Prosperity Is So Much More Than Money
I bring you more sparkling wisdom from the very fierce and very wise Peggy Doviak, the same CERTIFIED FINANCIAL PLANNERTM practitioner that has shared insights on the Fierce blog like how to celebrate the holidays without blowing your budget, setting and achieving financial goals, and how to afford retirement.

Why Does Everyone Else Seem to Have It All (and Have It All Together?)
Have you ever felt like everyone around you knew what they were doing? They were organized, eloquent, and polished. You, on the other hand, woke up late, put on a wrinkled shirt, and threw your hair up in a ponytail because you didn’t have time for a shower.
Sixteen years ago, when I opened my financial firm, I felt like that a lot. I was bombarded with articles, software, seminars, and experts. Everyone wanted to tell me what to do…for a nominal fee. It was overwhelming, so I muddled along as best I could.
I began listening for themes. Apparently, I needed an elevator pitch. An elevator pitch was a business description designed to convince people to work with me within the period of time it took me to ride the elevator with them. This would help me create my “brand.” A brand? Not only did I not have a brand, I didn’t even have clients!
There’s More To Life Than Getting Rich and Finding Happiness
With a bit of trepidation, I set out to create an elevator pitch. Plus, how cool would it be to have a brand?
What should I choose? I handled people’s money, so I played with the idea of being rich. “Be Rich!” No—it sounded like a television show on at 2 in the morning. “Live Richly!” No, that sounded too much like yachts and hats with gold braiding and anchors. None of that was me. Even worse, I hated the idea of telling people that my goal for them was to be rich. It felt wrong on many levels.
Not everyone is going to be rich. Sometimes, your career choice or other life conditions almost guarantee it. And that’s okay. Being rich is no guarantee of being happy; in fact, many people I know who appear to have plenty of resources are anxious or depressed. On the other hand, I have seen plenty of people without large bank accounts who seem content. No, focusing on the word “rich” wasn’t the right direction.
So I tried a different direction and toyed with the idea of focusing on the word “happiness.” Happiness is more internal, and didn’t seem as materialistic as “rich.” But the word didn’t really seem to be right either. Although I didn’t like the financial focus around being rich, being happy really had nothing to do with financial planning. It also felt a bit like a yoga studio or greeting card.
Building a Brand of Prosperity
One word really wanted my attention. “Prosperity.” Generally, I loved the word, but I didn’t want people to think it was a promise of gaining financial comfort without work. Although I am a believer in the power of positive thinking, some people take the concept too far. Gaining financial stability isn’t easy; you have to make good decisions every single day. But the word “prosperity” tapped into appealing concepts.
You see, prosperity isn’t limited to money. Prosperity also involves your friends and family, the work you do, your pets, and leisure activities that bring you joy. For example, you can’t measure the sense of accomplishment a teacher feels when a student understands a new topic. A hiker who reaches the mountain peak experiences elation. And holding a new baby is simply the best.
Prosperity is everywhere. After a long day at the office, I look forward to my cat meeting me at the door, welcoming me home with meows and head butts. My husband is happy to see me, too, but without the head butts! All these events, and more, make me prosperous.
Of course, prosperity also has a financial definition. Being prosperous involves having sufficient resources to live the life you want without fear of running out of money. Financial planning has a remarkably similar definition.
What to Ask Yourself When Creating A Prosperous Financial Plan
Many people don’t understand what comprises a financial plan. They think it’s their stock and bond portfolio, and maybe their life insurance. However, that’s only the beginning. The process also answers many questions including
What are your financial goals?
How much do you spend?
What types of insurance do you need, and how much should you purchase?
How does the tax code and financial legislation impact your actions?
Do you have enough saved for retirement?
How should you pay off debt?
How do you invest your portfolio in a way to control risk and allow you to meet your goals?
How can you take care of your family even after you’re gone?
Those questions boil down to one main goal: How can you save and manage financial resources in a way that helps you live your best life? More simply, your financial plan gives you a path to your financial prosperity.
Contentment and Love Instead of Dollars and Cents
My wish for you is my brand: I want you to have prosperity in your life—measured not just by dollars but by contentment and by love. At the end of the day, prosperity is mostly a mindset. You can focus on what you have, or you can stress and fret about your lack. When you are content with your life, you are prosperous–even if you aren’t tremendously wealthy and you woke up late!

Healthy Chocolate Desserts for Valentine’s Day
Valentine’s Day is tomorrow and I’m thinking about options for a little sweet treat. (I’ve already shared some ideas for home-cooked meals and DIY gifts.)
Maybe you’re excited to have a special event and splurge a little on the calories. Or maybe you just came home from a vacation to Hawaii where you used up all of your ‘splurge guilt-free’ cards. It could happen to anyone.
No matter the motivation, I’ve rounded up a few recipes that are chocolate and don’t break the bank on calories.
The best part about these is that no one will even know that they are actually healthy! It’s just so sneaky. I love it!
HEALTHY ZUCCHINI BROWNIES
Brownies that anyone would love. Even your kids (provided of course you don’t mention there’s zucchini in them.)
PEANUT BUTTER CHOCOLATE CHIP OATMEAL BARS
Do you and your sweetheart go together like chocolate and peanut butter? Bake these and make your own card that takes advantage of the aforementioned joke on Valentine’s Day. (just probably don’t tell them you got the idea on a blog!)
DARK CHOCOLATE COCONUT OIL FUDGE
This recipe is super easy to whip up, so it’s also an intentionally small batch so you don’t consume a whole pan of fudge by yourself. If you’re planning to try out at an event, be warned to double or even quadruple the recipe.
CHOCOLATE POTS DE CREME
A recipe for chocolate that is also vegan and paleo? Personally, I’m not either but if you are I’m sure it’s difficult finding yummy dessert recipes. Best of all, these pots de creme are delicious even if you’re not following a special diet!
Chocolate Raspberry Petit Fours
Straight from the Weight Watchers website, these little petit fours look too pretty to eat. But at 3 points per serving, I’m pretty sure I would have two!
Dark Chocolate and Sea Salt Tartlets

