It's a tropical getaway in a glass! Watermelon is one of the few fruits that are available all year round. But nothing beats sun-ripened watermelons during their peak season. Because we have an abundance of this summer produce, I wanted to make something light and refreshing with it. Not only will it provide you with your daily dose of sweetness and fiber, but it will also keep you cool amidst the summer heat. There's nothing like a nice drink when spending time outside to make you feel refreshed! Homemade slushies are simple to make because they only require three ingredients. Children and adults will enjoy the burst of wonderful fruity and minty flavor and its brilliant red hue.
What’s the difference between slushie and smoothie?
The main difference between a smoothie and a slushy drink is that a smoothie is thicker and has the consistency of a milkshake. A smoothie is a blended beverage made with yogurt or milk, fruits, and juices. A slushy like the kind from 7-11 on the other hand is ice-based made with frozen fruit or fruit and ice. Sometimes a bit of fruit juice is also added to thin it out. Both are equally delicious! Some of our fave smoothies to make during summer are Citrus Mango and Kale Pineapple. They are divine!
How to make a Watermelon Slushie
This refreshing frozen fruit drink is surprisingly simple to make. You will only be needing a few simple ingredients and a blender.
Tools needed:
High-speed blender - this is best for mixing frozen fruits or ice.
Baking sheet - it is used to lay out the sliced watermelon for freezing.
Resealable freezer bags - for storing leftover frozen watermelons

Watermelon - It contains over 90% water and is high in vitamin C, vitamin A, and antioxidants. This is therefore the ideal fruit for this slushie recipe. We prefer using personal-sized seedless watermelon to make this cool drink. but you can use other watermelon varieties that you like.
Mint - I find this herb to be very versatile as it can be used in a variety of dishes. From savory entrees, desserts to cocktails. It adds a unique freshness to every dish or drink. It has antibacterial and anti-inflammatory properties as well. We will use 2 sprigs of mint for this recipe.
Water - This is an optional ingredient because watermelon already contains enough liquid for this recipe. However, if the fruit is too frozen then we may add 2 tablespoons to loosen the mixture a bit. If you want to use some fruit juice instead, you may do so. Pick any flavor you like to make your slushie even more flavorful.
How to make this refreshing slushie drink?
Although the prep time in making watermelon slushie will only take 15 minutes, freezing the fruit should be made ahead of time. Here are the steps:
We begin by removing the rind and cutting them into cubes. The best watermelon to use for this recipe is one that is seedless; otherwise, we can simply discard the seeds for a smoother texture.
Freeze the cubed watermelon for at least 2 hours on a baking sheet. You may lay them out separately before freezing to make them easier to blend.
In a high-powered blender, combine the frozen fruit and mint and blend on high until it forms a slushie. If the blender locks up, the watermelon is still too frozen to blend. To help the blender crush the frozen fruit quickly, try thawing it for a minute or two. You can also add 2 tablespoons of water if the mixture is too thick.

Tip: A quick swirl in the blender with a handful of ice cubes can always revitalize it.
How long can we keep frozen watermelon?
Frozen watermelon cubes will last in the freezer for around 6 months if stored in freezer-safe bags or containers.
Tip: Individual servings of frozen watermelon can be kept in the freezer. This way, you won't have to thaw the entire batch, which could compromise the quality of the remaining fruits.
What Fruit Goes Well with Watermelon?
Watermelon goes well with a variety of fruits, like strawberries, bananas, and other tropical fruits such as mango and pineapple. Strawberry is the most complementary of these fruits, as it is subtle and not overpowering. It lets the watermelon stand out more than any other fruit. We kept this recipe simple so you may be creative and imaginative with whatever fruit you have on hand.
Tip: Adding more frozen fruit can thicken your slushie. You have the option to add water or fruit juice to thin it out.

Add-on when making Watermelon Slushie at home
Sweeteners - Watermelon slushie can be enjoyed without the addition of a sweetener because of its naturally sugary flavor. However, to satisfy your craving for some extra sweetness, you can add maple syrup or agave.
Basil - If you do not like mint for some reason, you can replace it with basil. It has a sweet-savory taste and mellower mint flavor.
Lime - Adds a zesty flavor that'll brighten your slushie right up! Squeeze a small bit of lime juice and add it to your watermelon slushies for an added boost of vitamin C.

