Valentine’s Recipe: Homemade Organic Chocolate Peppermint Popcorn

I posted a photo of this delicious treat a few weeks ago on my social networks, and so many followers asked for the recipe! Here it is, just in time for Valentine’s Day!




Homemade Organic Chocolate Peppermint Popcorn

Ingredients:

- organic popcorn kernels

- coconut oil

- one bar of dark chocolate (or dark chocolate chips)*

- peppermint extract (or peppermint essential oil)*

- sea salt


Pop organic kernels using coconut oil.


Meanwhile, use a double boiler to melt dark chocolate* (I just place a heat safe glass bowl over a metal sauce pan with an inch or two of water in it. Don’t let the water boil, just keep it warm), slowly stir in 1 tbs coconut oil, a dash of peppermint extract (or one drop essential oil) and a pinch of sea salt.


While warm, pour popped corn into a large mixing bowl. Spoon dark chocolate peppermint mixture over the top. Sprinkle sea salt to taste. Mix and serve.


*Alternatively, you could use a peppermint dark chocolate bar, crush it and mix it with the warm popped popcorn, then sprinkle with sea salt. Most of the peppermint chocolate chunks will melt onto the warm popcorn… mmm!

Remember to use ORGANIC ingredients – especially when it comes to any type of corn product.

Recipe: Zucchini Pesto Pasta

Zucchini Pesto Pasta


Ingredients:

- 5 Zucchini, spiraled

- 1 cup (or to your preference) Green Basil Pesto

- 1/4 cup Sun Dried Tomato, chopped / sliced


Use a Spiral Vegetable Slicer (I use Paderno World Cuisine’s model, which I got for Christmas!) to make the zucchini into pasta. Mix with the pesto and sun dried tomatoes, then garnish with a few basil leaves.


If you don’t have a vegetable spiraler, I encourage you to just try this type of dish at a restaurant near you. It’s delicious, veggelicious, and a healthy choice over traditional pasta!

Beautifully Flawed Retreat with Friends of Bethany Hamilton

The 2013 Beautifully Flawed Retreat was Friends of Bethany Hamilton‘s (FOBH) very first annual retreat for amputees. Hosted by Bethany Hamilton, Lauren Scruggs, Sarah Hill, Becky Hamilton (FOBH Board President) and Katie Ancheta (FOBH Executive Director), the weekend was aimed at inspiring and encouraging young women who have suffered the loss of a limb.


Song of Solomon 4:8 says, “You are altogether beautiful, my darling, and there is no flaw in you.” This intimate retreat focused on finding beauty even in our scars, as well as sharing inspiring stories, and practical tips for girls with limb loss!



Beautifully Flawed was an absolutely amazing event to be a part of. I can’t wait for next year!

Bethany & Alana Keiki Classic


I got to host, for the first time, a keiki (kids) surf contest with my long time friend, Alana Blanchard! The Bethany & Alana Keiki Classic was hosted by our sponsor Rip Curl and Hanalei Surf Co. at Pinetrees, Hanalei Bay, Hawaii on Saturday October 19th, 2013. An increasing northwest swell brought solid, thumping overhead surf, but these island-bred keiki were up for the challenge. It was a great event held in challenging surf, with about 95 groms from Kauai who totally charged!


I held an essay contest to encourage the kids to pursue their dreams. It was fun to read all the entries and choose two winners, who received new Terry Chung surfboards!


I got to see Adam at his best while he organized some beach activities for all the kids. It was fun to have him involved (:
