Healthy Breakfast Recipes For Every Day Of The Week
Last week I shared with you my love of The Great British Bake Off (and Paul Hollywood) but the pièce de résistance of that story was the one point miracle muffins I made.
Earlier this week I had a very early meeting the next morning and I was chatting with a friend about how hard it is to be responsible with breakfast when you’re jetting out of the house early to make a meeting. As someone that works from home, I am so impressed with those of you who succeed at this feat every morning on your way to work. I usually can pull together a healthy meal on my own schedule, but if I am rushed it takes every ounce of self control not to run for a drive-through, 1,000-calorie breakfast burrito at the closest fast food joint.
Anyway, my lovely friend mentioned I should take out a couple of my yummy muffins from the freezer, let them thaw overnight in a ziploc bag on the counter, and then give them a quick microwave session in the morning to bring them to life. Readers: she was right! They were lovely!
This got me thinking about all of you out there who trek out of your homes in the morning and still need to find a way to eat a healthy breakfast. So, I went in search of a few recipes that might help you with make ahead foods that place the time investment the night before (or the week before and store in the freezer.)
While I admit I haven’t specifically tried any of these recipes, they all my two big criteria of (1) healthy, often containing no sugar or a slew of protein for energy and (2) would be quick in the mornings. I’d love to know how you liked them if you try any for yourself! They are certainly on my list to try.
HEALTHY BREAKFAST MONDAY: EGG MUFFINS
I’m a sucker for recipes that you can customize to you heart’s content and this is certainly one. These make-ahead egg muffins contain sausage but you could add bacon instead, or a little ground turkey to make it healthier…or…or…you get the idea! Personally, I’d try an all veggie option for an extra healthy kick in the morning.
HEALTHY BREAKFAST TUESDAY: BREAKFAST BURRITOS
I’ve picked this recipe for Tuesday because I understand the value of time. What do I mean? You could prep these TWO recipes early and many of ingredients/kitchen utensils are the same saving you valuable time. I’ll be accepting your thanks anytime.
Seriously though, these are a yummy breakfast option and should have no crumbs if you’re eating while driving as it’s all wrapped in a neat tortilla. (Except you should never eat and drive at the same time. I mean drive and eat really quickly at those pesky stop lights!) Keep the cheese to a minimum, and potentially consider some fresh mozzarella or something similar to cut down on those cheesy calories.
HEALTHY BREAKFAST WEDNESDAY: BANANA OATMEAL COOKIES
Congrats, you’ve made it to Wednesday. Just think, by lunchtime today you’re halfway through the week. Pre-celebrate that accomplishment by having a cookie for breakfast. Yep, I said a cookie. Made with bananas and oatmeal, it might even be healthy enough for you to sneak in another one tonight before you go to bed!
HEALTHY BREAKFAST THURSDAY: Tropical SMOOTHIE BOWL
While this one isn’t something you can fully make the night before, you can do much of the prep and in the morning you mostly just blend everything together. While there are a million smoothie flavors you can make I love that this one uses avocado. It’s a flavor that’s becoming more popular on breakfast dishes and I’m a fan – so many healthy fats!
HEALTHY BREAKFAST FRIDAY: PEANUT BUTTER JELLY BARS

In my opinion, I saved the best for last. These beauties look scrumptious enough to put on a platter for dessert at my next party and are healthy enough to have for breakfast with no added sugar! If my Great British Bake Off obsession continues and I find myself compelled to bake again, these are going to be at the top of my list!

Easy Weeknight Korean Beef & Sweet Potato Bowls
My weekdays are usually pretty filled to the brim. You’ve probably assessed this from the themes of productivity and goal setting on the blog. No standing over a hot stove or nine course dinners for me.
But I also hold myself to a higher standard than a simple frozen meal or a bowl of cereal (not that there is anything wrong with that!). I just get so much joy out of putting a meal on the table that I don’t want to rob myself of that. It’s a creative outlet for me. I think I probably have too many creative outlets but is that really such a bad thing?
To avoid making the same thing over and over but not creating too much work for myself, I love things that are of the make it your own variety. Whatever I have on hand – throw it in. Leftover roasted chicken? Throw it in.
The One Bowl Meal
That’s where the beauty of the meal in a bowl comes in. They are actually kind of trendy right now, which is hilarious since its the most basic thing in the world.
Basically, you choose a base. This could be quinoa, rice, riced cauliflower. For me, it’s whatever is leftover and in the fridge.
Then you choose the star of the show. I like to think of this as flavor-packed protein. Grilled steak. Roasted chicken. Crispy tofu.
Then you load it with all the good things. Anything in your fridge that is healthy, it will surely belong here with its fresh, crunchy friends. There’s usually a little chopping involved here but nothing too serious.
Then drizzle it with a sauce, either homemade or sriracha or even salad dressing. I’ve made a really yummy Mexican-themed rice bowl with a low-fat jalapeño ranch that was just perfect.
I love the idea of pairing jasmine rice, crunchy bell peppers, cilantro, chopped cashews, and a protein with store-bought peanut sauce. Or avocado and corn with quinoa and leftover chopped barbecue brisket for a southwestern flair. Or middle-eastern lentils with grilled chicken, cucumbers and tzatziki sauce. Really, I could go on.
But for today’s recipe, we are going to focus on what was in my fridge. And that means Korean beef and sweet potato bowls.

