I have a fancy looking recipe of Air Fried Tofu Rancheros with Veggies for you today. It uses Little Face Salsa which is made by a Greensboro entrepreneur, Jax Manganiello. (If you want, you can skip right to the recipe by clicking here.)
Little Face is in the beginning stages and just beginning to get into local stores. When I met with Jax she told me about a...

Vegan Garlic Herb Avocado Cashew Cream Cheese
I love bagels. There’s nothing better than a nice smear on an everything bagel. I really miss the fresh-baked bagels I got in my neighborhood when I lived in Brooklyn. There was a place that sold bagels wholesale, and you could smell the cinnamon raisin ones baking from blocks away.
It felt like you were doing something a little underhanded when you went through the back door into the huge room of ovens, men and cooling racks. Someone would eventually notice, and tell you what they were baki...

The Elvis Popsicle – Vegan Banana Peanut Butter Fudgsicles
These dairy free fudgesicles are a household favorite. I used ripe bananas as one of the main fudgesicles ingredients. They create the base for these Vegan Banana Peanut Butter Fudgsicles, and I’m sure you can guess that peanut butter and chocolate show up too.
We all know that pureed banana makes an excellent and creamy ice cream. I decided to use its superpower to make an extra creamy popsicle. The only hard part is waiting until they freeze before you eat them!
I don’t call for the Elv...

Quick and Easy Fresh Oregano Vegan Pesto
It’s getting hotter so it’s time for some dinners that don’t take all day to cook. When I get tired of salads I always turn to a quick pasta. Last night I tossed it with some Quick and Easy Fresh Oregano Vegan Pesto.
I’m lucky that one of my stove burners has a quick boil setting, so the water’s ready for the pasta before I know it. We also have a burner on the grill, but it’s so hot on the deck around dinner time that I haven’t used it yet. Maybe this will be the year we finally try it.

Steel-Cut Oat Sausage Crumbles From OATrageous Oatmeals

I want to share one of my most used recipes from OATrageous Oatmeals. These oat sausage crumbles are made with steel-cut oats and spices. They are gluten-free if you use gluten-free oats and naturally soy-free, nut-free and has no added oil. Almost anyone can eat them!
I love sausage spices and each one of my books have a unique vegan sausage recipe. In this one, you mix the cooked oats with the spices, then you spread the mixture out on a parchment-lined baking sheet. You...

A Vegan Slow Cooker Menu Plan that Will Change Your Cooking Forever!
It has been almost impossible for me to get motivated to cook last week. I’m solving my problem for this week by coming up with a vegan slow cooker menu plan.
I’m sharing it with you today to make your days easier too. And guess what? All the recipes are made right in your slow cooker! Yes, your crockpot can change your warm-weather cooking.
For years, I’ve been an advocate of using your slow cooker all year round. It doesn’t heat up your kitchen like the stove-top or oven does. I know that...

Terry Walter’s Vegan Collard Green Sukiyaki
Today’s recipe is from Terry Walter’s new cookbook, Eat Clean Live Well. This Collard Green Sukiyaki is an easy weeknight meal. I love buckwheat noodles and collards, so this Sukiyaki hit a home run for me.
You might not have a daikon hiding at the back of your fridge, so feel free to use a parsnip or sub another veggie you have on hand. No access to the fancy-schmancy maitake mushrooms? Then just use plain old button ones.
I’m a big believer in modifying recipes to meet any special needs y...

Vegan Baked Orange Carrot Cake Oatmeal
[image error]
I’m so excited – I think this is the best oatmeal I have ever made. I’ve made a ton of oatmeal recipes that I’ve fallen in love with, but I think I need this every morning this fall. It really tastes and acts like a Vegan Baked Orange Carrot Cake. Granted, the texture is a little denser, but all the flavors – including icing – are there!
Just so you know this post is sponsored by Nancy’s Organic Cultured Soy. It’s my favorite soy yogurt, but unfortuneately I can’t get it in my area anymore....

Blackberry Mojito Overnight Oats from OATrageous Oatmeals

These Blackberry Mojito Oats are more than just your basic overnight oats recipe and is my favorite warm weather oatmeal. I like to makes overnight oats in a jar for 3 days at a time, so I just grab from the fridge and go during the week. Easy overnight oats are a great way to start your day. This recipe is without (vegan) yogurt, so it’s a little thinner than you may be used to. You can add more oats or less liquid to make them thicker if you prefer.
If you don’t imbibe y...
