A hard question, given the number of books I've read. My choice today would be from Terry Pratchett's Disc World series of books:
Commander Samuel Vimes, and his wife, the Lady Sybil Ramkin.
Vimes has appeared as a major character in 12 books, and had a walk-on part in another 5, while Sybil appears in 8 books. They are the perfect odd couple, madly in love, and completely opposite. Vimes, the Commander of the city watch, is as close as you can get to a thug at times, she is a fearless upper crust. Her personal motto is: "She won't take no for an answer."
Out of my own books, I'd pick teenagers Harow and Desire-Rose from the Queen's Pawn series. Complete opposites and I enjoyed tormenting them.
