For the more traditional YA fantasy you can't really go wrong with Tamora Pierce's work, especially the Protector of the Small trilogy.

The two fantasy series in particular seem like they'd be exactly your style.
Fantasy



Farseer Trilogy, Liveship Traders Trilogy, Tawny Man Trilogy, Rain Wild Chronicles, The Fitz and the Fool Trilogy (not out yet).
This whole series should go to the top of your list. The first and third trilogies follow the same main character, Fitz, all of which are great. The second trilogy is a bit more involved and complex - I actually think it's the best of the lot, but it doesn't appeal to everyone as much. The fourth series (which contains 4 books) isn't quite as good, but is still pretty entertaining. The first book in a new trilogy about the main characters from the first and third trilogies is coming out this year. (That makes 12 books currently available, soon to be 15)
I don't think there have ever been fantasy characters that I've heard of who are as loved as Fitz and the Fool from these books. Everyone who enjoyed the books says they feel like close friends that they miss terribly. I feel the same way. The length of the series might seem pretty daunting, but at the very least it's worth checking out the first book to get a feel for them.



Mistborn Series
This trilogy is utterly brilliant, in some ways is even better than the Robin Hobb series (above), but I'd place them second simply because Fitz means more than the characters in these books. They're definitely worth a read though, and they sound like they'd appeal to you - it's a dystopian fantasy world with one of the best magic systems around. The fourth book isn't up to the same standard, but is still pretty entertaining.
Sci-Fi

Dune
By a mile the best sci-fi book I've read. I didn't really enjoy the sequels, but the first book is incredible. For some reason a lot of people seem reluctant to read it, but the vast majority of people who try it love it.



His Dark Materials
The first book in this trilogy is called the Golden Compass in America because the publishing company is utterly stupid. There was also a film a few years back, which mangled the plot and flopped a bit - personally I was unimpressed with it. The books, on the other hand, are a great series taking place across several different parallel universes - the first book reads more like fantasy because of that. They're a really great series, but these days I'd put Mistborn and the Robin Hobb books ahead of this.



I'm no Rowling, but I write YA Fantasy/twisted fairy tale retellings. Check out The Subtle Beauty and Moonlight
I like to think that my writing is clean. No swearing and everyone keeps their clothes on :D