What is a Virgin Bloody Mary?
Bloody Mary is a fiery drink that has regularly been a part of late-morning menus for years. This recipe is an alcohol-free version of Bloody Mary, also known as a glass of Virgin Mary. It has all the flavors you would expect from its original version but is kid-friendly and is quite healthy! Back in the day, Bloody Mary was just a drink with vodka and tomato juice mixed together. The cocktail has evolved since then with different versions made, including this mocktail. But it is distinctive for its spicy, savory, tangy, and salty flavor combo.
Our version of this drink is super flavorful and does not need vodka for you to enjoy! The fresh vegetables blended with tomato juice and vegan Worcestershire sauce create a savory drink with a tinge of tanginess from the lemon juice and a delightful zing from the hot sauce. Make it in just 10 just minutes using only a blender or food processor. It is perfect as a chilled beverage to help you feel rejuvenated after a fun night of drinking or if you simply want to enjoy a delightfully rich glass as a refreshment.
A Veggie-Filled Drink
All the vegetables used in this drink are great for settling the stomach the morning after a great party. Also, the brine full of electrolytes and the cucumber filled with water help in rehydration and balances acidity. This restorative beverage is also full of vitamin C, potassium, and vitamin A and contains very little sugar.
What’s in this Virgin Bloody Mary drink?
Making this lovely mocktail from home couldn't be easier. Plus, it is so adaptable that you can just change the quantities to make it the way you like it!
Ingredients:
Tomato Juice - A homemade or store-bought tomato juice would work for this recipe. Tomatoes are known to contain lycopene which is an antioxidant that helps reduce inflammation.
Green olives brine - Whenever I open a can of California Ripe Olives, I frequently save the juice for later use. That salty goodness is a great addition to any of your cocktails. So, don’t throw the brine away! California green olives are used in this recipe as they have a milder flavor than the black ones.
Cucumber - Peeled and chopped for easier blending. Cucumber has a cool flavor with a little sweetness that gives the drink a soothing taste.
Celery - Is used both for making the drink as well as for garnishing. Its bold and earthy taste perfectly blends with the sweetness of tomatoes.
Lemon juice - A splash goes a long way in brightening up the drink and adding a refreshingly tangy taste. It also balances all the savoriness and spiciness.
Horseradish - This white root vegetable lends a spicy kick similar to mustard or wasabi.
Vegan Worcestershire sauce - provides that umami taste that you would not expect from a drink but is super addicting! It also gives the drink body, which can turn out too watery without it.
Garlic - A clove would be enough to provide a garlicky flavor on the drink without overpowering other flavors of the beverage.
Hot sauce - A little of this is enough to give the drink its characteristic punch!

How to make a Virgin Bloody Mary drink?
There is really nothing much to do to make this vegetable-based drink. Here's how you do it:
Add all the ingredients - tomato juice, California Ripe Olives brine, cucumber, celery, lemon juice, garlic clove, horseradish, hot sauce, and Worcestershire sauce (if using) in a blender or food processor.
Garnish with celery and green olives and serve over ice in a glass.
Tips when Making Virgin Bloody Mary
For the best result, chill your juices and vegetables in the fridge before blending them all together.
The measurements in the recipe will guide you on the proportions used per ingredient. However, feel free to make changes depending on how you would like your drink to turn out.
If you are not sure of the spiciness preference of your guest, leave the hot sauce out and let them add it depending on their liking.
Experiment with other spices and seasonings such as wasabi, raw ginger, cayenne pepper, smoked salt, paprika, garlic powder, and nutmeg. As previously said, this recipe is extremely customizable and combines nicely with a variety of spices.
You can keep the Virgin Bloody Mary leftovers in the fridge for up to a week at most. Make sure that it is stored in a sealed jar or pitcher.
Can I make this ahead of time?
Absolutely! One of my favorite things about this mixed drink is how the flavor improves over time. This refreshment tastes incredibly good after making it. However, chilling it for a few hours or even overnight in the fridge will allow the flavors to build up. It becomes more intensely rich as the spices have more time to mix and blend.
How to serve a Virgin Bloody Mary?
This drink is best served poured over lots of ice in a glass with a salted rim. To do so, rub a small piece of lime around the outside of the glass. Dip the rim of the glass in a salt saucer gently. I garnished it with olives in cocktail picks or skewers and celery stalks. Other options for garnishing may include pickled veggies, lemon wedges, and cocktail onions. If you want to make a "meal" out of it, you can also garnish with some plant-based meat cuts, plant-based shrimps, or tofu bacon.

