No promises from me that I'll join in, but that weekend can work well for me. Either way, I can't wait to see what everybody makes. Yum!

There is also a Vegan Mofo challenge coming December 9th. The last one last weekend was breadcrumbs, and when I saw that I completely drew a blank other than breading something.

My favorite vegan Mexican restaurant makes a great baked cauliflower dish; it's baked with cashew milk/blended cashews and it topped with breadcrumbs. It's really yummy. Sometimes it's baked with brussels spouts, once I saw it with eggplant and onions (didn't work quite as well) and it could be done with any veggie. But cauliflower and brussels sprouts have been my favorites so far.
Is Vegan Mofo a regular thing? For some reason I thought it was a once a year event.

I won't make it for that first week of December, but I'd be up for a challenge sometime later ;) Sorry for disappearing there for a bit. Swap-bot took over my life and now I have a vegan talk coming up.

I am trying to keep to a schedule this month for my blog. It is easier for me to plan recipes.



Perhaps we should set up one of those challenges soon. We could do something simple like try a new ingredient. I have some soy curls that I'm about to try ;)

I have not tried soy curls yet. I see a lot of blog recipes using them more and more though. I won't be able to do any major cooking until after the 10th. We finally move into our new home. Right now, much of my cookware and bowls, etc.. are packed in boxes. This week we will be eating salads and vegan take-out lol.
I haven't blogged for a month either between vacation and other projects! I'd participate in a challnge. I have no idea where to get soy curls though, I've never seen them anywhere.


The recipe making and cooking is the fun part, lol. I had to stop going on twitter because it can get so addicting. I was starting to read everyone's blogpost and half my morning would be spent reading blogs and aritcles from twitter.
All of this social networking can get overwhelming.

Farrah, if you figure out the Pinterest label or button, will you let me know? I'd like to add that too!

Like others mentioned, it seemed like I had other things preoccupying me. Besides the holidays, I got a bit carried away with swap-bot and mail correspondence. Lots of fun, but I was trying to do too much at once!
It's so much easier (and more fun) when you want to do it and not doing it just because. I think one of my current motivations is that we have a great vegan group building here in Springfield and I have another "Demystifying Vegetarianism" talk coming up at the library.

Cassie, That's wonderful! Best wishes with that talk. You're doing a great service.

I'm not, but certainly getting inspired by it to really cook more from my books instead of the same dishes over and over *lol* and really need to get back to blogging!
