How do beginner writers protect their work that's still in progress from others using the material?

Charlaine Harris If your work is still in progress, no one should see it, unless you belong to a writers' group. Everyone in the group should be at your level of expertise, and you should be able to trust other beginning writers not to plagiarize your material. If you don't trust them that much, find another group to join.
