Recipe Friday, August 12th Lime Cottage Cheese Salad
Beth is on vacation this week, and trying to stay un-plugged, but she has asked Janet, her trusty admin assistant, to post this recipe for her today.
Lime Cottage Cheese Salad
1 pkg. lime jello 1 (9 oz.) can crushed pineapple
1 c. boiling water 2 c. cottage cheese
2 c. miniature marshmallows 1 c. whipping cream, whipped
pinch of salt 1/2 cup nuts
Dissolve jello in boiling water;add marshmallows and let melt. Stir in salt and pineaple. Chill until slightly thickened. Fold in cottage cheese, whipped cream and nuts. Chill.

Recipe Friday, August 5th - Twenty-Four Hour Salad
This is an old, old recipe that you may have had before, but it makes a great cool supper, and should be made ahead of time. I was once brought this as a 'welcome to the neighborhood' offering and it was sure appreciated after a long day of moving.
Twenty-Four Hour Salad
1/2 lb. bacon, fried and crumbled 1 bag peas, uncooked
1 head lettuce 1 pkg shredded cheddar cheese
1 head cualiflower, separated into 1 pt. mayonnaise
bite-size pieces 1 pkg. Ranch dressing mix
In a bowl, layer lettuce, cauliflower, peas and all but 1/2 cup Cheddar cheese. Spread top with mayonnaise, sealing edges. Sprinkle Ranch dressing mix over top. Crumble bacon over dressing. Sprinkle with reserved 1/2 cup grated cheese. Cover tightly with plastic wrap, let stand 24 hours or overnight in refrigerator. Toss and serve immediately.

Recipe Friday, July 29th Taco Salad
Yet another recipe from an Amish friend in Colorado - easy, quick and no oven required.

Taco Salad
1 head lettuce (shredded or chopped) 1 can kidney beans
1 1/4 lb. hamburger 1 pkg. corn chips
1 c. cheese, shredded 1 bottle Thousand Island dressing
1 pkg. taco seasoning
4 c. diced tomatoes
Brown hamburger;add taco seasoning and cheese. Add to lettuce, tomatoes and beans. Just before serving, add chips and dressing.
It seems I just have to add my own two cents to every recipe. To this one, I would add sliced black olives and slices of avocado. You could use pinto or black beans instead of the kidney beans. It could be served in a tortilla bowl or plated on a bed of lettuce or tortilla chips.
What do you think? I think it sounds like just the thing on a HOT summer evening!

Recipe Friday - July 22 Cherry Cream Cheese Cake
Beautiful, plump cherries I saw at the grocery store this morning are the inspiration for today's recipe from an Amish friend in Colorado:
Cherry Cream Cheese Cake
1 pkg. graham crackers, crushed 1 Tbsp. sugar
1/2 stick margarine (or less)
Mix together and press into pan.
Topping:
1 (8oz) cream cheese, softened 1/3 c. lemon juice
1 can sweetened condensed milk 1 tsp. vanilla
Mix together and spread over crumbs. Chill. When ready to serve, put thickened pie filling on top, whatever you prefer: cherry, raspberry, blueberry, etc.
It doesn't look like we're going to get a break in this heat any time soon, so I've been looking for recipes that do not require the oven.

Recipe Friday, July 15th - Preserving Children
It's too hot to cook, so here's a whimsical recipe from an Amish friend in Colorado:
Preserving Children
Take one large grassy field, one half dozen children, all sizes, one dog, one long narrow strip of brook. Mix children with the other ingredients and empty them into the field, stirring continually. Sprinkle with field flowers. Pour brook gently over pebbles. Cover all with a deep, blue sky and bake in a hot sun. When children are well browned, they may be removed. Will be found ready to cool in the bathtub with lots of soap and warm water.

