The Energetic & Physical Gifts of Hedgehog Mushrooms

Hydnum umbilicatum commonly known as the Hedgehog or Sweet Tooth mushroom, due to not having gills, but instead delightfully small ‘toothlike’ projections, that looks like hedgehog quills!

 These toothsome darlings can be found into January and have a rich nutty taste, with a pleasant peppery snap and are best eaten cooked.

Garlic Scented Sautéed Hedgehog Mushrooms

About 1 pound of hedgehog mushrooms. These tend to be small and do not need to be pared down, if there are any outliers, trim to match the others

2 garlic cloves minced

2 sprigs fresh thyme

2 tablespoons dry white wine

1 tablespoon of olive oil. Add more if needed

2 tablespoons of butter (or oil of choice)

Fleur de Sel finishing salt - this salt is perfect for subtle foods. Blending gently without overwhelming, adding a mild, delicate crunch

Fresh ground pepper

Instructions

Clean mushrooms with a mushroom brush and trim ends (avoid rinsing in water). Heat butter and oil in a large sauté pan on medium high heat; add mushrooms, stirring frequently until the mushrooms release their liquid. As they start to brown add garlic and thyme, cooking for 3 – 5 minutes. Add the dry white wine and continue to cook, scraping up any brown bits, until the liquid has evaporated. Remove from heat add pepper and salt to taste. If you kept your thyme on the stalk, remove now.
