When Harry and Hermione go back in time, Hermione tells harry that they can't do anything to change the past. However they save both Buckbeak and Black from death, how is that not changing the past?. lets say black's death had not occurred yet, so that was not changing the past, but Buckbeak was definitely killed in their past and saving him had to have changed their future.

At the moment of Buckbeak "kill", Harry and Hermione are twice at the place. The first time they think there hearing the ax, but actually its slammed in a pumping as they find out the second time.
It's a bit hard to imagine, but i think of it as sort of an continues loop. There always two Harry's and two Hermione's present, so Buckbeak never got killed because they already rescued him.

Buckbeak was never killed. When Harry and Hermione time travel, it mentions that Buckbeak's executioner slammed the axe in anger that he escaped.
You can't change the past, even in time travel. In the present, Harry sees himself casting a Patronus. Time travel is very complicated.