Easy Weeknight Korean Beef and Sweet Potato Bowls

Ingredients
¾ cup low-sodium soy sauce
½ cup rice vinegar
2 TB honey
2 TB gochujang* (or more to taste)
1 inch of minced, peeled ginger
4 cloves garlic
2 TB sesame oil
1.5 lb skirt steak (this is different than flank steak)
1.5 lbs cubed sweet potatoes
¼ cup olive oil
1 TB white miso paste*
¾ tsp kosher salt
6 cups chopped, “massaged” kale
Juice of 1 lime
3 cup cooked rice (I used brown organic jasmine rice from Lundberg Farms)
2 carrots, shredded on a cheese grater
4 eggs chopped cilantro and toasted sesame seeds for topping (optional)
** You can find both the gochujang (fermented Korean Chile paste) and the white miso paste in the Asian aisle of your local grocery store.
Instructions
The Marinade: Preferable the night before but at a minimum of thirty minutes before you intend to cook dinner, grab a large freezer bag and add soy sauce, rice vinegar, honey, gochujang, ginger, garlic, and sesame oil. Submerge the skirt steak in the marinade, occasionally turning or stirring to make sure all surfaces absorb the amazing flavors.
The Sweet Potatoes: Preheat your oven to 425. On a parchment paper lined baking sheet, toss the cubed sweet potatoes together with the miso paste, olive oil, and salt. Roast in a single layer for about 2- to 25 minutes or until lightly charred and tender. Give them a toss a couple times throughout the cooking process so the “char” is evenly distributed.
Fire up the Grill: Skirt steak is best when it’s cooked on high heat for short time, creating a sear and locking in the flavor. Cooking it too long will make it really chewy. Throw the steak on the grill and cook for 5 minutes on each side, spooning on a little extra marinade throughout the cooking process. I like it cooked medium rare. Once you’ve achieved desired doneness, wrap in foil and let rest. Then thinly slice on the diagonal into strips.
Make the Sauce: Pour the leftover marinade into a small saucepan and bring to a simmer. Reduce for 5 minutes until thickened slightly.
It’s Kale Time: In a large bowl, combine kale with lime juice and salt. Massage until wilted.
Now Put it All Together: Start with a base layer of rice in each bowl. Then divide up the steak and sweet potatoes. Add the fun toppings—fried egg, shredded carrots, kale, maybe even cilantro and toasted sesame seeds. Then drizzle with the reduced sauce. Go to town!

Eight Biographies of Fierce Women That Changed the World
Susan B. Anthony labored her entire life planting a tree from which she never got to eat the fruit. She died years before women won the right to vote. How proud she would be decades later that women are not only voting in record numbers, but they are also running and winning Congressional seats in record numbers as well.
In honor of #InternationalWomensDay, I wanted to talk about a few fierce women that have paved the way for all of us. We owe them! They deserve major major kudos. At the very least, pick up their biography and read all about them. There is so much wisdom and inspiration and courage in these pages. Soak it all in. Harness that power.
Here are a few biographies that belong on everyone’s shelf. There are so many more inspirational women and incredible stories that this list just scrapes the surface.
Elizabeth Cady Stanton and Susan B. Anthony: A Friendship That Changed the World by Penny Colman
We will kick things off with the very fierce Susan B. Anthony, the inspiration behind this post.
In the Spring of 1851 two women met on a street corner in Seneca Falls, New York—Elizabeth Cady Stanton, a thirty-five year old mother of four boys, and Susan B. Anthony, a thirty-one year old, unmarried, former school teacher. Immediately drawn to each other, they formed an everlasting and legendary friendship. Together they challenged entrenched beliefs, customs, and laws that oppressed women and spearheaded the fight to gain legal rights, including the right to vote despite fierce opposition, daunting conditions, scandalous entanglements and betrayal by their friends and allies.