Where to Eat in Kona
Have you ever noticed how much of those travel programs on television are devoted to eating? At first glance, it seems kind of strange. But it makes more sense when you think about the fact that whether we’re at home or on the road, most of us eat three times a day.
Eating at home doesn’t require much more effort than opening the refrigerator. When you’re traveling, figuring out where to eat is tougher. It forces you to make choices. It requires thought, and effort, and research. Lots and lots of research.
Fortunately, this type of research happens to be one of my
favorite parts of travel.
I haven’t tried every restaurant on the Kona Coast of Hawaii’s Big Island, but with four visits in as many years I’ve certainly made a stab at it.
Here are a few of my favorites.
Cheap Eats
Be forewarned, good “cheap eats” are hard to come by in a place where much of the food is shipped in by boat. While a meal that comes in at under $20 isn’t what most people would consider inexpensive, that’s the definition I’m using for this category.
However, I’ve got a few tips that will help you avoid
sticker shock when dining out in Kona.
Happy hour can be the favorite hour of the budget-minded
traveler. Many popular spots offer reduced prices on adult beverages and a
delicious but usually limited menu of appetizers that you can make a meal
of. Also, remember that even the most
expensive spots often feature lunch dishes that are just as tasty (and
frequently identical) to their dinner menu.
Finally, when you book your Hawaiian vacation, consider
renting a condo. Having a kitchen where you can prepare at least some of your
own meals can be a huge savings. It makes watching your weight easier as
well. When we exit the airport in Kona,
our first stop is always the grocery store.
FoodLand
This grocery store in the Shops at Mauna Lani has a little
bit of everything, including liquor, a good selection of fresh produce, and a
deli case with a variety of prepared items. (Do check it out. On this trip, I
found delicious prepared salmon in citrus marinade for three dollar a pound
less than uncooked fillets). The prices are expensive by mainland standards but
they have some excellent weekly specials. If you allow the cashier to enter
your phone number into the system, all the sale prices will apply to your bill.
Doing so saved me 11% this trip.
Technically, Da Fish House is not a restaurant. It’s a takeaway poke shack on the north end
of the Kohala Coast. You can order plain
poke, or a bowl (with rice) and either eat it outside or take it with you. But before I get too far, I should probably
back up and explain a few things.
First off, pronounciation. It’s POH-keh. Not poke. Not poki.
What is it? Poke had it’s origins in Hawaii and is basically raw fish or
shellfish that’s cut into little chunks and marinated in a sauce – everything
from shoyu and spicy mayo to ginger and garlic.
There are lots of varieties. Poke
can be eaten plain but I like mine over rice because it soaks up the sauce
nicely.
Da Fish House serves amazingly fresh, delicious poke that’s
really a bargain. The bowl I bought for less than $14 was big enough for my
husband and I to share.
Lava Lava Beach Club (Happy Hour)


With its breathtaking beachfront setting, open air dining room, live music, and even lawn games, this fun and friendly spot in Waikola is one of my favorites. Much of the menu is devoted to what I would call “Island pub fare” but the ingredients are fresh and the food is delicious. The only downside? It can be a little pricey.
The good news is that Happy Hour happens twice a day at Lava
Lava –from 3 to 5 and 9 to 11. You’ll
find reduced prices on “pupus” (appetizers), beer and wine, a couple of $7
signature cocktails. Even happy hour can
run a little steep here ($11 for two small but delicious shrimp tacos) but the
setting is so worth it. If you’re really hungry, order the Tipsy Tots – loaded
with cheese, bacon, and green onions.

I’ll tell you more about Merriman’s later but the long and short of it is that this is my absolutely, hands down favorite place to eat on the Big Island. Having dinner here definitely qualifies as a splurge but on Friday, Saturday, and Sunday from 2 to 5pm, you can enjoy this culinary paradise for a pittance.
The menu is upscale “pub grub” but you won’t find a better burger on the island, especially not for $10. The Kalua pork will bring tears to your eyes – but in a very good way. Be sure to order one of their incredible salads – you’d have to go out and pick the lettuce yourself to find anything fresher. Also, until you’ve had a mai tai made with fresh lime juice and topped with honey-lilikoi (passion fruit) foam, you haven’t really lived.
We normally stay on the “dry” Kona side of the island.
However, last year we drove to Hilo and had lunch at this delightful
restaurant. The atmosphere is open-air and island-casual, the staff is really
friendly, and the prices are hard to beat.
The menu reflects mélange of Asian/Polynesian/Portuguese/American
influences that make up local cuisine.
On any given day you might enjoy bacon wrapped meatloaf, saimin with
wontons, broiled salmon with garlic shrimp, Korean chicken, or a NY strip
steak. And almost every for less than $20. And for breakfast? Just say yes to banana and macadamia nut
pancakes.
Mid-Price Menus
I already explained much of what is so great about Lava Lava
Beach Club. But a good Happy Hour isn’t the only reason I love this spot. The food is fresh and delicious at any hour
and the location incomparable. At $40 or
more, many of the dinner entrees are overpriced. But there are a few good
selections in the $20 to $34 range and the lunch menu is much more reasonable.

