Vegan Menu Plan to Celebrate Mardi Gras!

Mardi Gras has snuck up on me. It’s not much of a thing where I live in North Carolina, but I did live in New Orleans for 12 years and it still feels weird to work on Fat Tuesday. Since I didn’t partake in all the veganized New Orleans goodies that I usually do, I thought we should have a whole week to celebrate with our dinners!
