Friday Feast ~ Chocolate Dipped Shortbread

IMG_2905Have you already guessed the theme for this month’s recipes? If you answered chocolate, then you are correct! I’m keeping this week’s treat simple. Dipping half of my shortbread in chocolate. Nothing too fancy and I bet many of you have already tried this with other cookies. I’ve included my recipe for shortbread, but if you’re in a hurry and don’t want to bake, use Walker Shortbread. I’m going to make these for the weekend, along with strawberries in chocolate, or pineapple, or orange slices...

Friday Feast ~ Chocolate Croissants

Sugar and spice…and everything hot, including luscious chocolate!


This recipe is one I posted a few years ago, but since it’s February and the month of love, I wanted to bring it back. It’s one of my favorites, especially on a cold, rainy day.


So surprise your loved one, children, or friendswith these special treats.


SIMPLE CHOCOLATE CROISSANTS


1 – 14oz package frozen puff pastry, left to defrost in the fridge for 2 to 3 hours.


1/4 cup dark chocolate pieces. – 60% to 80%


1 egg beaten

My recipe for today is in celebration of Imbolg or Candlemas ~ the feast of St. Brigid or the Brigit’s Day.


Imbolg, the first day of February is the old Celtic festival marking the reawakening of the earth. The promise of new life–new hope.This is the time of year when new lambs are born and ewes are in milk.