When it comes to great views and incredible sunsets, it’s hard to beat Don’s Mai Tai Bar. The Royal Kona Resort in downtown Kailua Kona offers a 180-degree ocean view. There’s no better spot to sit have enjoy a beverage and a nice meal while watching the waves, preferably while holding hands with someone you love.
Overall, I’d say the food is good but not amazing. Most of the menu falls under the heading of substantial pupus – definitely hearty enough to make a meal of. However, on my most recent visit I enjoyed an ahi tuna burger that was excellent.

What can I say about the Seafood Bar and Grill? It offers good, fresh, well-priced food in a really weird location. The restaurant sits directly across from some kind of industrial port/warehousing thing. If you take a table on the deck, you’ll have a lovely view of shipping containers and gravel. Weird.

Even so, it’s easy to see why this casual, friendly restaurant toward the north end of the Kohala Coast is a favorite spot for locals and tourists alike. The fish selections are delicious and fresh. My husband, who is something of a coconut shrimp snob, gave them a big thumbs up. My seared poke burger, served with pineapple macadamia nut coleslaw, was delicious. We’ll definitely be coming back!
Splurge
When I’m traveling (and even when I’m not) I try to stick to
independently owned and operated restaurants.
However, sometimes you just want to go someplace where you know what
you’re getting yourself into before you walk in. Yes, Tommy Bahamas is
definitely a chain restaurant but it’s a good one.
The atmosphere is always cheerful and buzzing, but not
overly loud (though I do recommend sitting outside and away from the bar if
possible) and the waitstaff is always friendly, helpful, and well-trained. The
food quality is just as consistent.
Whether we’re ordering steak, chicken, or the fresh catch of the day, I
know that we’re in for a delicious meal in a very pleasant evening.
When it comes to pure atmosphere and romance, I don’t think
there is a restaurant in Kona that tops Kamuela Provision Company, located in
the Hilton Waikola Village. If you want to propose, celebrate a birthday or
anniversary, or just gaze deeply into each other’s eyes – this is the spot for
it.
Be sure to reserve in advance and request an outdoor table.
The food here is very good but less than spectacular and, yes, quite expensive.
But, hey, this is your splurge! The waves crashing nearby, the breeze blowing
gently through the palm trees, and glow of scores of will make this a night
you’ll long remember and, quite possibly, one of the peak experiences of your
Hawaiian vacation.

A while ago, I saw a movie about the professional restaurant world. In it, the slightly bonkers chef/protagonist says, “People eat because they’re hungry. I want to make food that makes people stop eating.”
Merriman’s is that kind of place – a restaurant with food so
divine that putting that first bite into your mouth, you will actually stop eating (emitting an involuntary
groan of pleasure as you do) to savor the pure, exquisite delight of such culinary
perfection and reflect on how lucky you are to be in that place, at that
moment, eating that meal.
There are now several Merriman’s in Hawaii. We dined in
Waimea, the original location where Peter Merriman brought farm to table
cuisine to Hawaii, about 30 years ago.
Waimea sits at about 2500 feet above sea level in cattle ranching
country, so there are no breathtaking vistas here. The large, pretty dining
room has high ceilings and beautiful wood floors, and the tables are topped
with white cloths and candles and dinner but the emphasis here is definitely on
the food. And what food it is!
What I loved most about this place, where 90% of the food is locally sourced, is that the actual flavor of the food takes center stage. The incredibly fresh salad was dressed with nothing more than olive oil, lemon, a little salt, and complemented with the most delicious chevre I’d ever tasted. The mushrooms tasted like mushrooms, not something unidentifiable smothered with butter and garlic. My lamb chops were tender and perfectly prepared, accompanied by a wonderfully flavorful but not overwhelming chimmichurri sauce and jalapeno mashed potatoes.

My coconut crème brulee was worth every calorie and every sweaty mile I ran the next morning to work it off. My husband’s fresh pineapple and strawberry crisp was just as good. On top of all that, the wait staff was as well-trained, pleasant, and efficient as could possibly be hoped for. Our server anticipated my husband’s need for just a little more sauce for his fish even before he did.

If I could find one fault with Merriman’s it would be that
the kitchen is perhaps too efficient.
Dishes were delivered very
quickly. Of course, many people like that but I would have preferred to dine at
a slightly more leisurely pace. Another 5 to 10 minutes between courses would
have been just perfect.
Bottom line is this; to my way of thinking, Merriman’s is
the best restaurant on the Big Island and a must try for any seriously
dedicated foodies.

For the Love (of Food): 5 Home-Cooked Valentine’s Dinner Ideas
Valentine’s Day is all about celebrating those you love – whether it be your spouse, your girlfriends, your family, or yourself. Regardless of who you’re showering with love this year, the dinner you celebrate with should be indulgent and rich, right? (I know, I know, I’m usually saying that we should eat healthy but Valentine’s Day is a special holiday that deserves special treatment).
Instead of making reservations at a crowded restaurant, why not set up an intimate dining experience in your own home, complete with candlelight and the timeless music of Frank Sinatra? Skip out on the busyness that comes with a restaurant’s atmosphere, say no to a pricey prix fixe that doesn’t live up to the hype, and ditch the waiter who interrupts your conversation every 10 minutes.
The best news is, you don’t need to miss out on great food just because you’re staying in. We’ve collected some of the most romantic meals for you and yours. Don’t be shocked if people can’t believe it’s a home cooked dinner and start digging around to try and find take-out containers.
Let’s not stop the celebration with a delicious dinner. Pour yourself a nice glass of wine, eat some dessert (guilt-free), and pop in a favorite rom-com.
Engagement Chicken Pasta
Creamy pasta, seared mushrooms, and delicious engagement chicken. You can’t go wrong with this dish!
Pairs well with: A full bodied white wine like a Chardonnay and Notting Hill (I don’t think you can ever go wrong with Hugh Grant and Julia Roberts.)

