Slow Cooker Pineapple Coconut Oatmeal (yum!)

Recipe:

1 1/2 cups steel cut oats (must be steel cut to withstand slow cook without turning to mush)

3 cups water

1 13.5 oz. can coconut milk, unsweetened

1 20 oz can pineapple chunks, in juice- add the entire can, juice and fruit

1 t. cinnamon

1/4 t. nutmeg (preferably fresh grated)

Put all ingredients in slow cooker (I use liner bags to avoid clean-up problems, but if not using, spray slow cooker with oil), stir to combine, high heat for three-four hours or low heat for six-to-eight hours.

Delicious! Sprinkle with macadamia nuts and brown sugar for extra oomph. You can add a little protein powder if you’re working out a lot. I like a little cream on mine. Extras can be refrigerated in an airtight container for up to a week, easy to reheat in the microwave or on the stove with a little added milk, cream, or water stirred in.

Milestones

Birthdays! My dad turned 73, and had all of his daughters on hand to celebrate (and some of the grandkids, too)! A real rarity. And today, it’s my birthday! Happy Birthday to me– and all of the other October babies out there. [image error]

Power of Women

I’m honored to find out that I’m one of 1000 women featured in The Republican newspaper’s (not a political affiliation, just the name of the paper) Power of Women book, looking at women from MA and CT who shaped history and made an impact on society. I found out while on a beach in Hawaii for a recent birthday.

Gorgeous beaches, beautiful sunrises and sunsets, great people. Highly recommended if you ever get a chance to go. I stayed at Disney’s Aulani resort and it was fabulous.