While this book isn’t specifically about Eleanor, it expertly recaps her many accomplishments and the great impact she had on the country. As they say, behind every great man is a great women. She was certainly that.
Winner of the Pulitzer Prize for History, No Ordinary Time is a monumental work, a brilliantly conceived chronicle of one of the most vibrant and revolutionary periods in the history of the United States.

Pearl Buck in China: Journey to The Good Earth
This biography tells the story of Pearl Buck, a captivating author who wrote one of my favorite books of all time, The Good Earth. (Side note, if you haven’t read this, stop reading this blog immediately and go find a copy of this book and read every page.)
She recreated the lives of ordinary Chinese people in The Good Earth, an overnight worldwide bestseller in 1932, later a blockbuster movie. Buck went on to become the first American woman to win the Nobel Prize for Literature. Long before anyone else, she foresaw China’s future as a superpower, and she recognized the crucial importance for both countries of China’s building a relationship with the United States. As a teenager she had witnessed the first stirrings of Chinese revolution, and as a young woman she narrowly escaped being killed in the deadly struggle between Chinese Nationalists and the newly formed Communist Party.
Pearl grew up in an imperial China unchanged for thousands of years. She was the child of American missionaries, but she spoke Chinese before she learned English, and her friends were the children of Chinese farmers. She took it for granted that she was Chinese herself until she was eight years old, when the terrorist uprising known as the Boxer Rebellion forced her family to flee for their lives. It was the first of many desperate flights. Flood, famine, drought, bandits, and war formed the background of Pearl’s life in China. “Asia was the real, the actual world,” she said, “and my own country became the dreamworld.”

Okay, this is a shameless plug for one of my books and I know it’s fiction, but an enormous amount of research went in to this project on the WASP (Women Airforce Service Pilots) and I’m forever inspired. Though main character in this book is a product of my imagination, her story was heavily influenced by the true stories of these brave women and the enormous contribution they made to the war effort in particular and aviation as a whole.

Miracle Muffins: Just One Weight Watchers Point Each!
The snow in Central Oregon is up to my eyeballs. Like most writers, I am prone to exaggeration. But this is not that. We had 51 inches of snow in a five-day period and are expecting another 3 inches this afternoon. I stand 65 inches tall so the snow is literally up to my eyeballs.
This means that I am spending a lot of time indoors. Of course I am using these snow days to write and to catch up on my quilting. But I’m also deeply immersed in another favorite cold weather pass time: binge-watching stuff on Netflix.
Specifically, I’ve been spending my evenings watching back-to-back episodes of The Great British Bake-Off. It’s one of my absolutely all-time favorite programs. It’s got everything you could hope for from a reality show and then some – drama, humor, and Paul Hollywood. (In case you haven’t tuned in yet, Paul Hollywood looks exactly like you think someone named Paul Hollywood would look. This alone is worth the price of admission.)
The other thing I love about this show is that it is filled with kind, cheery, British people who are supportive of one another even though they are embroiled in a competition. There is no trash talking or braggadocio on the Great British Baking Show. None.
Instead, they clap their competitors on the back and says things like, “Well done, you!” And if they do something amazing, say, bake quarter-sized replica of the Eiffel Tower that turns out perfectly, they say, “Well, yes. I’m quite pleased with that.” Then, of course, there are all those adorable British colloquialisms they utter, words like “chuffed” and “scrummy”.
Everything about this program makes me smile. On top of all that, I actually learn stuff! Basically, it’s the ideal show for a snow day.
There’s only one downside to watching The Great British Baking Show; it makes me want to bake.
If you’ve been reading this blog for any length of time, you know that I reached my goal weight with the Weight Watchers last year and that I’m a big proponent of the program. Not only was I able to lose the weight I set out to lose, I’ve kept it off for a year!
But, much as I love the program, Weight Watchers and baking don’t always play nicely together. I mean, sure. You can have a brownie on Weight Watchers. But when you realize that a single two-inch brownie is going to cost you 5 points, you’re probably going to have an apple instead. Which is kind of the idea. Weight Watchers guides you to make wiser choices.
Even so, when it’s cold and snowy and you’ve been spending your evenings with Paul Hollywood and the rest of those cheery, chuffed Brits, you just want to bake something.

