If you want humour, then G.A Aiken Dragon Kin Series is BRILLIANT!!

Vampires i really rccommend Lynsay Sands the Argeneau Family series`

For knights Angela Knight Mageverse series, its about king Arthur and his knights, but they are vampires, sounds weird, but fantastic, has dragons too

You'd probably like any book by any book by Gail Carson Levine (author of Ella Enchanted, Ever, Fairest... ) or by Shannon Hale (author of the Princess Academy, the Goose Girl...).
Pennyroyal Academy was good if you're looking for Middle Grade level books.
Caitlin's already mentioned Poison Study, but you should definitely check out the Touch of Power series by the same author as well (both are such good reads!!!)
The Girl of Fire and Thorns trilogy is really good as well.
For faeries, I really liked this series by Allan Frewin Jones. The first book is called The Faerie Path.
Between the Lines by Jodi Picoult.
Melanie Dickerson and Alex Flinn's books are fairy tale retellings.
Also just thought of the Dealing with Dragons series by Patricia Wrede. I first read them when I was about 8 but still love these books 9 years later!
