I've seen it referenced in 19th century travel accounts of the Philippines. I imagined it was a boar's head in aspic, this one was already sliced and made following a 19th century recipe handed down through the Gonzalez Arnedos of Sulipan. Like revenge, it is best served cold.
My Inquirer column today is on the feast for the tongue and language that I immersed in last Wednesday thats to Toto Gonzalez for being a wonderful host.