So when my sister told me about a recipe for one point muffins, I was pretty excited. Also pretty skeptical.
Could it be true? A real, full-sized muffin that tastes good for just one point?
(Even the Weight Watchers recipe for Banana Chip Muffins comes in at 2 points, and that’s for a single mini-sized muffin. Who is going to eat one mini-muffin? Not me. And certainly not Paul Hollywood.)
After much mixing, and baking, and taste testing, I am here to tell you that it istrue! These one-point muffins are miraculous! And delicious! And, with just three ingredients, they are also ridiculously easy to make.
What’s the secret ingredient here? Kodiak Cakes, Power Cake Flapjack and Waffle Mix. This high-protein, 100% whole grain baking mix comes in lots of yummy flavors. I bought Dark Chocolate, Peanut Butter, Blueberry Lemon, Almond Poppy Seed, and Cinnamon Oat. They were all delish.
Now, a word of caution. Though they are Weight Watcher friendly, these muffins are meant to be a snack, not a meal. Have two with a cup of tea, not a dozen instead of dinner. If the temptation is too great, put the extras in the freezer. That’s what I did. They freeze beautifully.
So, with that said, let’s get to the muffins!
BASIC MIRACLE MUFFIN RECIPE
The basic recipe couldn’t be simpler.
To make 6 Miraculous Muffins. Pre-heat oven to 350 degrees. Spray muffin tin with cooking spray.
Mash up 2 large, ripe banana with a fork. Mix in two beaten eggs. Stir in a ½ cup of any of the Kodiak Power Cake mixes listed above.
Spoon mixture into six of the prepared muffin cups. Bake for 18 minutes. Remove tin from oven and allow muffins to cool before removing from tin.
That’s all there is to it! 2 bananas. 2 eggs. Half a cup of baking mix. Eighteen minutes later, you’ll have a half-dozen hot, delicious, guilt-free muffins! See what I mean? Miraculous!
VARIATIONS
I really enjoyed the basic recipe version with all the flavors above. But I decided to experiment with a few variations, just to jazz things up a little.
Peanut Butter Cup Muffins – Add 1 T peanut butter to the Dark Chocolate Muffin recipe. This will add half a point to each muffin, but you can still enjoy two muffins for just 3 points. Not bad!
Double Blue Muffins – Add ½ cup frozen blueberries to the Blueberry Lemon Muffin recipes. My favorite of the variations I tried! Still just one point per muffin!
Almond Apricot Muffins – Prior to baking, put a scant teaspoon of Polaners Preserves, Apricot, with Fiber in the center of each filled muffin tin. The apricot center is a delectable little surprise when you bite. Still just one point per muffin!
Chocolate Decadence Muffins – Add ½ cup frozen raspberries to the Dark Chocolate Muffin recipes. Still just one point per muffin!

St. Patrick’s Day Crafting Roundup
Let’s be honest, no one needs a reason to craft, but sometimes it’s fun to have an event or holiday in mind when getting those creative juices flowing.
Sometimes, I reach a point where I feel like I’ve seen too many cute, new craft ideas that I must share at least a few of them with my readers. I can’t have time to make all the crafts (just most of them!) so I pass along in hopes that the craft idea gets stuck in your brain and you Must. Make. It.
I don’t believe I own any St. Patrick’s Day decorations. With my book schedule being that a new book launches at the end of each March (insert a shameless plug to preorder my new book, Hope On The Inside) it means that this time of year I’m doing to notice that St. Patrick’s Day even happens, much less put up some decorations in my home.
My annual story goes something like this: show up to coffeeshop, have everyone stare at me strangely. Look down and make sure I put on pants (check!), can’t figure out why everyone is looking at me that way. Have friend show up for coffee who finally tells me I’m not wearing green, so the strangers were staring. Friend pinches me. The End.
Maybe that’s why I’m loving all the St. Patrick’s Day decorations, because it’s a holiday that is typically off my radar. I love little celebrations, or little decorative droplets in the home for those small holidays.
Who knows, St. Patrick’s Day is on a Sunday this year, maybe I can steal some time that weekend to make a little DIY home decor?
But which one to make?
ST PATRICKS DAY CRAFTS FOR ADULTS – FARMHOUSE GARLAND
Some of my favorite crafts are things I feel like I could throw together with all various items I already have in my house – and this is one of those! A little leftover fabric (maybe in a handful of patterns instead of just one) and you end up with a sweet and subtle St. Patrick’s day garland that could adorn a variety of places in your home.
ST PATRICKS DAY CRAFTS FOR ADULTS – BOOK PAGE SHAMROCK
I love crafts made from book pages, but I’m sure that doesn’t surprise anyone. (As long as you aren’t cutting up my books, though I probably have some book drafts I’d be happy to donate!) Anyway, I love the versatility of this shamrock – this can hang as it is in front of a wreath, or simply over a door, or prop up on a mantle…the options are pretty much endless.
ST PATRICKS DAY MOSS PLACEMATS
These are so easy, the’ll easily take you the least time of the bunch. Mostly, I love how you can keep using them for so many things! Easter table, check. Summertime place settings, check. Once made and a million times used will be these placemats.
ST PATRICKS DAY LEPRECHAUN HATS
Oh, look at these wee little hats! Seriously though, these would be an easy addition to a bookcase vignette or centerpiece decorations for your table. As I’ve said already, you might even have the supplies for these in your house, which is always a bonus!
ST PATRICKS DAY CELTIC KNOTS
I saved the absolute best for last! For all you knitters out there, having some leftover yarn is the worst. Gather up all the scraps from your previous projects, and make these Celtic knot coasters. While these do add an extra little something around St. Patrick’s Day, you could make these in any color and use them all year.

