Raspberry Cheese Danish Thumbprint Cookies

Raspberry Cheese Danish Thumbprint Cookies

I’ve been staring at my pantry these days looking for exactly anything other than what I have.

You do that too, right?

Sure there is a bounty in this home, a true wealth of nutrients but like…. where is the box of Entemann’s coffee cake that happens to be literally the only thing I want to eat right now? Where is that? Somewhere beyond the too many cans of baked beans?

It was on such a day, with such a craving, and without yeast to speak of that these cookies were born.  A crisp and tender cookie bowl to hold sweetened cream cheese and raspberry jam comnbination.  Sweet, creamy, fruit, bright, comforting – all the things the wash over a cheese danish craving like no other.  I added a buttery crumble topping because… listen, I was already in deep and a crumble makes good things great.

This cookie dough can house any number of creativity and cravings.  If you were to combine a nutella and sweetened peanut butter mixture, I’d absolutely shake your hand in support.

Summer Bucket List, 2020.

Summer Bucket List, 2020.

Hello friends!

It’s that time of year again though, what a doozy of a year we find ourselves in.  I won’t call it ‘unprecedented’ and I won’t use the word ‘uncertain’.  Enough of that.  We’re living through everything all at once. Truly. But we always have – we’re just feeling it more.  We can take it and we can make moves from it. In all that – we have summer. A time for sunning and reflecting and playing and being in love.

Let It Be Sunday, 274!

Let It Be Sunday, 274!

Hello dear friends.

I mean this most sincerely – how are you?

I’m ok. I can tell you, I can’t remember ever feeling the way I’ve felt this week. The best way I can describe it is maybe… soul tired? But I know it’s not permanent because GodAlmighty nothing is.

It feels like this has been the week that non-black people acknowledged systemic racism in our culture and took to both the streets and Instagram about it.

Let It Be Sunday, 273!

Let It Be Sunday, 273!

Hi friends.

Where are we this week? In such a dark dark place. I read this headline today and could only say “My God” aloud.  It’s hard. It’s always hard sometimes we feel it more deeply.

We have a lot of places to go in today’s Sunday post but let me start here:

I read every single one of your comments on my birthday post last week.

Falafel Deviled Eggs

Falafel Deviled Eggs

Hi friends – yes, it’s me – the girl that brings Deviled Eggs to the party just so she can eat them all. (Wait… remember parties?)

As we’re slowly, very slowly, starting to merge together once again, maybe you’ll see fit to make approximately too many Deviled Eggs to eat most of and share with a few fine folks.  They should be special. Everything we do in close proximity to one another should be special these days.

Deviled Eggs are at the top of my list of perfect foods.  Oreos are also on this list, alongside Brown Butter Chocolate Chip Cookies and my grandmother’s Tuna Salad.  You can trust me, you can trust the list.  Truly – any way you devil your eggs is the right way to do it.  Just let there be mayonnaise and salt and a sprinkle of something red.

Let It Be Sunday, 272!

Let It Be Sunday, 272!

Hello sweet friend!

Gosh we made it to another Sunday. Can you believe?

Will you do me a favor?  Tell me what you do when you settle down with this post? What’s your routine?  I can tell you my routine in writing this post for you – it’s really my favorite thing to put together for you every week.

I build Let It Be Sunday all week.  I pile in links here and there as the Internet comes at me over the week.  On Friday I sit down to spend time sorting thru to see what makes the cut.  I usually have a cup of tea, James Blake on the stereo, Tron meowing for dinner an hour early, me thinking about wine an hour early.  I schedule the post for Sunday, cross my fingers that I’ve done enough proof reading though I know I never do, and I high-five myself to have an actual weekend.

I appreciate so much that you’re on the other end of these random thoughts.

This is 39!

This is 39!

I turn 39 today!

That’s a mind-bender of a sentence to type. The only person it might be weirder for is my mom as we seem to be, someway somehow, approaching the same age.  I stopped my mom’s age somewhere between 45 and 48.  She’s older now and thriving thankfully, but if forced to say her true age I wouldn’t have it in me because I simply don’t know. 60’s? It’s much easier to just pause at an age and mature gracefully from there.  So… it’s odd that my mom and I are approaching the same age and I’ll just let it be that way.

Peanut Butter and Strawberry Jam Cobbler

Peanut Butter and Strawberry Jam Cobbler

If this dessert were a kid on the playground it would the little one flying headfirst down the slide, screaming “LOOK WHAT I CAN DO!”.  It feels a little dangerous, it definitely makes you smile, and it will not quit until it has your attention.

So here we are.

I feel like you’re already headed to the kitchen and that’s the right instinct.

Fresh strawberries are baked into a thick,  sweetened + spiced jam, topped with actual peanut butter cookie dough, and baked together into what can only be described as the most ridiculous pb + j situation there is.

It’s the sort of dessert I hope you get to present to your pals on the backporch this weekend with a resounding “Look what I can do!” Everyone applauds and the world, for a moment, is healed – that’s my dream for you and us.

Can I show you how this comes together?

We’re bringing two recipes together for this cobbler.

Black Bean Shakshuka

Black Bean Shakshuka

I’ve been swapping dinner and breakfast.

Just yesterday for breakfast I had a hot dog with mustard and potato salad. For dinner – scrambled eggs and a tortilla.

My morning are slower this week. My motivation to go for that jog has faded into the deep (early quarantine) past as has my desire to even heat up breakfast. What I didn’t mention about yesterday’s dinner-breakfast was that it was a cold hotdog with potato salad….

Let It Be Sunday, 271!

Let It Be Sunday, 271!

Hello friends!

It’s another fine Sunday and I hope it finds you well, healthy, and with coffee.

How’s your family text thread? Mine is filled with daily updates of everyone’s gardens, the frequent mention of cakes we miss eating together, pictures of our animals, and the occasional guilt-trip offshoot text which, as you might imagine, are my least favorite. So. Ya know.  We’re all just in it and doing our best.

Accomplishments this week include and are strictly limited too, stress-baking funnel cake, stress-vacuuming, and stress-making myself a really nice gin and tonic.
