Pumpkin Pancake Sunday! Yesterday I tried a twist on my 8 Grain...

Pumpkin Pancake Sunday! Yesterday I tried a twist on my 8 Grain Strawberry Pancake recipe from “Eat and Run” page 79. Instead of strawberries I subbed 1 cup of freshly roasted pumpkin (my last squash from the fall farmers market), added 3/4 cup of flour, and for the non dairy milk I used one of my holiday favorites, So Delicious Coconut Nog. I also blended the batter in a Vitamix to purée the pumpkin. When the nog is out of season, one teaspoon of pumpkin pie spice with any non dairy milk will work nicely.

Nice to have Timothy Olson in town! The first time I ran with him was a 12 miler in Ashland, OR in ‘08 which was his longest run ever. It’s amazing to see where he’s taken it since then!