Tex-Mex Zucchini Boats

No one can deny that zucchini is one of the most versatile vegetables out there. You can grill it as a side dish for your protein, use it to make crispy fried fritters, or make noodles out of it. I can think of a zillion ways to prepare it, yet I'm still amazed at how much flavor it can provide to a dish. (Check out our roundup of our favorite zucchini recipes!) This green summer squash is ideal for mixing with other ingredients or in simple dishes that accentuate the flavor of fresh herbs especially now that they are in season. Making these Zucchini boats loaded with a spiced filling made of zucchini, tofu, and corn is so much fun. There are different ways and variations of zucchini boats. So, this dish will be an addition to the list of zesty and vibrant recipes that you and your family can absolutely enjoy anytime.
How to prepare the Zucchini Boats
We need to prepare the zucchini boats before cooking the filling. First, we have to choose the best zucchini that we can find. Small to medium-sized zucchini is ideal (no longer than 6 to 8 inches). They should be firm with no cuts or nicks. Fresh zucchini will have little hairs on it.
Making the boats is a piece of cake! For this dish, you need 2 medium zucchini. Trim the stem end of your zucchini before cooking. To do this, I use a knife to gently round the end of the zucchini and remove the stem. Afterward, cut each zucchini in half, lengthwise. Hollow out the zucchini with a measuring spoon (teaspoon) or melon baller, creating a boat. Set aside the zucchini flesh until the rest of the ingredients are ready.


What you'll need
Although this recipe for Tex Mex Zucchini Boats appears to have many ingredients, all of them are simply vegetables or seasonings plus tofu. Thus the preparation is quick and easy as well as it will only require a very short cooking time. A budget and pantry-friendly dish!

Zucchini - 2 medium zucchinis, cut in half lengthwise. We will be using a 9x13 inch baking pan, so make sure you get ones that will fit.
Tofu - Choose that is extra firm. Any extra water should be drained and pressed out. You can use a tofu press for this. If you have none. place the tofu on a cutting board, and wrap it in a dishtowel or paper towel. Place a heavy object on top, like a skillet, and let it sit and drain for 30-45 minutes.
Corn kernels - Whether frozen, canned, or fresh, provide natural sweetness and crunch to the mixture.
Garlic and Yellow or Red Onion - For sautéing, use 3 garlic cloves and 1/2 medium-sized onion.
Taco seasoning - We are putting 3 tablespoons but use as little or as much as you wish, depending on how spicy or intense your family likes their dishes. However, if you do not have this in your pantry, you can mix paprika, cumin, chili powder, and garlic powder.
Salsa - I prefer basic salsa, but if you are feeling want to spice things up, here are some variations that you can try:
Red salsa (Salsa Roja): The sauce is mainly contains cooked or canned tomatoes, onion, garlic, and hot peppers.
Fresh salsa (Salsa Fresca or pico de gallo): Tomato salsa using fresh tomatoes, onion, garlic, and jalapeños for that extra heat.
Green salsa (salsa verde or tomatillo salsa) - Tomatillos, a small green tomato type with a tangy flavor, are used in this salsa.
Non-tomato-based salsas - Peach, mango, corn, pineapple, and other fruits and vegetables used to make the sauce.
Cilantro and Lime juice - Gives a tangy, zesty note to the dish. However, cilantro can be omitted if you don't like it.
How to make Tex-Mex Zucchini Boats
You will adore the simple way to cook this Tex Mex Zucchini Boat dish. Here are the steps:

Preheat your oven to 425 °F.
In a large pan over medium-high heat, add oil and saute garlic, onion for about 1 minute. Then add the diced zucchini and stir for another minute.
Crumble the tofu into the pan with your fingertips. Add the corn, taco seasoning, and salt. Cook until the vegetables are soft, about 3 to 4 minutes.
In a 9x13-inch baking pan, arrange the zucchini halves. Fill the zucchini halves with the tofu mixture, cover with foil, and bake for 25 minutes. You may need to set another 10 minutes after removing the foil.
Lastly, serve with warm salsa and cilantro on top.
Can Zucchini Boats be made ahead of time?
Yes, these can be prepared up to two days ahead of time. Separately, keep the filling in an airtight container, if possible. So, all you have to do is prepare the zucchini boats in a baking dish and scoop the filling, and they are ready to bake.
Storing leftovers
Storing the zucchini boats in the refrigerator can last 3 to 4 days. Use airtight containers or plastic bags.
On the other hand, freezing the zucchini boats, might not be a good idea. When frozen and reheated, it becomes mushy. However, if you can't prevent it, cooking these will take a little longer because they'll be cold. Simply keep an eye on them and test with a fork to see if they've softened.
Recipe Tips for Tex-Mex Zucchini Boats
Create score lines. Before scooping the meat, it is a good idea to score them first. It gives a beautiful path that makes scooping out simpler.
Don’t scoop too much. I like to leave a little meat on the zucchini to prevent it from becoming too thin and unable to hold the filling.
Use a melon baller or measuring spoon. To scoop out the inside of the zucchini, use a tiny measuring spoon or melon baller. Initially, the first couple of scoops will require some force, so be cautious not to press too hard or the zucchini will crack. Eventually, you will be able to scoop straight along your score lines and make it easy to create that hollow.
Lay them flat. To make the zucchini flat, cut a tiny slice from the bottom. It doesn't have to be perfect as long as the filling can be placed comfortably.

