Vegan Air Fryer Blueberry Apple Crumble from The Vegan Air Fryer

It’s always time for a fruit crumble, but I especially love adding fresh berries in all summer long. This recipe is made in your air fryer which helps your house not heat up.

This recipe is from JL’s new book, The Vegan Air Fryer. You probably already know JL Fields from her blog, JL Goes Vegan, or one of her many books.

JL turned the vegan community on to air fryers, and I started playing with mine because of her. If you are like me, you are already a member of her Vegan Air Frying Enthusia...

3 Sneak-in-Some-Veggies Pasta Sauces

I don’t know about you, but I start incorporating more pasta into our meals during the summer. Pasta is just so easy. You can make cold pasta salads, cover it in fresh herb pesto, or toss it with some sautéed veggies.

You can also make one of these super easy Sneak-in-Some-Veggies Pasta Sauces. They all freeze well, so you can stash away some for an even busier day!

Pineapple Mint Agua Fresca

Pineapple Mint Agua Fresca

Agua Fresca is a traditional Latin American drink made of fruit, water, and a sweetener. It reminds me of the sweet and fruity drinks I had as a kid, only agua fresas are made with the real thing!

With my agua fresca, I skipped the sweetener and used mint to add a hint a sweetness instead. You can use the sweetener of your choice, to taste if yours still tastes too tart for you.

<!--It's been a gorgeous weekend here in Durham. Today I'm sitting on the deck listening to the breeze while I'm writing this. It's been a few fast-paced months for me and I am finally getting a little relaxation in. Cheryl went camping so I had the whole house to myself this weekend which is a treat for me. The tv has been off and I've managed to sleep in and I think I'm back on track again. Yay! Yesterday, I repotted some herbs and had a great talk about branding with Sabrina, of

They are quick and easy enough for weeknight dinners and are still good enough to serve company.
I tend to be an overachiever. Glam Chowder from NY Vegan

There’s another fun vegan cook book in town and I bet you can guess what’s the focus of NYC Vegan! You’re right – it’s iconic recipes from New York City. The Rueben on the cover makes my mouth water – how about you?

I lived in New York about 30 years ago and lived in what’s a super hip area in Brooklyn now. When I was there it was full of old Italian women, but I was walking distance from Italian, Polish, and Hispanic groceries. I was 2 stops away from the city and all...

Slow Cooker Lentil Quinoa Taco Filling

Slow Cooker Lentil-Quinoa Taco Filling from Vegan Slow Cooking for Two

I make these slow cooker lentil tacos all the time in my 2 quart slow cooker. This vegan taco meat substitute is 100% plant based, gluten-free, soy-free and has no added oil. This easy vegan taco recipe is hands off and can cook while you’re away for the day and is a great change from refried bean tacos.

Slow Cooker Lentil-Quinoa Taco Filling contains no soy or gluten yet, has an almost meaty texture that tacos love. This filling is also a great place to stash some shredd...

Gluten-Free Lemon Blueberry Belgian Waffles that are vegan, soy-free and oil-free! | HealthySlowCooking.com

It’s finally Friday! I got back from a long vacation to Orlando that may have included some of allergy-friendly vegan waffles in the shape of Mickey Mouse. I’ll share more about my trip with you in a post later, but it was hot, fun, and delicious.

I’m a huge fan of summer berries and was lucky enough to get some organic blueberries in my CSA this week. Luckily, I have a recipe for Gluten-Free Lemon Blueberry Belgian Waffles from OATrageous Oatmeals. To make it truly gluten...

Vegan Gluten-free Zucchini Chocolate Chip Cookies

Vegan Gluten-free Zucchini Chocolate Chip Cookies

This is the time of year that zucchini can be too plentiful. I am using a CSA that I get to pick out what I want. But I have a default box that comes and this week it had lots of zucchini in addition to all the extra I already had in my fridge. My first use-up-the-zucchini mission are these Vegan Gluten-free Zucchini Chocolate Chip Cookies.

They are gluten-free from the oat flour and rolled oats – as long as you get bags that are clearly labeled gluten-free. Oats are gluten-free naturally bu...

Eggplant Tapenade from Vegan Slow Cooking for Two

Eggplant Tapenade from Vegan Slow Cooking for Two

The hot and humid North Carolina summer weather wears me out after a simple walk around my tiny garden or after a few hours working on the deck. The heat makes me feel less motivated and more time thinking about napping.

This is the time of the year that slow cookers are made for. Make dinner while doing other, less heat producing, chores.

While I’m writing this, I have 2 cooking away in the kitchen and it doesn’t heat the house up one bit. I’ll be posting more summer slow...