Spring Fashion 2019: Dressing Fierce For Warmer Weather
I’m done talking about winter.
Ok, maybe I can’t promise I’ll be done forever, but I’m done for right now. The storm is still going on in Bend, OR and my friends and family are stuck. But, I made it out to Puyallup, WA a couple of days ago in anticipation of the Sewing and Stitching Expo and I’ve seen the light.
Literally. I saw the sun again. The sun!
I had forgotten about the sun, my old friend. It had been too long and my memories had faded. But I remember now. The warmth, the brightness, the beautiful glow.
So I’m dreaming of the sun and channeling spring by looking at clothes. Clothes that are appropriate to wear without two layers of down jackets on top of them.
Come with me and dream together of spring! Maybe if we all really believe in it (like Tinkerbell) we can make spring arrive a little quicker!
FRINGE-Y FUN
Fringe has been popular for a few seasons now – it’s not just for biker jackets anymore! You can find it on formals, swimsuits, shoes, purses and about everything else. These are some of my favorite to incorporate the style without trying to look like you’re still in high school (because we know we aren’t!)
TIE-DYE
I know what you’re thinking: didn’t my kids and their friends tie-dye ugly tshirts in the 90s? Well, I can’t exactly answer that questions for you, but they probably did. However, the options out there today are infinitely classier than what your daughter was making with her friends in your backyard.
MARIGOLD (THE COLOR, NOT THE FLOWER)
It’s this spring’s ‘it color’. Do you ever wonder who decides what’s going to be an ‘it color’? The idea always seems so silly to me when I run across it in a magazine, but then lo and behold in every single store and on every single shelf you can find whatever that color is.
Well, regardless of who decides these things, marigold is everywhere. Don’t believe me? Wait one month and walk into every store in your local mall.
To be fair, it is a lovely color that flatters about every skin tone out there – which is saying something for a shade of yellow. Even if you’re loving where your closet is right now, an accessory is a fun way to add a pop of fresh color to your wardrobe for a season!
EVEN THE RUFFLES HAVE RUFFLES
Ruffles are another trend that seem like they’ve been around for a while, and they have. But they aren’t going away yet. Some items seem to have more subdued ruffles – think the sleeves of a shirt, or the bottom hem of a jacket. Some items are practically covered in ruffles! I’m not sure that is my style; they are beautiful to look at but I think I’ll be sticking to more subtle uses of the trend. I really like some of these!
FLY, BUTTERFLY
Is there anything that makes you think of spring more than delicate, colorful butterflies? You can find them on everything these days! I particularly love them on jewelry, or accessories like shoes or handbags.

Savory Salmon Cakes (AKA Pantry Recipes for the Snowbound)
Having lived in Wisconsin, Colorado, and Connecticut, I’ve told my share of Snowmaggedon jokes over the years.
My tongue in cheek taunts were winks at people who live in temperate climes, the people who race to the mini-mart in a panic and empty the shelves of bread and milk at the merest dusting of white stuff and never learned to use the business end of a snow shovel.
You know, Floridians. Or anybody who never learned to ice skate.
Don’t be offended. I’m just kidding. This is just something people from frigid climes do to keep the blood circulating in February. However, I’ll admit there is an unspoken element of pride in our teasing. Deep in our hearts, residents of the Frozen North believe we are made of sterner stuff than the rest of you. Blizzards build character, dontcha know.
But this week, I’m over it. Really, really over it.
SNOWMAGEDDON (THIS ITERATION)
Yesterday morning, I opened the front door and was greeted by snowdrifts that topped my knees. Though I had shoveled the porch before bed, I was now basically trapped inside the house. That’s when I remembered that the last thing I’d done before turning in was put the shovel away. In the garage. Which was now way, way on the other side of that snowdrift.
Fortunately our intrepid snowplow guy showed up to rescue me. The roads are still too treacherous to drive on but at least the dog can get outside to do her thing. So, there’s that. Could be worse.
But not a lot worse. Beam me up, Scotty. Preferably to Florida.
PIZZA DELIVERY DOESN’T HAPPEN DURING SNOWMAGEDDON
There is a silver lining in this however, at least for my Fierce readers. Since I’m snowbound, I had to dig into my pantry to pull something together for dinner last night and came up with the ultimate healthy and heartwarming comfort food – Savory Salmon Cakes. (I told you having a prepared pantry was so important!)
They’re Weight Watcher friendly (just 2 points each!), heart healthy, crazy easy to make, and so delicious they’re almost worth getting snowed in for.
(Almost.)
To lift my spirits, add some cheery color, and kick the flavor up a notch, I paired the salmon cakes with my Easy Pineapple Salsa. So yummy! Add a little steamed rice and you’ve got yourself a weeknight dinner that’s good enough for company and hearty enough to satisfy after a day of shoveling snow.

