Well I think I would be a little spooked if I were him..anyway it's explained in the epilogue.. Cable knew Mercer was somehow involved from the beginning and everything was already planned before he showed her the books, it was just the "trigger" for him to move..

"when Cable shows Mercer the stolen books she doesn't act in any way that should "spook" him into immediately moving the books from the vault" = I felt exactly the opposite way, and came here to see if anyone else noticed the VERY suspicious/odd way that Mercer over-reacted to seeing the manuscripts....I'm wondering WHY did she get all hsyterical like that? and then of COURSE Bruce would be alarmed by her reaction and immediately move the manuscript
