Friday Feast ~ Broccoli Salad

It’s almost summer, and this tangy, cool salad is one my daughter shared with me several years ago. I wasn’t a big fan of raw broccoli, but when I took my first bite, I fell in love.

My recipes this month will center around the likes of Alastair and Fiona from DRAGON KNIGHT’S AXE. You’ll find they are both uniquein their eating habits. I won’t be posting any meat dishes. I’m sure they’ll be verra pleased…

I’ve altered this recipe and added a few twists of my own. As always, tweak to suit you...

Friday Feast ~ Warm Artichoke Dip

These have become one of my favorite, and I always have at least one jar in the pantry. I’m a huge fan of artichokes, but these grilled, bite-sized hearts are packed in olive oil and herbs. You can toss them salads, pasta, or eat them straight from the jar.

I started making this dip during football season, and now it’s a year round appetizer.

WARM ARTICHOKE DIP

1 12oz. jar of marinated artichoke hearts

1/3 cup chopped green onions

2 tablespoons green salsa

I’m as busy as this bee in the picturethese days, so I’ll keep my recipe simple. I love this tastyspread. It’s great on scones, toast, gingersnaps, and oatmeal. I’m sure you can think of more ways to use this butter, too.
