Vegan Instant Pot White Bean Soy Curl Chili (with Options)

I have another vegan Instant Pot recipe for you today. I like the idea of white chili and this one is full of white beans, carrots, and soy curls.

Soy curls can be hard to find unless you live in the Pacific Northwest – or have access to the internet, because you can order soy curls on Amazon.

If you don’t want to wait to get soy curls in the mail, you can use Beyond Meat or Gardein vegan chicken cut into small pieces. Or you could use cubed tofu or tempeh.

Vegan Warm Cinnamon Horchata with Whole Grains and Almonds

This weekend we needed a hot drink to warm up after playing in the snow. I wasn’t in the mood for chocolate,so cocoa was out. I started thinking about atole, a thick, sweet drink full of cinnamon that I make with fresh corn and cashews. It’s so good, but I didn’t want to chance it with frozen corn.

I have an oatchatarecipe that I make in the summer and this winter Warm Cinnamon Horchata is pretty similar.