Savory Salmon Cakes (AKA Pantry Recipes for the Snowbound)

Ingredients
Two 6oz cans of salmon, drained (0)
1 egg, beaten (0)
1 T. Old Bay Seasoning (0)
3 scallions, sliced (0)
2 T chopped cilantro (0)
1/3 cup panko bread crumbs (4)
4 t. olive oil for frying (4)
Instructions
Place salmon in a medium sized bowl and flake with a fork. Add eggs and mix. Mix in Old Bay Seasoning, scallions, and cilantro. Stir in bread crumbs until just combined. Divide salmon mixture into four equal balls. Using hands, press balls firmly to create four salmon patties. Heat 2 t. of olive oil in ceramic or nonstick pan over medium high heat. Place salmon cakes in pan and cook until golden brown, 3 to 4 minutes. Add remaining 2 t. olive oil. Flip salmon cakes over and cook for an additional 3 minutes. Remove from pan and serve immediately.

EASY PINEAPPLE SALSA (4 servings, Zero Weight Watchers Points!)

Description
I only used 2 rings of pineapple for my recipe because that’s what I had on hand. Feel free to add more. You can use any type of canned pineapple. This recipe is really flexible. You can substitute all kinds of peppers and onions and it’ll still be delish. If you like your food on the spicy side, use one small jalapeno pepper in place of the poblano. When I finished making the salsa, I found half of a small avocado and decided to put that in too. Avocados are great in salsa and very good for you, but remember that they aren’t on the Weight Watchers “Point Free Food” list. My half avocado added 4 points to the recipe, or 1 point per serving. Totally worth it.
Ingredients
2 rings canned pineapple, chopped, plus 2 T juice from can (0) 1 small sweet red pepper, diced (0) ½ medium poblano pepper, diced (0) ¼ cup red onion, diced (0) ¼ cup cilantro, chopped (0) 2 t. lime juice (0) Dash of salt and pepper Dash of cayenne pepper
Instructions
Place all ingredients in a bowl and stir. If you have time, it’s nice to let the salsa sit in the refrigerator for an hour or two so the flavors can meld. But if you’re in a hurry you can serve right away. It will still taste wonderful.

Coping With Grief by Helping Others

I don’t invite people to guest post here unless they are very special people with something important to share. Tierney Davis Hogan, definitely qualifies.
Tierney was the first friend I made when I moved to Central Oregon. I actually met her before I moved, at a fabric trade show. Her husband was with her. When Terry learned I was a novelist, he asked what kind of books I wrote. With a completely straight face, I answered, “Erotica.” Terry blushed all the way up to his ears! It was a terrible trick to play on someone I’d just met. But something told me he was a guy who could take a joke. I was right. He was a very good sport about it.
That day, Tierney offered to show me around after I moved. We met for lunch and enjoyed a couples night out. Tierney helped me get connected to the local quilting community. She also invited me over to her house, where I had the pleasure of seeing her studio. Tierney is a talented fiber artist and has had many pieces included in important art quilt exhibitions.
Because we’re both working women, Tierney and I don’t get to spend as much time together as I’d like (but we did get together on Saturday for a day of stitching. SEW much fun!) But I always keep up with her adventures through her wonderful blog, TierneyCreates.com. Her tagline for the blog is “a fusion of textiles and smiles”, which is spot-on. In December, Tierney’s world was rocked when her beloved Terry passed away unexpectedly. Nothing about this journey has been easy. But with the help of family, friends, and her support group, she is coping.
Tierney is a strong, wise, beautiful woman and someone I admire very much. But never more than when I read the blog she posted on Valentines’ Day and which she has graciously allowed me to repost here.
VALENTINES
A little less than a week ago I began having quite a bit of anxiety over how I was going to face my first Valentine’s Day without my Valentine. In December 2018 my husband Terry suddenly passed away. I’ve been with Terry more than 1/2 my life and we’ve never been apart on Valentine’s Day.
I was anticipating a painful day on February 14th, completely stricken my grief, perhaps not even able to get out of bed.
In the middle of my anticipatory grieving anxiety, I suddenly realized that doing something for others might be the solution to dealing with Valentine’s Day.
For the past 5 weeks I’ve been in a difficult but awesome Spousal Loss Grief Support Group that meets weekly. It suddenly hit me that all the widows and widowers in the grief support group with me were facing the same dilemma of their first Valentine’s Day without their Valentines.
So why don’t I invite them all the be my Valentines?
And that is just what I did.
For My Valentines
For the men in my grief support group:
Terry’s favorite cookies were the Molasses Crinkle Cookies that I loved to make. I’ve done little cooking and no baking since he passed so it was a pretty big thing to open my cookbook and actually bake something.
I made a huge batch of these cookies and it felt good to bake again, so good that I actually experienced a sweet moment of joy as I assembled the ingredients.
I put the cookies in a basket and included little sandwich bags for them to take as many as they wanted home.
For the women in my grief support group:
I gave them each little wallets. If you are new to my blog here is a post about the little wallets I made a zillion of since I first became obsessed with them – “Little Wallet Madness” . If you are not new to my blog then you know all about little wallets and some of you own some of my little wallets you won in my blog anniversary drawings!
For the group faciliator:
I gave her a set of my little heart pillows, as she has been helping us heal our hearts.
I then made “Oregon Healing Hearts” valentines using my circle punch and heart punch from my card marking supplies with Oregon/outdoor themed colored papers:
People had the option of an “Oregon Healing Heart” with a dog in the middle of the heart (as I consider dogs healing) or a plain heart:

