Pasta Seafood Salad
Baby greens
Gluten free pasta, 1 cup, cooked and drained
1/4 broccoli, chopped
1/2 sweet bell pepper, chopped
1 roma tomato, chopped
2 oz. pepper jack cheese, chopped
6 pitted kalamata olives, halved
1/4 pound bay shrimp
1/2 large can crab meat
Girard’s champagne light dressing.
Toss well. Serves 3

Kitchen Sink Salad
Baby greens
bean sprouts
2 small sweet peppers
1/2 avacado
2 Tablespoons pecan pieces
2 tablespoons shredded parmesan
2 Tablespoons pomogranite seeds
Dressing:
1/2 lemon, juiced
pomogranite vinegar, drizzle
sea salt, to taste
fresh ground pepper, to taste
beau monde, sprinkle
celery seed, sprinkle
extra virgin olive oil, drizzle
habanero olive oil, tiny drizzle
Layer ingredients in a large bowl, starting with the lettuce, and ending with the olive oil. Toss well. Serves 2.

Mango-Pomogranite Salad
Baby Greens
1/2 mango, sliced
1/2 avacado, sliced
1/4 cup pomogranite seeds
1/4 cup pecan pieces
Dressing:
1/2 lemon, juiced
pomogranite vinegar, drizzle
jalapeno olive oil, drizzle
beau monde, sprinkle
celery seeds, sprinkle
sea salt, to taste
fresh ground pepper, to taste
Layer ingredients in a large bowl, starting with the lettuce, and ending with the olive oil. Toss well. Serves 2.