Salmon Provencal
Your loved ones will never guess how easily and quickly you whipped up this mouthwatering salmon dinner. You can place it on the bed of white rice, or with a nice salad or bed of asparagus instead.
Pour yourself a glass of Pinot Gris or Pinot Noir and watch Meg Ryan and Tom Hanks fall in love in Sleepless in Seattle.

This dish is not only beautiful, but it’s delicious and healthy as well. It’s the full package for a romantic dinner for two.
It will go nicely with a Chardonnay or a Red Zinfandel, as well as the classic story of Mr. Darcy and Elizabeth Bennet in Pride and Prejudice.

Hawaii on a Budget: What To Do In Kona For Cheap (Or Even Free!)
While I do think of myself as extremely fortunate, I don’t usually think of myself as a lucky person.
For example, if there were one hundred guests at the quilt guild luncheon and ninety-nine door prizes, I would be the one going home empty-handed. And those people who go to the mall and always find a parking spot near the door, even during the annual Black Friday Christmas shopping melee? Yeah. I am so not that lady.
However, this week I am beginning to wonder if I laid down on the grass for a nap and accidentally picked up a four-leaf clover in the process. As most of you are aware, basically the entire country has been plunged into the deep freeze known as the polar vortex. But where am I this week? Hawaii. Specifically the Big Island, on the Kona Coast.
Living on Island Time Can be Expensive
I know, I know. Don’t hate me. As I mentioned earlier this week in my packing guide for island adventure, we use our timeshare points to visit Hawaii almost every winter; it’s only a five-hour flight from the West coast. This year, our timing was particularly good, even lucky. But, then again, I’ve felt lucky every single time I’ve been to Hawaii. It is one of the most magical places on earth, a true island paradise. Not only is Kona a breathtakingly beautiful spot, there are tons of fun and interesting things to do.
You can take a helicopter tour around the island, attend a Hawaiian luau, book a spot for a snorkel, scuba, or sunset boat charter, take a zipline tour (assuming you’re not afraid of heights), or visit one of the island’s many luxury spas for a relaxing lomi-lomi or even a whole day of pampering.
The only downside to these suggestions is that they will definitely put a hole in your wallet. If you can afford it, any one of these experiences would be an amazing addition to a very special vacation. If you visit Hawaii, I highly recommend booking at least one memorable, pinnacle splurge.
But I’ve got good news for budget travelers! There are plenty of things to do in Kona that won’t make your heart palpitate after you get home and open up the Visa statement.
Here are a few of my favorite inexpensive (and even free!) things to do in Kona.
Paradise Is Just Outside The Door
Outdoor activities are the very best thing about visiting Hawaii. There’s usually plenty of sun. But the constant, gentle kiss of the trade winds mean that even when it’s hot, it’s not too hot for my favorite free activities – a nice long walk or run. If you’d rather ride, Bikeworks Beach and Sports in the Queen’s Marketplace at Waikoloa Beach rents hybrid or cruiser bikes for as little as $30 a day. State of the art racing bike rentals start at $85 a day but are discounted if you rent for multiple days.
Swimming more your style? Fulfill your Ironman (or Woman) fantasy with a morning swim at the pier in Kailua-Kona, home of the swim event for the famous Hawaiian Ironman. Afterwards, enjoy a delicious, relatively inexpensive, and well-earned breakfast at nearby Splasher’s Grill or take a stroll down Alli Drive through the picturesque downtown to Huggos. (a little more expensive but the view is worth it. Banana and Tahini Stuffed French toast? Yes, please!)
Snorkeling cruises are great, but hoping in the rental car and heading to one of Kona’s many beautiful snorkeling beaches can be just as fun and much more affordable. One of my favorite snorkeling spots is Hapuna State Park. This gorgeous white sand beach has been voted one of the best in the world. Admission is free but you’ll pay about $5 for parking. If you don’t have your own snorkel gear, you can rent some (as well as umbrellas and boogie boards) at the Three Frog’s Café.
History!
Hawaii has a rich and fascinating history. Thanks to a wonderful state and national park system, you can visit many (and even most) of Kona’s historic sites for free.
Take a hike through the Puako Petroglyph Preserve or the Waikola Petroglyph Field to see thousands of markings and drawings that date as far back as the 1600s. Be sure to bring water as there is no shade in these areas. Also, this is a look but don’t touch experience – taking rubbings or touching the rocks is kapu!