I think it went over pretty well. The facilitator let me present them at the start of our support group meeting.
The men were willing to share their cookies and both the men and women got to take home some cookies if they wanted. There was laughter, smiles and hugs despite the difficult topics we discussed at that support group session.
Feeling at Peace
Today is Valentine’s Day and I feel at peace. I think it is because I stepped outside of myself and my grief and thought of others for a moment.
Day and night wallowing in my grief was not working for me, even if everyone expected and supported it. I had to try something else. That’s where my grief group came in, my unexpected valentines.
Grieving is hard work, maybe the hardest work I’ve ever done. It’s definitely a hobby I don’t recommend for anybody. But, if you’re suddenly find yourself a member of the club that no one ever wants to join, find a grief group. Part of what I have learned from this experience is, don’t try to go it alone.
The purpose of life is not to be happy. It is to be useful, to be honorable, to be compassionate, to have it make some difference that you have lived and lived well.”

Crossroads: Dead Ends, Chaotic Paths, and Cloverleafs
Ever found yourself zipping down the road of life, traveling in a fairly straight line, only to discover that you’ve unexpectedly run out of road and are facing a dead end?
I think we’ve all been there from time to time, haven’t we? Probably more than once.
If you’ve been traversing this planet for any length of time, you understand that dead ends happen; it’s just part of the deal. Even so, when the path runs out on us it usually comes as something of a shock. Things were going so well and then, Bam! They’re not. Everything comes to grinding halt and we’re left feeling confused and more than a little surprised, maybe even gobsmacked.
“Gobsmacked” by the way, is one of my favorite words and an excellent example of why I am so enamored of British colloquialisms. They’re so vivid. In case you weren’t aware, “gob” an Irish/Scottish/English slang word for mouth – connect it with the word “smack” and you get a pretty clear picture of someone who is so surprised they are rendered speechless.
Right. So much for today’s edition of “Increasing Your Word Power!” Let’s get back to those things that often leave us feeling gobsmacked, those shocking dead ends.
This week, I hit one.
The details don’t matter here. All that you need to know is that I’ve run up against it – one of those oh-so-predictable but also completely surprising dead ends that make a formerly straight path suddenly less so.
FINDING A NEW ROAD
You should also know that I am fine. Really and truly. I’m not dealing with anything tragic or life threatening, so you don’t need to worry about me or send cards, or letters, or emails, or Facebook messages or anything like that. It’s all good here. If you feel like it, you could pray that I will be granted wisdom, discernment, and clarity. That’s something I can always use but especially at times like this.
After shaking off the shock of running into a dead end, we usually see that our initial assessment was wrong. We’re actually not dealing with a dead end but a crossroads, a point at which we have only two options – stay right where we are forever and ever, or make a choice and head in a new direction.
But since staying stuck really isn’t an option (or certainly not a good one) we quickly realize that our only choice to make a choice. But which choice is the right choice? What direction should you head in next? And what will happen if you make a bad choice? That’s the stuff that keeps us awake at night, doesn’t it?
Right now, my crossroads feels more like one of those cloverleaf intersections on the Los Angeles freeway. There are about fifteen different roads in front of me, all leading in different directions.
Which road should I take? That’s what I’ve got to figure out.
One of the many advantages of life beyond 50 is that this isn’t my first crossroad. I’ve picked up a few tips about what to do when a straight path suddenly becomes chaotic.
TAKE A BREATH AND TAKE YOUR TIME
Running out of road, hitting that dead end or crossroad, can be shocking, confusing, emotional, and very unsettling.
I’m sure there are people out there who relish change. I am not one of them. I’ve learned to deal with change but I’ve never fallen in love with it and don’t expect to. And the thing I dislike even more than change?
Uncertainty. That’s the worst.
