The Physical & Energetic Gifts: Roasted Baby Carrots with Carrot Top Chimichurri
Roasted Baby Carrots with Carrot Top Chimichurri

1 bunch baby carrots with tops intact
½ C good quality olive oil
¼ C white vinegar
1 raw garlic clove
3 green onions (whites only)
2 tsp bruised dried oregano
1/3 tsp black pepper
½ tsp salt
1 pinch crushed red pepper flakes
Prepare chimichurri sauce first allowing the flavors to meld as the carrots roast
Chimichurri Sauce

Remove fibrous bits from the carrot tops, wash and squeeze out excessive moister, roughly cut and add to food processer with the garlic, green onion, and chop until very fine. Place carrot top mixture in a bowl; add olive oil, white vinegar, salt, pepper, oregano and red pepper flakes. Allow to sit at least 30 minutes.
Basic Roasted Carrots

Leave peel on carrots and give them a sound scrubbing - I like to leave the slender filament on the tip - it crisps up wonderfully and adds a nice bite. Have a glass roasting pan on the ready, using your hands thoroughly rub olive oil all over your carrots and place in pan and lightly salt and pepper. Roast 20 – 30 minutes at 425 or until tender.
To serve drizzle chimichurri sauce on top of the carrots, with a small dish of sauce on the side for self-spooning!

Probiotic Cucumber and Avocado Soup
The holidays bring so much cheer and wonderful food but not surprisingly also meals fit for a feast! Many of us indulge in foods we would not normally eat, and as much as our taste buds celebrate, often our digestive tract asks for a little extra support. I love serving this soup as a light lunch during this season for this reason.
As always, I enjoy looking at the energetic and physical properties of food and the synergy that offers:
On the energetic level - Cucumber offers, broad-spectrum relief for easing difficult emotional states (this plant can be understood as natures rescue remedy) renews and refreshes the physical body i.e. for exhaustion, illness, shock that drains prana, etcetera.
On the physical level - Cucumber health benefits includes, reducing the risk of cardiovascular disease, healthy weight management, detoxifying the body, alkalizing the blood, combating bad breath, supporting digestion, and controlling blood sugar level.

On the energetic level – Avocado harmonizes the body and mind by dissolving emotional tension and the negative influence of past pain that causes one to turn inward and harden against love offered. Offers shelter when feeling overwhelmed with emotion. Avocado allows the individual to become more vulnerable to others without fear and facilitates intimacy and healing through touch.
On the physical level – Avocado contain a wide variety of nutrients, including 20 different vitamins and minerals, reduces inflammation, has high amounts of soluble fiber that is known for feeding the friendly gut bacteria in your intestine, which are very important for optimal body function, supports reduced risk of cataracts and macular degeneration.

On the energetic level – Yogurt facilitates a clear, healthy mind.
On the physical level – Yogurt offers fermentation flora that inhabits the second half of the small intestine, ascending colon, and the traverse colon. Lactobacilli acidophilus is one of the most widely present germs of this flora. The role played by these germs is to facilitate the fermentation process, this includes breaking down fibrous material that makes up fruit and vegetables and releasing their nutrients, which cannot be digested solely by digestive system of human beings.
Remember when serving this soup, you are gifting not only the physical properties, but the subtle ones as well.
Recipe

1 English cucumber
½ Ripe large avocado
2 Green onions
½ C full fat plain yogurt
½ C Buttermilk
1 tsp Salt
½ tsp Pepper
Dash or two of cayenne pepper
Dice cucumber, avocado, slice all of the white part of the green onions and 1/3 of the green leaves, place in blender (reserve the rest of the greens for a garnish). Add the yogurt, buttermilk and spices to blender and blend until smooth. Adjust seasoning to taste.
Offer thinly sliced radishes, reserved green onion leaves mixed with chopped herbs of choice, and feta cheese, to sprinkle on top of soup. I also provide Kilauena Onyx and Molokai Red Sea Salt at the table.

Palden Lhamo Vibrational Essence

In the Buddhist pantheon, Palden Lhamo is a wrathful deity, a fierce and powerful Dark Goddess, one of the Eight Guardians of the Law (Dharma), and the only female among them. A wrathful deity in the Buddhist tradition is typically a manifestation of its peaceful counterpart, and as such, Palden Lhamo is the wrathful counterpart to the peaceful White Tara.
In The Psychology of Buddhist Tantra, Rob Preece describes Palden Lhamo as such:
She is a ferocious-looking crone, a wild and terrible demoness, riding a mule across an ocean of blood. She is the queen of witches and spirits, bringing them under her power. She scatters vile diseases on those who disregard her, or who act in ways that are malignant to the Dharma. She bestows psychic powers such as clairvoyance and a knowledge of healing. …Palden Lhamo has a lunar link, with her hair adorned by a moon, as though she is…the dark moon. This dark side of the feminine can clearly be seen as a Shadow to the light lunar forms, which White Tara most closely embodies. (2006, p. 191)
Preece goes on to say:
Thus, in all deities, a dual nature is evident; light and dark, upper world and underworld, peaceful and wrathful. The forces of the Shadow are not inherently demonic and terrible. Light and dark, good and evil, creation and destruction are relative dualities that have no ultimate true nature. They are not absolutes. It is our ignorance and lack of insight that seeks out one and fears the other.
The forces of the Shadow become demonic because they are not given appropriate recognition, conscious understanding, or respect. …In the East, the dark side of reality, with its potency, wildness, and destructiveness, is given the due respect it requires and placed in the temple as the wrathful deity, the bringer of wisdom and light. (2006, pp. 191-2)
Palden Lhamo embodies the very important flip side of White Tara’s energy. Palden Lhamo is the crone, the dark goddess, and the wildness within. She is depicted riding her mule across a sea of menstrual blood, carrying bags of disease tied to her saddle. This is significant because, if unacknowledged, the dark side of our nature fosters neuroses and disease.
She also tethers her Mo dice, a Tibetan divination system that speaks to understanding emptiness and that each moment is connected to the moment before. We are always empowered to change our lives and destinies.