One of my favorites is the Puukohola Heiau, site one of the last major temples built by King Kamehameha I. The visitor center has some interesting videos and exhibits explaining more about the site and the park rangers are very helpful. There’s also a free audio tour you can download on your phone while you’re hiking the half-mile, paved trail through the historic area.
Lapakahi State Historical Park is just a few miles farther up the coast. This partially restored site of a 600 year old Hawaiian fishing village is fascinating and has some incredible scenery. There are bathrooms here but no real visitors center. However, brochures are available for a self-guided tour. The paths are rocky here, so you’ll need sturdy shoes.
Culture!
If you’re interested in more recent history, stop by the Parker Ranch headquarters in Waimea to learn more about Hawaii’s ranching culture. There are two historic buildings you can visit for free. (And as long as you’re in Waimea, stop in at the Isaacs Art Center. Admission is free and the exhibits are well worth seeing, especially the paintings of Madge Tennent)
When you’re in Kailua-Kona, be sure to visit the Hulihe’e Palace, the summer home of Hawaiian royalty. There is a $10 admission charge to enter but guided tours are free. The palace offers a fascinating glimpse into the history of the Hawaiian monarchy. Also, be sure to visit to the Mokuaikana Church, Hawaii’s oldest Christian church. There is an interesting exhibit about the Thaddeus, the sailing vessel that brought the first missionaries to Hawaii.
Coffee Break!
Kona Coffee is famous the world over, and rightfully so! I have been enjoying lots of it during this visit and my suitcase will be packed with packets of dark, rich coffee beans when I leave.
Coffee lovers can visit a score of plantations for tours, free tastings, and direct from the grower or roaster shopping. Here’s a link with more information. https://www.lovebigisland.com/kona-co...
But for a coffee experience that’s more in depth and definitely out of the ordinary, be sure to visit the Kona Coffee Living History Museum. There’s a $15 admission but you’ll learn a lot about coffee cultivation, processing, and how Kona’s coffee culture impacted the island. If you time your visit for Monday, Wednesday, or Friday, be sure to take advantage of the free “Hands on History” programs!
Honestly, there is so much more I could tell you about beautiful Kona! If the surf and sand weren’t calling my name, I would.
Suffice it to say, if you ever have the inclination or opportunity to visit the Kona Coast on the Big Island, do! It’s definitely a bucket list location.

Go Pro with These Three Healthy Super Bowl Recipes
It’s almost time for the Super Bowl (and the Puppy Bowl and Super Bowl commercials, take your pick of which one you’ll spend your time watching!)
No matter which you are watching it’s almost guaranteed you’ll be eating something. Because food and the Super Bowl go together like chips and salsa. (Or chips and guacamole, but more on that later!)
I’ll still be in Hawaii during the big game thus bearing no hostess or guest responsibilities. However, I want to make sure my Fierce readers are taken care of. So I dusted off an old favorite of mine perfect for game day, then I tried a new appetizer recipe last week, plus I spoke with one of my new favorite people, The Reluctant Entertainer, to get a recipe she thinks packs a punch for a football party!
Without further ado, my suggestions for healthy Super Bowl recipes:
Hearty Chicken Chili (and zero WW points!)
WW points are about the opposite of Super Bowl points – no one would want their team to score zero points, but a hearty recipe with no Weight Watchers points? In this case, zero is a winning number!
I love this for events like a football game watch party. At events where people are going to be around for awhile it can be great to serve something a little heavier in addition to all the snacks.

Chicken Chili (zero WW points!

Ingredients
3 sprays olive oil cooking spray
1 medium yellow onion, small diced
2 large cloves garlic, chopped fine
12 oz ground chicken (99% Fat Free)**
15 oz can black beans, drained & rinsed
15 oz can pinto beans, drained & rinsed
15 oz can fire roasted tomatoes
1 jalapeño, seeded and diced (if you like a little heat!)
1 red bell pepper, chopped
2 carrots, chopped
2 celery stalks, chopped
10 oz can tomato sauce
1 t. dried oregano
1 t kosher salt
1 t. ground cumin
1 T chili powder
½ t freshly ground pepper
¼ t cayenne (spicy and optional)
chopped cilantro, feta or cheddar, nonfat greek yogurt for garnish (optional)
Instructions
Spray a nonstick stockpot with olive oil cooking spray, add onions, red bell pepper, carrots, celery, and jalapeno. Cook over medium heat until onions are soft. After about about 5 minutes, add garlic, cook for an additional minute.
Next, add ground chicken** to cooked vegetables, cook over medium heat, breaking up large pieces with wooden spoon, until chicken is cooked through. Add black and pinto beans, tomato sauce, and roasted tomatoes to pot. Stir and heat through.
Add remaining 6 spices to pot, stir into mixture. Reduce heat to low heat. Simmer chili for 20 minutes. Taste chili and adjust spices to your personal preference. Simmer 10 more minutes to allow flavors to meld.
Serve chili alone or with optional garnishes.
** Note: If you can’t find 99% fat free ground chicken, use boneless, skinless chicken breast with all fat removed and either grind in a food processor or mill or dice breast into very small pieces. You could also substitute 93% lean ground chicken but note that this adds 2 WW Freestyle points per serving.
Notes
If you’d like to indulge a little you can add some garnish, but note, it does add points. Ex: ½ oz low fat cheddar or Colby cheese (1 Points) or 1/8 fresh avocado(1 Points) or 2 T fat free sour cream(1 Points)

Homemade Hummus For The Win
Hummus seemingly shows up everywhere these days and for good reason, it’s yummy and on the healthier side of things. From a cooking perspective I’ve recently become attuned to hummus because of its versatility. Find yourself hosting a book club around Halloween? Make Chipotle Pumpkin Hummus. Have nothing in your house but onions? No problem, caramelize and add on top. Wanting to go extra healthy? Serve with crudités in place of chips or crackers.
In the land of hummus, almost anything goes.
I kept hearing about these yummy recipes and I wanted to have homemade hummus in my arsenal. Sure you can pick it up at the grocery story and that works in a pinch. But homemade is always better. So, I decided I’d whip some up the last day before we left town. It seemed like a perfect all-day snack to have on hand while we spent the day thinking about packing, talking about packing and doing everything else inside the house besides packing. (Please tell me you all do this too?!)
Lo and behold, I found myself in the exact situation I described – ingredients to make hummus but otherwise a bare refrigerator in anticipation of the aforementioned trip. But wait, I found a few frozen cubes of homemade pesto from last summer and it saved the day! I put one cube in the food processor with the hummus and let another melt then drizzled it on top. The pesto held up well and did it’s job to add the perfect amount of flavor.

