Recipe Friday is Back!!

Happy Friday everyone!  TGIF!!!

I love a recipe that is mostly pantry staples and if it includes CHEESE, so much the better! Especially during this time when I have rewrites and stressful deadlines.  I crave comfort food.   What do you suppose Yumazitti means?


Amish Yumazitti

8 ounces wide noodles, cooked and drained
1 1/2 pounds ground beef
1/2 cup diced celery
2 tablespoons butter
1/4 teaspoon pepper
Salt to taste
1 (10 1/2 ounce) can cream of chicken soup
1 (10 ounce) can tomato paste
1/2 pound Cheddar cheese, grated

Brown meat in butter, and season with salt and pepper.

Place a layer of noodles in a 2-quart casserole, then one layer each of meat, celery, soup, tomato paste and cheese. Repeat until all the ingredients are used, ending with layer of cheese and bake, uncovered, at 350 degrees F for 1 hour.

International Women's Day

Happy Tuesday!

Did you know that today, March 8, is International Women's Day, a global day celebrating the economic, political and social achievements of women past, present and future. International Women's Day 2011 celebrates 100 years of women's achievements.  In some places like China, Russia, Vietnam and Bulgaria, International Women's Day is a national holiday. 

How do you think the Amish women of Paradise, Pennsylvania would celebrate such a holiday?

Recipe Friday - Graham Streusel Cake

Hello!

Hope everyone had a wonderful Christmas! 

This recipe came from Amish friends in the San Luis Valley.  I love graham crackers, so this looks especially good to me!

Graham Streusel Cake

2 c. graham crackers, crushed
1 1/4 tsp. cinnamon
3/4 c. brown sugar
3/4 c. butter, melted
1 box cake mix (yellow or white)
1/4 c. oil
3 eggs
1 c. water

Mix crumbs, brown sugar, cinnamon, and butter.  In another bowl, blend cake mix, water, oil, and eggs.  Pour half the batter in greased and floured pan.  Sprinkle half the crumbs on batter; spread remaining batter evenly over crumb mixture, then remaining crumbs on top.  Bake at 350 for 45 to 50 minutes.

Recipe Friday -- Pineapple Nut Cake With Cream Cheese Frosting!

Happy Friday!

Special thanks to Marti Walker for reporting to us about the Chocolate Mint Bars posted here last Friday.  She said they were wonderful!  (see her comment under the Chocolate Mint Bars post)

Today's recipe is another one from the San Luis Valley in Colorado.  Enjoy!

Pineapple Nut Cake With Cream Cheese Frosting

2 c. flour
2 c. sugar
2 tsp. baking soda
dash of salt
1 c. chopped nuts
15 oz. crusheed pineapple, indrained
2 eggs
1 tsp. vanilla

In a large mixing bowl, stir flour with sugar, soda, salt, pineapple, eggs, vanilla, and nuts until well mixed.  Bake in greased 9 x 13-inch baking pan for 40 to 45 minutes.  Remove from oven and immediately spread with cream cheese frosting.

Cream Cheese Frosting:

8 oz. cream cheese
1/2 c. (1 stick) margarine
1 1/3 c. powdered sugar
1 tsp. vanilla
nuts (optional)

NOTE FROM BETH -- I just noticed that the recipe doesn't say what temperature to bake at?  What do you think?  I'd like to try this.  350?

Recipe Friday -- Chocolate Mint Bars

Happy Friday!  This looks like a good recipe to post this time of year.  I'm hoping someone tries this and reports back!    Compliments of my Old Order Amish friends in Westcliffe, Colorado. 


Chocolate Mint Bars

1/2 c. cocoa
2/3 c. shortening
2 c. brown sugar
3 eggs
1 tsp. vanilla
1 1/4 c. flour
1 tsp. baking powder
1 tsp. soda

Mix sugar, shortening, eggs, cocoa, and vanilla; blend well.  Add flour, baking powder and soda, then mix well.  Bake in greased 9 x 13-inch pan at 350 for 25 minutes or until done.  Cool.  Frost.

Frosting:

2 c. powdered sugar
1/2 c. butter
2 Tbsp. cream or milk
1/2 tsp. peppermint extract
green food coloring (if desired)
1/3 c. chocolate chips
2 Tbsp. butter

Cream powdered sugar, 1/2 cup butter, cream or milk, and peppermint extract.  Tint with green food coloring, if desired.  Frost bars.  Refrigerate and glaze with chocolate chips and 2 Tablespoons butter, spread over cold frosted bars.

Recipe Friday -- High Fiber Balls!

Yes, I know...the name kinda makes you wonder, but an Old Order Amish friend in Paradise, Pennsylvania gave me this recipe, and I made them last year during the holidays.  I think they are super yummy and very easy! 

No-Bake High Fiber Balls

1 cup creamy peanut butter
1 cup honey
1 cup raisins
1 cup chocolate chips
1 cup sweetened coconut
1/2 cup bran
3 cups quick oats
1/4 tsp. salt

Stir all the ingredients together in a large mixing bowl.  Form into bite-size balls and freeze.

Note -- I didn't freeze mine.  I put them right into the refrigerator.

Also -- thanks to Virginia for sending a picture of the 'Apple Raspberry Crisp' -- the recipe that I posted last week.  She said it was a big hit with all her boys -- especially with a scoop of Blue Bell on top! 







This looks SOOOO good!
