A Single Molten Chocolate Cake
Friends, hello!
I very much need you to know that cake is available to you, right now, from your very pantry, warm from the oven, melty on the inside, in all ways perfect.
This single serving molten chocolate cake comes from my first cookbook where it lives on forever in print as Single Girl’s Chocolate Cake – as though single girls have anything at all to wallow in cake about. I get it now. They don’t – this cake is a celebration in itself.
I recently made this cake on Instagram at you and shared a link to the recipe in one of my Sunday posts, but I’m also going to leave this cake here for you as a reminder and an invitation, maybe a little bit of a bossy request to make and enjoy this cake exactly right now.
It’s a cake for our current times: simple and versatile where ingredients might be sparse and high-impact rewarding because… melty chocolate, duh.

Let It Be Sunday, 265!
Hello dear friends.
How are you holding up? We’ve made our way to another sweet Sunday though much of the week feels more more unmoored than usual. That’s ok. We can still be lighthouses – the duty of such steadiness, for me, shifts from friend to friend as we ebb and flow through various states of freakedoutedness. That’s a word.
I’m writing this laying on my little backyard deck. I’ve literally never laid out here before and I can’t think of a single good reason besides the deep summer heat and incessant mosquitos (who miraculously have yet to decent upon New Orlean).

Andouille Plantain and Pineapple Fried Rice
I’ve been squirreling around my pantry (ever so grateful) finding myself surprised by what I’ve tucked away and forgotten.
Gosh there is a truly eclectic assortment of pastas, just about every type of rice, half a jar of Nutella that I finished off with a spoon this morning, and (admittedly) a few boxes of brownie mix because I really love a boxed brownie.
I’ve been surprised by what I can pull together from the pantry.

Let It Be Sunday, 264!
Hello my dearhearts.
How are you holding up? I just took a big deep exhale just posing that question. I’m ok. You’re ok. All of us are doing our best for ourselves and for the people around (but far away) from us. Those are truths we can carry with us today.
How are you staying connected? I’ve had a few FaceTime happy hours with friends. I’ve had faraway porch hangs with a few friends. I’ve waved at everyone I pass walking down the street. I mean wow… y’all we’re friendlier than ever. Is this us truly realizing how much we need one anther?

Twelve Frosted Cupcakes, One Stick of Butter
Hello friends.
Let this be a bit of sunshine in your day.
This is a very vintage Joy the Baker recipe I’ve brought back to life for this modern day. Cupcakes feel… I dunno… maybe a little trivial considering our current reality, but even as strange as things are, some things remain the same – our sweet teeth and need for little cakes.
This recipe is a wonder in that it uses one simple stick of butter to make and frost 12 tender little cupcakes.

Upside Down Bananas Foster Cake
Someone on the street today said (from a safe distance) “How are you?” .
“Great!” I said. Confident for several seconds before adding, “Ya know… scared and anxious but also… great?”
That’s where we are these days. In two realities: one of occasional fear and constant uncertainty, the other of just normal TGIF feelings. We can be both places. That can be ok for now. It must really feel that way especially if you have young, playful kiddos at home. I see y’all out there!

I just lit a candle.
I just lit a candle and took a lap around my house, passing shoes my feet discarded under the dining room table and a pile of dishes in the sink I’ve promised myself I’ll wash later. As is always true, there’s no escaping myself – especially these days.

If you’re anything like me, you vacillate wildly and frequently between:

Let It Be Sunday, 262!
Hello dear friends.
We all know what’s going on and we all know it’s not feeling great. We’re all experiencing disruption in one way or another and it’s extremely unsettling. In what is true and good news, some aspects of day to day life still go on. We’ve got each other in this little Let It Be Sunday post. We’ve still got hot coffee. We can take a long spring walk. We can grab a bucket and wash our cars (which I did yesterday and wow it oddly felt GREAT).
I hope you find a break from some of the chaos noise and a pleasant surprise in the disruption. That’s my sincere wish for you this weekend as we navigate this new and temporary reality.