Homemade Hummus


Ingredients
15-ounces undrained chickpeas (usually in a can or bag) OR about 2 cups drained, cooked chickpeas
3 tablespoons extra-virgin olive oil
3 tablespoons tahini
1 1/2 tablespoons freshly squeezed lemon juice (plus more as needed/to taste)
1 small clove garlic
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
Dippers: your preference of pita wedges, pita chips, raw sliced vegetables
Instructions
Drain and rinse the chickpeas: Drain the chickpeas and keep the liquid to the side. If time and patience allow, pinch the skins from each of the chickpeas and discard; this will make your hummus smoother.
Combine ingredients in the food processor: Combine the chickpeas, olive oil, tahini, lemon juice, garlic, salt, and pepper in the bowl of the food processor fitted with the blade attachment or blender.
Blend hummus until smooth, probably 5 minutes: Process the hummus continuously until it becomes smooth, about 5 minutes. Scrape down the sides of the bowl as needed to mix well. Note that if you left the skins on the chickpeas there will always be some texture to the hummus no matter how long you blend.
Taste and add additional flavors: add more of any of the ingredients to taste. If your hummus is stiffer than you’d like, blend 2 to 3 tablespoons of the reserved chickpea liquid to thin it out and make the hummus creamier. This is where I added in my pesto – it doesn’t need to be pulverized so you can toss items like that in at the end and give them a quick pulse. Pesto, olives, sundried tomatoes (but probably not together!) there’s almost no end to the flavors you can add.
Serve: Pour into a bowl, and maybe add a little drizzle of olive oil for flair. Here I added an additional square of pesto on top so some of my dips into the bowl had even more flavor! Then enjoy!

What to Pack for a Trip to the Tropics (and What to Leave at Home)

Yes.
Hawaii. The Kona Coast to be exact.
My husband and I narrowly escaped the polar vortex and are in the magical land of Hawaii to recharge, decompress, and celebrate The Chairman’s birthday a little early.
Vacation Mode
Flying from Oregon to Hawaii only takes about five hours. It took me even less time than that to adapt to island time. I’ve morphed into the tropical version of my former self and may never come home. I now wear flowers in my hair, sleep without setting the alarm cock, enjoy drinks that come in coconuts, and mostly don cabana-wear throughout the day.
It’s glorious and I’ve only been here two days.
All of this beach gazing got me thinking about a few things. We are incredibly lucky to have sojourned to Hawaii on many occasions throughout our marriage. I’m not sure I’d advise anyone to buy a timeshare but, for us, it’s been really great way to visit the Hawaiian islands several times. It’s always been our favorite place to kick off our shoes and take a break from “the real world.”
When I come to Hawaii, I choose to be the best, most relaxed, most adventurous, and most fun version of myself. It’s easy to do when you are surrounded by tropical breeze and food you’ve never heard of and mai tais and hula.
And then I try to bring some of that home with me. Breaking away from the day to day grind and the stress that goes with it is important for everyone. Whether it’s a long weekend at the lake or a road trip with your new glamper or a beach getaway, or just a quiet afternoon with a book and picnic at a local park, schedule in breaks for yourself. This is too important to skip.
What Not to Bring With You on Vacation
While the perfect packing list is important, a list of things to leave at home – both literarily and figuratively – is just as crucial to the success of your trip.
If you approach your vacation just as you would at home – answering emails in real time, stressing over deadlines, worrying about things beyond your control, or limiting your activities and meals to what you are comfortable with, your vacation won’t feel like a vacation after all.
That’s why I thought it was important to chat about what doesn’t need to go in the suitcase.
Here’s what to leave behind.
The expectation that you are fully connected every second of every day. One of the great things about my job is that my work is portable. I can and do bring it with me everywhere. Rather than watch the movie on our flight, I wrote five pages in a new book. And while I’m here in Hawaii, I’ll devote the hours between breakfast and lunch to writing (including this blog!) These days, a lot of people take working vacations. Nothing wrong with that. But don’t neglect the vacation part of your vacation! Yes, it’s wonderful to FaceTime your grandkids from the beach. It’s a good idea to touch base with your family. But don’t carry your phone around like a flotation device. You can put it down for a few hours. And you can stop scrolling Facebook. You aren’t going to miss anything on social media. What you will miss is the most beautiful sunset, or the sweetest moments with your spouse, or the rainbow that transformed the sky and was gone in a nanosecond. Check. Out.
Leave your fear at home. Let me explain. You know that voice that says “You are too old for this” or “I never could do anything like that” or “I only eat chicken salad sandwiches” or “You are literally going to fall down that hill?” Yes. That voice. The one that limits you’re options. The one that holds you back. Yes, in some cases it’s the voice of reason. But beyond the issue of say, personal safety and the integrity of your bank account, tell that voice to take a hike. You are not too old for a new adventure. You are not so set in your ways that you can’t try a new type of food you’ve never heard of and can’t pronounce. I read recently that getting out of your comfort zone is when you make memories on vacation. You might, in fact, be an incredible hula dancer! So dance, Fierce friend. Go for it.
The curse of perfectionism. We’ve all seen the movies where the couple reaches a beautiful vista and it starts pouring down rain. Or they reach the end of the three-day trail only to realize the destination is an actual nudist colony in the mountains. Maybe that last one wasn’t a movie. It was real life. Anyway, my point is to leave your inner perfectionist at home. Something on the trip isn’t going to go as planned. Embrace the unexpected instead of letting it ruin your well-earned time off. Those unexpected moments are sometimes the most magical.
Alright, enough with the pep talk.
What to Pack for a Trip to the Tropics
These first three are non-negotiable and gracefully apply to any destination.
Arrive with a plan. You don’t need an itinerary for every second of your trip but it’s nice to have a few reservations put together, a list of things to do, and an idea of when a certain attraction is really crowded or if there’s a local holiday where everything closes down for the day.
Arrive with a budget. This can be a ballpark. But be on the same page with others you are traveling with. There’s nothing wrong with a reserving a little cash for a splurgey meal in fancy restaurant or an amazing massage. But one of my favorite vacay games is called “How Much Cool Stuff Can We Do For Free Or Almost?” Some of the best memories from my past vacations have been a result of that game.
Arrive with a good attitude. ‘Nuff said.
Okay, let’s talk about something fun.
One thing I love about coming to Hawaii is the excuse to adapt a completely new, tropical style. In Central Oregon, I typically don’t wear bright floral prints or glamorous sun hats, not even in the summer. So when I go on a trip to the tropics, I make sure to bring some fun accessories and outfits that are perfect for the occasion (plus gallons upon gallons of sunscreen for my porcelain skin).
Here are my top picks for things you need for an island vacation in the dead of winter.
The Right Gear
I always try to fit most of my stuff into the cutest and most efficient carryon. It has pockets and inner dividers and is just the right size to slide under the seat in front of you. Plus its adorable.
A truthful disclaimer: I didn’t pack my entire two week vacation into a carryon. My carryon is magical, but not as magical as say, a Mary Poppins bag. But, I did keep my packing pretty efficient with the help of the right carryon, a small suitcase to go with it, and my three tips for smart packing.
Of course you can’t go to the beach without a proper beach bag. Look at these lovelies.