Toppings and Add-ons
Others prefer this dish with melted cheese on top. You may use vegan cheese made from chickpea, cashew, potato, or soy.
Black beans - The beans are combined in the filling. You have to be sure to drain and rinse these first to get rid of extra sodium.
Sour cream is another option for a great way to finish your zucchini boats. A lot of vegan sour creams are made from cashews which you can use for this recipe.
What to do with extra zucchinis?

Ingredients Units USM2 Medium-sized zucchini, halved lengthwise
1 tablespoon of oil
1/2 of a yellow or red onion, diced
3 garlic cloves, minced
1/2 of a (16 ounce) package of extra firm tofu, drained and pressed
1 cup of corn kernels (canned, frozen or fresh)
3 tablespoons of taco seasoning
Salt, to taste
Salsa, for garnish
Cilantro, for garnish (optional)
Instructions Scoop out the middle innards of the zucchini, dice them up, and set them aside. In a large pan over medium-high heat, heat the oil. Add the onion and garlic and saute for about 1 minute. Add the diced zucchini and let it cook for another minute.Using your fingers, crumble the tofu into the pan. Add the corn, taco seasoning, and salt; cook for 3 to 4 minutes until the vegetables are tender.Preheat the oven to 425 degrees F. Place the zucchini halves in a 9×13 inch pan. Fill the hollowed zucchini halves with tofu mixture, cover with tin foil and bake for 25 minutes. Remove the foil and bake for another 10 minutes.Serve warm with salsa and cilantro (if using) on top. The Best Raised Garden Bed: Why I Chose Vego Garden

In the beginning, I started out using the raised beds that came with our backyard. My husband and I ended up taking those out, though, to create a more useful space for growing different types of plants. I wanted to find new beds that would be the right fit for the eco-friendly garden I wanted to create. After doing research, I confidently chose Vego Garden raised beds. Difference between In-Ground and Raised Garden Beds
First, what is the difference between raised (or elevated) beds and in-ground garden beds? Raised beds are usually at least a foot high and in the shape of a rectangle or square. You can choose elevated beds from Vego Garden like I did or build your own. In-ground beds are created by planting directly into the ground. A lot of people choose the raised version for their home garden.
Benefits of Raised Garden Beds
Raised garden beds have a lot of advantages. Because you bring in new soil and fertilizer to fill them, it's much easier to give veggies, fruits, and herbs the nutrients they need. You can also control how much water you give them. If you use in-ground beds, water can drain off, which makes it tough to give your plants the right amount of hydration.

Raised garden beds also give plant roots some breathing room and better drainage space for the soil. Even weeds are less likely to grow over time in raised garden beds. They also look great in your yard. I think they're the way to go!
Why I Chose Vego Garden

Vego Garden uses eco-friendly materials made out of metal. Redwood is a popular material for garden beds, but no trees are cut down to create Vego Garden beds. My husband and I didn't want to use beds made out of redwood. I grew up in Northern California, and seeing ancient redwoods in all their beauty is magical. Their materials also don't rust or leach chemicals into the soil, which is important. They use thick stainless steel bracing rods that are super strong, so the beds are well-protected. The steel they use is also 100% recyclable and is made using a "green process." I love that they've put a lot of thought into their materials.
Vego Garden Beds Are Long-Lasting
I also chose Vego Garden beds because they last over 20 years. It's a relief to know they won't soften or rot over time like some wood beds do. The beds are made from Aluzinc coated steel. Aluzinc (a mix of aluminum, zinc, and silicon) is a recyclable coating. It's strong and much more resistant to breaking down than beds made out of plastic or wood. Plus, Aluzinc lasts more than two decades in water, so it should last even longer in my home garden.
They Beat the Heat
Another reason I went with the Vego Garden beds is because they reflect heat. Since my husband and I live in California, our summers are hot. Temperatures can reach 110 degrees (sometimes higher!). I don't want all of my hard work to go to waste, so it's important that I protect my plants from the high temperatures. Nobody wants a garden full of fried roots.
