There are a couple of things I do ... one is that I deliberately don't try to figure out the truly important plot twists. As I write, and my subconscious gets submerged in the story, it figures those out for me ... so I'm surprised and I hope that readers are equally shocked.
The second thing is that I reject the first few ideas that come to mind and try to go deeper. Settling for the obvious doesn't satisfy anyone. Normally that lets me find something that is more organic to the story and character.