A Glamorous Beach Hat

Protect your baby face from the sunshine. Check.

Fierce Cabana-Wear
When you’re in a place like Hawaii, people just stroll the streets in their bathing suits. That is wonderful that they have the confidence to do that. Go for it, you bold souls. If you’ve got it, flaunt it. When it comes to my philosophy on bathing suit wearing, I only like to wear them if I am by the pool or beach. Like, if I’m actually going to be swimming. So to leave a little more to the imagination, I layer on fun caftans, sarongs, and coverups. Tassels, bright colors, crisp whites, pom moms, bold prints – I love it all. Seriously, when is a better time to flaunt your personality than with bright, tropical flair?
Other Practical Advice
Let’s do a math problem with a little bit of physics and a little bit of common sense. When you estimate the number of books you need for the plane ride to and from your destination, plus the number of books you need for your quiet mornings with coffee or hours spent poolside, remember that you can save your poor husband’s back by just bringing a Kindle or even using Audible, where you can listen to books on the go.
Math isn’t my forte but my estimate for my trip was around 47 books, and the poor Chairman, while he is fit as a fiddle with the muscles of a 20 year old, just can’t be expected to tote all of those books around.

Cauliflower and Avocado Wraps with Easy Tzatziki
I am always so conflicted this time of year. After the holidays, I typically aspire to be less indulgent when it comes to what I eat. But it’s so darn cold and all I want is comfort food!
Usually, I dive right in to my zero point chili or chicken and veggie stew on the regular, but recently I’ve been needing to spice things up.
So that’s exactly what I did. Bring on the smoked paprika and the cumin, baby!
The middle-eastern flavors of these cauliflower wraps are so bold, getting their punch from the spices, the garlic, the lemon, the herbs – all healthy and fresh ways to give a meal some zip!
A Healthy Weeknight Option
Not that I have anything against meat but sometimes I prefer more veggie-forward recipes. And this recipe fits the bill.
Now I know the tahini (sesame paste) and avocados bring on some pretty serious calories, but they also bring really healthy fats. Used in moderation, these are awesome ingredients for a balanced diet.
The greek yogurt base for the tzatziki sauce brings at least 20 grams of protein to the table (if you ate the whole bowl!), our about 5 grams per serving.

Cauliflower and Avocado Wraps with Easy Tzatziki

Description
With so much green going on, this just has to be healthy, right? Well, good news. It is. (And my husband even likes it!). I love this meatless Monday option. With the sauces whipped up in advance, it’s the perfect weeknight meal.
The leftover value on this is high: both sauces are divine on a simple roast chicken or used as dip for crudite.
Ingredients
For the Wrap:
1 head of cauliflower, about 4 cups, cut into florets
1/3 cup olive oil
2 cloves garlic, minced
1 TB honey
1 tsp cumin
1 tsp smoked paprika
juice of 1 lemon
kosher salt and pepper
4 whole wheat tortillas, low-point lavash, naan, or pita
2 Persian cucumbers,* sliced on the diagonal (because, pretty)
Organic Girl protein greens (or greens of your choice), avocado, chopped cilantro for garnish
Fierce Green Sauce and tzatziki for drizzling or dipping or eating by the spoonful (recipes below)

For the Fierce Green Sauce:
1/2 cup tahini
2 TBS olive oil
1/4 cup fresh cilantro
1/4 cup fresh parsley
juice of 1 lemon
1 teaspoon cumin
salt and pepper to taste
For the Easy Tzaziki:
1 Persian cucumbers, peeled and grated on a cheese grater*
1 cup plain, fat-free Greek yogurt (I use Chobani)
2 cloves garlic pressed
1/3 cup chopped fresh dill
juice of half a lemon
salt and pepper to taste
Instructions
For the wraps
Heat oven to 425 degrees.
Mix up the cauliflower, oil, paprika, cumin, garlic, salt, pepper, and honey in a sheet pan. Use your hands until all the amazing flavors are spread around.Roast for 25 to 30 minutes, tossing once or twice, until cauliflower is getting a little color and beginning to caramelize. After you take it out of the oven, make sure to drench it in lemon juice from one lemon. Make it rain.
While it’s sizzling in the oven, make the sauces.
For the easy tzaziki:
For the Fierce Green Sauce:
Combine all ingredients in a food processor and blend until smooth. I used a little water to get it to a properly saucy consistency.
To Assemble:
For assembly, just add all the toppings like you would at a taco bar. You can’t go overboard here. It’s all just so good. Go wild with the sauces. You have my permission!
Notes
*You can use any cucumber you like. Persians are cute, small and mild. If you use a traditional English cucumber, make sure to only use about half.