But over the years, I’ve learned to resist the urge to tie up loose ends too soon for the sake of certainty. The smart thing to do when you’re standing at the crossroads is to actually stand there – at least for a while. Don’t rush to judgment if you don’t have to. Definitely not while you’re still feeling gobsmacked, or angry, or hurt.
The decisions I have most regretted were those that were based on emotion rather than fact. If you think back, I bet you can say the same thing.
So take a breath. Take your time. Be willing to live with the uncertainty a little longer than is comfortable. You’ll be glad you did later.
PROCESS YOUR FEELINGS AND YOUR CHOICES
If you feel angry, hurt, betrayed, or confused while at the crossroads, it’s important to process those emotions. You might need to talk about it, write about it, journal about it, think about it, or pray about it before you’re able to move forward.
Personally, I prefer an “all of the above” approach. I do whatever it takes to work through my feelings so I can start stripping away the emotion. Then I’m in a position to start processing the facts logically, sorting through the risks and rewards, pros and cons of the choices before me.
I use that same “all of the above” approach when processing those choices. Before I make a big decision, I journal, write lists, talk to people I trust, and to God – a lot.
PRAY FOR WISDOM AND WISE COUNSELERS
I’ve said before, this is not a faith-based blog but I am a faith-based person. When I face life challenges, I do so on the basis of and in the context of my Christian faith. For me, doing so means relying on prayer, never more so than when I’m facing difficult decisions.
In times like this, I turn my Bible to James 1:5. “If any of you lacks wisdom, he should ask God, who gives generously to all without finding fault, and it will be given to him.”
Fervent, sincere, and open-minded prayer – the kind that listens rather than shows up with a list of suggestions – is an important step in finding wisdom and, in turn, making wise decisions.
Another important means of finding wisdom is to seek the input of wise counselors. Wise counselors will listen intently and give you an honest, unvarnished opinion. They will tell you what you need to hear, not just what you want to hear.
Part of finding wisdom, perhaps the most important part for me, is being thankful for the loving, active presence of a wise and caring God in my life, as described in Romans 8:28. “And we know that all things work together for good to those who love God, to those who are called according to His purpose.” Isn’t that great? Small wonder that this is one of my favorite verses.
REMEMBER WHERE YOU’VE BEEN
Confronting a crossroads is rarely fun and almost never easy. But the wonderful thing about my life, a life filled with experience, is that I know the discomfort I feel is temporary. This too, shall pass.
The other thing I know and believe with all my heart, a belief that has been backed up by experience, is that somewhere in all the tangle and confusion I now find myself in, there is a plan. A good one. It might take me a while to sort it out, but it’s there.
A SINGLE THREAD TO FOLLOW
More than 10 years ago, I wrote a book called A Single Thread. Near the end, the main character, Evelyn Dixon, offers a reflection that is very relevant to this topic.
If Evelyn were a real, skin-on human, she would definitely qualify as a wise counselor. Before I sign off, I’ll leave you with her thoughts on this subject. If, like me, you’re feeling a little gobsmacked just now, maybe they’ll be of help to you. I hope so.
I always tell my students that quilts are made up of straight lines, but it isn’t true. Quilts are made up of broken lines, just like life. Over and over again, we try to walk a straight path but run into dead ends, sharp corners, and uneven ground that cuts us off and forces us to change direction. Sometimes it’s painful, other times joyful. But it isn’t until you take a moment to stand still, step off the line, and back away that you finally see the truth. Those unexpected turns and startling about faces, the chaotic path? It wasn’t chaotic at all. When you step back to see where you’ve been, you discover the shape, the reason, the intricately beautiful pattern and vivid colors of a life stitched together from what, at one point, had seemed nothing more than mismatched scraps and broken lines. Stepping back, you see there had been a design all along, and a Designer.

Things may seem confusing right now but, trust me, there’s a plan.

You know, as opposed to being a mathematician, or oceanographer, or cabaret singer. All professions I considered. (Okay, not mathematician. Just the other two.)
