Paladin of Souls by Lois McMaster Bujold. It's the second book set in that world, the first book is excellent as well and has some great female characters but Paladin has a female main and can stand alone, though reading both would be better and more enjoyable.Wheel of the Infinite and
The Wizard Hunters by Martha Wells. Wells writes some of my favorite fantasy books partly because her characters especially the women are so interesting and complex.

Almost anything by Tamora Pierce
The Fifth Season
The Bird and the Sword
The Mistborn Trilogy Boxed Set by Brandon Sanderson.Anything by Tamora Pierce if you don't mind YA.
Un Lun Dun by China Miéville is also YA.
Clockwork Boys and it's sequel have a really interesting fantasy world.Swordheart is set in the same world but a tighter focus on the characters, less epic.
All by T. Kingfisher (aka Ursula Vernon)
The female characters in all her other books are great as well.
I found the female MC in The Bird and the Sword annoyingly weak.I'll throw in The Girl Who Drank the Moon for several strong female characters including the lead.
Shades of Magic trilogy by V E Schwab. First one is A Darker Shade of MagicEon: Dragoneye Reborn is also very good.
I see a few suggestions of Patricia C. Wrede's books above, but I'll also add a few more of hers: The Raven Ring. And also Mairelon the Magician and its sequel, Magician's Ward.

The Bone Doll Twin, Lyn Flewelling
Beauutiful fairy lore in The Cruel Prince and the female MC is extremely strong and resourceful despite not having any advantages.

I saw a couple of suggestions for Sarah J Maas‘s Throne of Glass, but A Court of Thorns and Roses was an amazing series as well by her. Amazing world-building and unique characters.I also second the recommendation for Forbidden Forest.
