really need it! These will keep at room temperature in an airtight container for 8 days. Happy Baking!

Digestive Biscuits

This recipe was by total accident I couldn’t believe they tasted so like the real thing! I had some oat flour in my press I had picked up in a supermarket so I decided to the flour instead of blending oats like I usually do. I have tried it both ways it does work well if you blend the pats yourself but you have to mill them for a while- I milled mine in the nutribullet for about two and a half minutes until it had turned pure white and very fine, its really important to let the milled oat flour cool fully as it will get warm in the blender and this will effect the next step of the recipe!
