GFCF Fudge?

I think so!

I make fudge every year for Christmas with the Fantasy Fudge recipe on the back of the Jet-puffed marshmallow creme. It is simply delicious. It's also full of dairy which causes me so much congestion I've done my best to cut it out of my diet. I wasn't going to make fudge at all this year but decided to pick up a box of the Baker's Chocolate Squares just to check the ingredients and realized they're dairy free! (They are processed on equipment that is used to process dairy, but I don't think I'm that sensitive to it.)

The next ingredient I checked was the marshmallow creme. It's dairy free but it does have powdered egg whites. Eggs make me incredibly stiff (I think due to sulfur) but I'm going to take a chance on this. Maybe powdered egg whites are sulfur free???

I subbed coconut oil for the butter in equal parts, used plain ol' white sugar and almond milk to replace the evaporated milk.

I was worried at first as I stirred the almond milk, coconut oil, and sugar over medium high heat, the mixture was completely separated. I thought I might end up having to dump it. Once it started to boil though everything came together just right.

I will not lie and say this is healthy in any way, but if you're looking for a little treat for the holidays this could be it! And it's much less expensive than the gfcf chocolates I've seen advertised online.

There is soy in it, along with the egg whites so not allergy free for all unfortunately but a step in the right direction!
( Ok, so it looks awful. I didn't have the marshmallow creme completely mixed in and tried to swirl it in as it was cooling, but it tastes great!)

What Do You Think Of "Billy and Sarah"?

It's so fun designing covers. It's also extremely hard. I have a very clear idea of what Billy and Sarah look like, BUT it was impossible to find models that fit my images.

I think this Billy is close with his short hair. I would have like a 'blonder' Sarah. What do you think? Are these two close to your pictures of Billy and Sarah? What do you think would be different about the characters from the book?

Top Ten Indie Books of 2014

The Secret was named a top ten Indie book of 2014 by Lia London. What a surprise, and what an honor!

Lia London is an author and the owner and founder of the Clean Indies Reads website and Facebook group. She had the idea to list books that are considered 'clean' by most standards to make them easy to find. Mostly 'clean' means no vulgar language, gory implicit scenes, or implicit sex. It doesn't mean boring! If you haven't seen the site yet check it out! You might just find your next read there.

Oil of Oregano

I enjoy learning about natural health and healing and I really like it when I find something that works! Oil of oregano is one of those things. Again, this is just my experience not medical advice of any sort. For those of you prone to strep throat, you might want to look into Oil of Oregano. After numerous sore throats that ended up becoming hugely inflamed tonsils with lots of pain, sometimes testing as strep, sometimes not, I heard about OoO and found it would keep sore throats from becoming something more serious. After quiet a few uses, sore throats are pretty much a thing of the past! It's great for many other health issues and I'll write more about it at some point. This is the kind that I've used. You can also read some other pretty amazing things about it in the reviews section on Amazon. (If you've read book 2 in the Scinegue Series, The Pledge, you'll recognize OoO being used in a very creative way.)