Recipe Friday, July 8th - Zucchini Patties
Hardly anyone needs to buy zucchini in the summer. At least where I live, zucchini grows so prolifically in backyard gardens that nearly everyone knows someone who is trying to give it away.
Zucchini Patties
3/4 c. flour 1 Tbsp. corn meal
2 tsp. baking powder cold water
1 Tbsp. sugar 2 c. zucchini, shredded
1/2 tsp. salt 1/2 c. onions, diced
Mix together flour, baking powder, sugar, salt and corn meal. Stir in enough cold water for a thick batter. Mix in zucchini and onions and drop by heaping tablespoon in deep fat (in large skillet on stovetop). Flatten patties slightly as you turn them. Fry to a golden brown.

I've also read that these patties can be baked at 350 on a baking sheet sprayed generously with olive oil. Bake for 8 minutes, spray patties with olive oil, flip patties over and bake for another 8 minutes or until brown.

Friday, July 1st- Baked Beans
From an Amish friend in Colorado:
1 (1 lb.) bag beans
1 c. catsup
1 c. brown sugar
1/2 c. light Karo and a little pancake syrup
1 lb. bacon or wieners or ham
Soak beans overnight. Cook with some salt until completely tender;drain. Add rest of ingredients and bake for 30 minutes.
Even though this recipe is a little light on details, I think it would be perfect for an Independence Day gathering. It should serve at least 12 and be good with some grilled burgers or chicken.
I hope you'll try it and if you can post the missing details, I'm sure my readers will appreciate it.

Recipe Friday, June 24th - Fry Pies

Here's a more traditional fried snack from an Amish friend in Colorado:
Fry Pies
9 cups flour 2 cups water
2 Tbsp. sugar thick fruit filling
1 Tbsp. salt shortening for deep-fat frying
Glaze:
4 lbs. powdered sugar 1/4 cup powdered milk
1/4 cup cornstarch 1 1/4 cup warm water
1 tsp. vanilla
Combine in large mixing bowl the flour, sugar and salt. Cut in shortening until pieces are the size of small peas. Add water, a little at a time, until the flour mixture is moistened. Form into 4 balls. Roll out balls using a fry pie press. Press out a circle, put dough on press and fill with fruit filling. Make edges wet with water, fold and press closed to seal edges. You don't have to have a pie press, but it does make things easier.
Heat shortening; fry a few at a time until golden brown. Cool. Mix glaze until smooth. While pies are still warm, dip them into glaze and put on wire racks to allow pies to drip. Yields: 40 pies
I think I might just dust a little powdered sugar over, rather than the sweet glaze called for. I can see this as a great team project, assembly-line style. They'd be good for a family gathering.

Recipe Friday, June 17th -- Amish Carrot Salad
This recipe sounds easy and cool. I'm thinking a whole cup of sugar may be a bit much. Let me know if you try it and what you think.
Amish Carrot Salad Recipe

Ingredients:
2 lb carrots
1 cup fat-free mayonnaise
1 lb raisins
1 cup sugar
1/4 cup cider vinegar
Directions:
Slice or shred carrots thinly. Mix with remaining ingredients. Chill overnight for best flavor.

Friday, June 10th - Amish Meat Balls
It's so HOT here in Texas right now, I can't get jazzed about heating up the oven for any reason. I've been looking for some stove-top recipes to share. Here's one for a main dish that I think will be good with just a simple cool tossed salad and maybe with those egg noodles we made last week.

Amish Meat Balls
Ingredients:
1 1/2 teaspoons salt
1 egg
1 pound ground beef
1 tablespoon dried parsley
1 teaspoon Worcestershire sauce
1/2 cup chopped onion
1/2 cup milk
1/2 pound ground pork
1/8 teaspoon pepper
3/4 cup fine dry bread crumbs
Directions:
Mix all ingredients. Shape into balls the size of walnuts. Brown in 1/4 cup vegetable oil. Remove meat balls and make gravy. (See below) Return meatballs to gravy. Cook 15 to 20 minutes.
Meat Ball Gravy
Stir 1/4 c. flour, 1 tsp. paprika, 1/2 tsp. salt and 1/8 tsp. pepper into hot fat in skillet. Stir in 2 c. boiling water and 3/4 c. sour cream.
Makes 6 to 8 servings.
