I'm going to second Day of the Triffids. That is one seriously scary book. Mainly because it's just so plausible.

Not apocalyptic, but if you enjoy stories about people having to cope without the trappings of civilization, The Swiss Family Robinson is a real classic. A family is shipwrecked on an uninhabited island for years and has to make, build, hunt or grow everything they need.

Magic Bites is kind of what you are looking for. It's in an alternate Earth where about 30 or 40 years ago Magic came roaring back. Planes crashed, cars stopped working, electricity stopped, anything made with technology started to collapse. It's a "slow motion" apocalype in that science and magic are still fighting it out, although everyone can see that science is losing the battle. This is an interesting series, and the world building is great. It also talks about how hard life is now and how many people died in the immedient aftermath of the first Flare. The MC in this series is a mercenary named Kate Daniels. There is some romance, but it's very slow growing (over the course of several books). I thought I'd throw it into the mix just because of the world building.

The S.M. Stirling 'Dies the Fire' trilogy might meet your interests. if it is okay that when the laws of physics change people need to pretty much go back to the middle ages technology.
John Ringo's Council Wars series starting with There Will be Dragons. Wikipedia says it has high fantasy, but the 'elves', 'orcs', 'dragons' etc were all genetically modified creations/adaptations.

I don't mind if it has romance in it or not but I would like the story line to basically be about something happening to earth and people having to live without electric/gas low food supplies etc, and the struggle for survival.
Does anyone have any suggestions?
