My Vegan Tempeh Hash with Veggies is perfect for a little brunch party. I’d serve it with a bowl of fresh fruit and big glasses of cold brew coffee.

It’s that time of the year! What time? Cocktail and mocktail time I say! It’s hot and I’m working a ton, so when I stop for the day I want a special drink. That could be with or without alcohol, as long as it’s refreshing and bursting with flavor.
When it’s hot like this I cannot get enough ice into my drinks, and I love crushed ice. If you can get your hands on some or make it in your blender, I think it dresses this up even more!

What’s more refreshing than a mango lassi? Vegan Mango Lassi Popsicles! The flavors keep to the traditional lassi with mango, and yogurt with a hint of sweetness, rosewater and cardamom.
You can use any vegan yogurt you’d like for this, but the tangier, the better. I used a plain soy yogurt, but you can also use an unsweetened plain yogurt if you want to control the kind of sweetener you use. Stevia, monkfruit, agave and even simple syrup made with vegan sugar would all work.
