Recipe Friday, October 28th - Butterscotch Brownies
Now that the weather is cooling off a little, it's time to do some baking.
Butterscotch Brownies
1 c. brown sugar 1/2 c. chopped nuts
1/4 c. vegetable oil 2/3 c. flour
1 egg, unbeaten 1 tsp. baking powder
1 tsp. vanilla 1/2 tsp. salt
Combine sugar and oil;mix well.. Add egg, nuts and vanilla. Fold in flour, baking powder and salt. Bake in an 8 X 8 X 2 inch pan at 350 degrees for 25 to 30 minutes.

Recipe Friday, October 14th - Cream Cheese and Pumpkin Muffins
Another Fall pumpkin recipe from one of my Colorado Amish friends that I met when I was visiting the San Luis Valley last year. I was researching the setting for The Wonder of Your Love, book #2 in the Land of Canaan series (in stores now!). I met some wonderful and generous folks while we were there.
Cream Cheese and Pumpkin Muffins
2 beaten eggs 1/2 c. sugar
1/2 c. pumpkin 3 tsp. baking powder
1/2 c. milk 1 1/4 tsp. cinnamon
1/4 c. oil 1/2 tsp. salt
1 1/2 c. flour 1/4 tsp. nutmeg
Filling:
3 oz. cream cheese 1 Tbsp. milk
1 Tbsp. sugar
Grease bottoms only of muffins cups or line with paper baking cups. Mix all batter ingredients. Fill cups 2/3 full. Put 1 teaspoon filling on top of batter. Swirl with knife. Bake at 400 degrees for 20 to 22 minutes or until golden brown.

Recipe Friday, October 7th - Squash Rolls
Hi everyone! I have a tiny bit of time this afternoon, so I thought you might like a new Amish Recipe. For me, October brings thoughts of pumpkins. This sounds like a yummy way to utilize this healthy veggie.
Squash Rolls
1 Tbsp. yeast 1/2 c. milk, cooled
1/4 c. warm water 2 eggs
1/2 c. butter 1/2 c. sugar or 1/4 c. honey
1/2 tsp. salt 4 1/2 to 5 c. flour
1 c. squash or pumpkin
Disolve yeast in water;mix rest of ingredients together, except flour. Add flour. Let rise 1 hour. Make into rolls. Bake at 350 degrees for 15 to 20 minutes.
Falling leaves, falling temperatures and hopefully, falling rain in Texas!

Recipe Friday, September 9th - Apple Salad Dressing
This recipe is listed under desserts in my Colorado Amish cookbook. It's not a salad dressing as in a mayonnaise type, but a sauce that is poured over a bowl of fruit. It looks interesting and I'm anxious to try it. September is apple season.

Apple Salad Dressing
1 1/2 cu. water 1 Tbsp. vinegar
1/2 c. sugar 1 tsp. salt
4 Tbsp. Clear Jell 1 tsp. vanilla
2 Tbsp. oleo (margarine) 1/2 c. cold water
your choice of fruit
Bring 1 1/2 cups water to a boil. Combine sugar, Clear Jell and cold water. Stir into boiling water and boil until clear, 2 to 3 minutes. Take off heat and add oleo, vinegar, salt and vanilla. Cool and pour over your choice of fruit. We prefer apples and banannas. Nuts are delicious, also.
Please pray for all of our Texas neighbors who are dealing with the horrible wildfires. Nine families have lost their homes in our county this week, and it is so very dry here, I fear there will be more.

Recipe Friday, September 2nd - Butterfinger Ice Cream Dessert
Well, the high temperatures here just seem to go on and on. Here we are in September already, and the forcast for today is still expected to be over 100 degrees in my little part of Texas.
I've given up on dieting for now. I need my comfort food when I'm under stress and I get sooooo stressed when I look at my schedule. I must write a novel and a novella before the end of the year . YIKES!
So here's a high cal, fluffy, cool, Amish dessert we can all enjoy this week!
Butterfinger Ice Cream Dessert
2 1/2 c. crushed graham crackers 1/2 gal. vanilla ice cream, softened (Blue Bell, if you can)
1/2 c. oleo (that's margarine) 2 boxes instant vanilla pudding
5 large Butterfinger candy bars 3/4 c. milk
2 c. Cool Whip (thawed)
Mix crushed Butterfingers and graham crackers with oleo. Press in bottom of 9X11 inch pan, saving 1 cup. Mix vanilla pudding, milk and Cool Whip together. Whip this into your icecream until smooth. Put on top of crumbs in pan, sprinkletop with reserved crumbs. Freeze and serve.

Recipe Friday, August 26th - Breakfast Burritos
Well, Friday came and went this week with no recipe posted. Sorry about that! Better late than never?
Here's another recipe I found from my Colorado Amish friend that does not require the oven.
Breakfast Burritos
1 lb. sausage 8 flour tortillas
1 small onion, chopped 1 c. grated cheese
1 green pepper, chopped sour cream
10 eggs salsa
1/2 c. milk
Brown sausage with chopped onion and pepper. Beat eggs and milk. Combine egg mixture with sausage mixture. Cook in skillet until set. Eggs should be soft with no liquid remaining. Heat a tortilla, fill with scoop of egg mixture. Top with some cheese, sour cream and salsa. Roll burrito style. Continue with remaining tortillas.

These are very popular here in Texas. You can make them with chorizo sausage and jalapeno peppers if you like the heat. These could even be served at lunch or supper with a little salad on the side.

Recipe Friday, August 19th - Tropical Dessert
Having just returned from 10 glorious days in Maui, I'm still feeling a little Tropical.
Tropical Dessert
20 oz. can crushed pineapple, undrained
3 oz. box instant vanilla pudding
1 (11 oz.) cans mandarin oranges, drained
8 oz. Cool Whip, thawed
Beat pineapple and pudding together well. Fold in oranges and Cool Whip to the pudding mixture. Chill.
Thanks once again to an Amish friend in Colorado for this light and easy summer dessert.
And here's a really cute palm tree garnish idea using a lime and cinnamon sticks:

To make palm tree leaves, cut lime in half; remove and discard pulp. Place lime halves, cut side down, on a cutting board. With a pencil, sketch five leaves from bottom to top on each half. Cut out leaves, leaving center intact; make little cuts to create a palm leaf appearance. To create a base for the trees, turn 2 oz. disposable cup upside down; cut two small slits in the bottom. Insert a cinnamon stick in each slit for tree trunks. Break a toothpick in half. Insert pointed ends into center of lime halves; insert broken ends into cinnamon sticks. Submerge the cup in the serving bowl.
