Do you need to read the series in order? I happen to have a copy of the Chosen Prey but I suppose it's the 12th book in line; if I decide to skip out the rest of the novels prior to it, will it still make sense? Or will I be missing out on some vital information?

Terry Derossitt i started with one of his newer books, didn't even realize it was part of a series until i saw an older book. I liked it so much i decided to start from the beginning and i have not been disappointed. To answer your question, no, you do not, but you will want to go back eventually and get the background on the characters.
Bruna Cirelli I think you can definitely listen to them out of order, but to get the most out of it, you should follow the series from the start and work it down.
Jack Heath Early on in my reading Sandford, I picked up whatever was at hand. Davenport, Flowers, didn't matter. Enjoyed them. Then a few years ago, I began to ask, "How did [whoever] get to where we see him today in this novel?" I started to read each series from the beginning - and enjoyed them even more. Now I read all series in publishing order if at all possible. After-all the author writes them in that order.
Eric There may be a couple times when I've wondered about plot and characters from a chronological standpoint. However, I've seldom seen any real drawbacks to picking up whatever Sandford title is available for checkout. I say each novel stands well on its own.

I have found myself going back to the beginning with several writers.
You may want to look at the series order and go back to previous books if you like being "up to date" on things. '-)
Eddie Like Terry I started with the newer ones and jumped all over the place in the series. Lucas' life does of a flow and change and I can see the benefit of reading in order. The main thing Sandford always get stronger with each book.
Daniel Karopian When you read allways put yourself as Lucas, and you always get so involved in his work, that he becomes a monster inside without even knowing momentarely..
Jessica I skip around in the series and it hasn't been an issue
