ONE MORE REA$ON TO GO VEG
It’s estimated that Americans eat 200 pounds of meat (including chicken and fish) every year. According to VegTimes magazine, by replacing the meat with healthier, more compassionate options each individual could save up to $4,ooo.oo a year.

The Physicians Committee for Responsible Medicine recommends….
…..NOT grilling meat ! Carcinogens form when meat is barbequed. This isn’t news but it IS a timely reminder just before the biggest grilling day of the year. The 4th of July is around the corner but don’t wait until Wednesday to think about what you’re going to eat. Start planning TODAY so that you can enjoy delicious, seasonal, festive foods when the parties roll around.
From our friends at PCRM here’s a recipe for a blue corn chip salad that will have other people envying your plate this year.
Blue Corn Chip Salad
Makes 2 servings
4 cups baked blue corn chips (other colored corn chips can be substituted)
1 small head red-leaf lettuce, torn into bite-size pieces
16 ounces cooked black beans, rinsed
1 cup salsa
3 roasted red peppers, sliced into strips about 2″ long by 1/2 ” thick
1 Roma tomato, diced
1/4 cup pepitas (green pumpkin seeds; optional)
Place the corn chips on the plates first, followed by the lettuce, then the beans, then the tomatoes, then the salsa, and top it off with the sliced roasted red peppers. If you decide to add pepitas, make them the final ingredients you place on the salad.
Per serving (1/2 recipe): 239 calories, 10 g protein, 39 g carbohydrate, 16 g sugar, 2 g total fat, 9% calories from fat, 15 g fiber, 340 mg sodium

Vegan Pizza Day !?!
It seems that there is a “day” for everything. There’s an ice cream day, a donut day, a kiss and make up day (which we think is MUCH healthier than the other two) a take your dog to work day, and even a mustache day ! (You’ve got to plan ahead for that one!)
As luck would have it we close out Viva la Vegan with VEGAN PIZZA DAY. All around the country vegans are celebrating by making vegan pizza, ordering it out and even challenging traditional eateries to accomodate them on this day with vegan versions.
No we’re not recommending pizza of ANY sort as a diet staple. We know (thanks to Marilu and our vegan coaches, Jan and Kyra!) that a healthy diet incorporates an abundance of fresh whole foods. But once in a while you’ve got to indulge. Why not load up your vegan version with tons of fresh veggies or a side salad and use this summer Saturday to party with a conscience ?

Give us the green of summer !
They’re not just for the rim of your drink!
Limes are high in fiber and low in calories. That may not seem important unless you plan to eat a whole lime. But these colorful little fruits are great additions to many meals and can spice up your menu when you squeeze a little lime juice over fish or veggies or into your sparkling water OR flat water.
They’re a quick and inexpensive centerpiece and the grated zest is delicious in fruit muffins, and gives desserts a great summer flavor.
When beginning any healthy lifestyle look for foods with visual appeal and strong flavor.

Meatless Monday…a taste of membership
During a discussion in the member’s area one of our long time members shared a favorite meatless meal. We thought you might enjoy this recipe from Sundancer:
Curried Crock-Pot Lentils
Ingredients:
1 cup rice
1 tbsp curry powder
3 1/2 cups vegetable broth
1/2 cup lentils
2 vegetarian bouillon cubes
1/2 tsp garlic powder
1/4 tsp pepper
1 onion, diced
Preparation:
Combine all the ingredients in a crock pot. Cover and cook on low for 4 to 5 hours.
Makes four servings.

Calories: 309, Calories from Fat: 20