Curious Why Kale is the Sweetheart of the Yoga, Meditation & Ancient Philosophy Set?
Kale is one of the most nutritionally important vegetables in the world offering vitamins A, K, C, B1, B2, B3, B6 and possessing one of the highest levels of lutein of all vegetables. Lutein is invaluable when it comes to eye health as it guards against cataracts and macular degeneration. Braised Kale and White Beans

4 tbsp olive oil, plus more for drizzling
4 cloves of garlic sliced thinly
2 pinches of red pepper flakes
1 bunch kale
1 cup canned white beans drained and rinsed
1 lemon cut into wedges
Prepare your kale by ripping the leaves from the stalk, break into bite size pieces, then snap the stalk into1 inch pieces.
In a large fry pan over medium heat, warm 2 tbsp of olive oil, kale stalks, pinch of red pepper and squeeze of lemon and sauté 3-5 minutes. Add remaining items and a squeeze of lemon, ½ water or broth, bring to a simmer, cover and braise until kale is tender and the liquid is thickened about 5 - 10 minutes. Season with salt and pepper to taste, drizzle with olive oil, serve with the remaining lemon wedges.

Safflower Oil in Cooking

There are two very different Safflower oils (although both are light with a mild flavor). The monounsaturated oil has a very high smoke point—which makes it ideal for high-heat cooking.
The second type of safflower oil is polyunsaturated. This type, should not be heated, making it a great choice for salad dressings and sauces.
Ayurveda deems this oil beneficial for both the Vata and Pitta dosha type. True to the Sanskrit term sneha which means both “fat” and “lavish love”, this oil from a Vedic perspective provides the gifts of being: Warming, lubricating, fortifies the whole system, builds tissues, soothe bodily membranes, and activates the digestive fires.
Savory Carrot and Oat Puree
3 carrots chopped into large chunks
¼ c rolled oats
½ c water
2 garlic cloves
2 tbs safflower oil
1 tbs lemon juice
½ tsp salt
¼ black pepper
In a small saucepan cook rolled oats in water over medium heat until sticky. Blanch carrots chunks and drain. Add the carrots, garlic, safflower oil, lemon juice, cooked oats, salt and pepper with a splash of water to a blender and combine until smooth.
Of course these are only guide lines. Adjust garlic, lemon, salt and pepper to taste.
This makes for a delightful side dish that supports not only the subtle gifts listed above but all the health giving properties this wonderful oil offers.

The Miracle of Garlic
Garlic is almost transcendent defying being categorized. Is it an herb? A spice? A vegetable? It is even more romantic - it is a member of the lily family - Allium botanical group. This plant has been found in Pharaoh’s Tutu Kaman tomb, was placed by the ancient Greeks on the piles of stones at cross-roads, as a supper for Hecate -- a goddess of the wilderness and childbirth, or for protection from demons. Garlic was believed to confuse the evil spirits and cause them to lose their way. And has played a role in mythology of keeping users safe from malevolent forces even up to keeping vampires and werewolves at bay.

This is an interesting segue into looking at the vibrational signature of garlic:

Garlic contains Vitamins A and C, fiber and various amino acids.
According to Ayurveda the energy of this plant is spicy/hot and affects the lungs, kidney, spleen, stomach and colon as a tonic (helps to restore, tone and invigorate systems in the body or to promote general health and well-being). Maybe used for balancing Vata and Kapha doshas.
Remember incorporating garlic into your diet or using as a vibrational essence brings all gifts listed into your life on both a physical and energetic level.
Whole Roasted Garlic

1 – 3 heads of garlic. Peel (most of) the paper off the garlic, the loose, papery, outer layers around the head of garlic. Leave the head itself intact with all the cloves connected.
Trim about 1/4 inch off the top of the head of garlic to expose the tops of the garlic cloves.
Preheat oven to 325 and place garlic in a small baking dish, drizzle exposed tops with 1 to 2 teaspoon of olive (you may sprinkle with herbs like rosemary or thyme) for additional depth of flavor. Cover with tinfoil and bake for 35 – 40 minutes. Remove from the oven, when cool enough to handle, squeeze the garlic from their coverings, crush cloves to desired texture add olive oil to taste. A pinch or two of sea salt is optional. Try serving as a spread for rustic bread.

The difference between herbs and spices is where they are obtained from a plant. Herbs come from the leafy and green part of the plant. Spices are parts of the plant other than the leafy bit such as the root, stem, bulb, bark or seeds.
