Friday Feast ~ Guinness, Onion, and Cheddar Soup

I’m celebrating all things Irish this month! What better way to start off this month than with this hearty soup. Of course, it has some of my favorite ingredients: cheddar, onions, garlic, and the most important of all…Guinness!

I only use the best Irish cheddar, too. Serve with warm sourdough bread and you’ve got the perfect meal. Slainte!


GUINNESS, ONION, AND CHEDDAR SOUP


2 tablespoons butter


2 tablespoons olive oil


4 large yellow or red onions (your choice), quartered and sliced

Today I’m celebrating my daughter, Noelle’s 40th birthday! She came into my world at a very young age, and we both had to learn and grow together. I consider myself blessed to have this amazing, beautiful, and giving woman in my life.

I know most of us are longing for warmer temperatures and the first signs of budding growth on trees, so I pray it will happen soon for my friends on the east coast.