How to Celebrate Local Quilt Shop Day – January 26th
I’m sure that, like me, you’re very excited about the holidays, right?
Hmmm…what’s that noise I’m hearing out in cyberspace?
Crickets?
Huh.
Well, clearly some of you are not as well-informed as you could be about the major holidays – Christmas, New Year’s Eve, New Year’s Day and of course, one of my favorites, Local Quilt Shop Day! That’s right! It’s just around the corner! In 2019, it falls on Saturday, January 26th.
Why Local Quilt Shop Day is the Best Holiday of All
Local Quilt Shop Day is the ideal anecdote for winter doldrums. Do you know what else is great about it?
It doesn’t require you to cook anything, bake anything, decorate anything, or even buy anything. The only thing you have to do to celebrate Local Quilt Shop Day is – you guessed it – visit your local quilt shop. It’s a stress-free, guilt-free, wallet-free holiday.
It’s an internationally celebrated holiday that emphasizes the importance of local quilt shops to our local economies. (Remember that line if you have to explain a fabric splurge to your husband later).
Now, I’m not saying that it’s not possible that, while you’re in that local quilt shop, you might open that wallet and buy yourself a present, but that’s entirely up to you.
Anyway, in honor of Local Quilt Shop Day, I thought I’d tell you about some of my favorite online quilting blogs, websites, and resources.
Support Your Local Economy
Before we get started, let me say that I believe that the best place for you to purchase quilting fabric and supplies is your local quilt shop (thus the holiday). I’m lucky enough to live in an area where I can visit and patronize four excellent local quilt shops by driving no more than 45 minutes in any direction.
And I do patronize them, on a regular basis. Doing so is a pleasure and shopping local whenever I can ensures that I’ll continue to have access to those excellent shops in the future. When it comes to choosing fabric, there is no substitute for touching the yardage with your own hands and seeing the colors with your own eyes.
However, some people aren’t lucky enough to have four wonderful quilt shops within driving distance of their home, or even one. And so, for those quilters (and also because even an excellent local shop can’t carry everything you might want or need) I’m sharing a few of my favorite online sources for fabric, patterns, and quilt supplies.
Let’s get started!
INSPIRATION AND EYE CANDY
French General
When I need a dose of textile-based inspiration, French General is the first place I go. This is, in my opinion, the prettiest site in all the Internet with the most beautiful photos. It goes without saying that the fabric is magnifique but they also offer beautiful products for embroidery, jewelry making, and weaving.
The Quilt Show
More than 300 of the biggest names in quilting have appeared on The Quilt Show, an internet program hosted by Alex Anderson and Ricky Tims. Membership is required to access most of the over 220 episodes, but you can view a few for free. Also, The Quilt Show Daily Blog for posts and links to some of the most interesting quilt content across the Internet.
The Quilt Alliance
This is a must stop for anyone interested in the history of quilts and quilt makers. Check out “Quilters S.O.S. – Save Our Stories” – to listen to interviews with some remarkable quilters such as Denyse Schmidt, Joe Cunningham, Victoria Findlay-Wolfe, and Carolyn Mazloomi, to name a few. See photos of quilts and hear the stories behind them in the Go Tell It At The Quilt Show project.
Moda Bakeshop
Moda Bakeshop features pictures and guest posts from all manner of quilt bloggers and designers, many including free patterns. Whenever I visit the Bakeshop, I always find a new project I want to try.
EDUCATION, TOOLS, AND TRICKS OF THE TRADE
Deb Tucker Studio 180 Design
If you know me at all, you know I am a HUGE fan of Deb Tucker’s patterns and amazing tools. Deb’s tools make stitching even complicated or teeny weeny quilt blocks sew much easier! And for us visual learners, Deb’s YouTube channel has terrific video tutorials on every tool in the line.

This website and blog, created by the Meredith, publishers of well-known quilt magazines such as American Patchwork and Quilting and Quilt Sampler, is loaded with free patterns, instructional videos, and technique tutorials. I could spend all day here!

Meg Cox
Writer and quilter Meg Cox has a wonderful website and blog but her monthly newsletter, A Quilt Journalist Tells All, is a must read for me, loaded with actual news from the world of quilting.
Annie Smith
Applique aficionados will especially love Annie Smith’s website and blog but there is something here for everyone, including Annie’s blog and podcast, Annie’s Quilting Stash. Annie has recently moved to a new website and is still in the process of moving her archives to the new site, but there is still plenty to see here.
Jamie Fingal Designs
Jamie Fingal’s “Twisted Sister” blog is one of my very favorites. Jamie’s bright, happy, whimsical designs always make me smile and I always love reading about her adventures and creative process. Jamie has a newsletter as well, which I highly recommend.

If you’ve read any of my books, there’s no problem that a sisterhood of quilters can’t solve. And if you read my blog on the regular, you know I firmly believe that crafting (and quilting, of course) are the secret ingredients for a life of joy, fulfillment, and eternal youth.
So reach out and build your sisterhood! The best place to start is popping by your local quilt shop on Saturday (you never know who you’ll meet!).
