Thank you for adding update on cooking Shashlik. I love cooking on wood coals and apple wood are best for flavor, adding wine will make this perfect.

I do believe that we are ALL creatures of the balance we choose.
Balance being the Positive with Negative and Good with Bad that inflicts us every day. It is the Dragon coming our way hungry.
Every single day it is what we CHOOSE to be and let out of us, or portray that creates enough of one to overwhelm the other.
Divorces, transfers from countries to another, marriages born, businesses, financial times, sickness, as well as peace or war are the Dragon he speaks of -- they are negative events of a large scale that are reactive in nature. Smaller negative events occur in our life also and we must react to them also.
It is up to us to work "every single day" to be the most positive and best person we can. We can't do it every day and perhaps on those days we can't should get away from people. Maybe run into the woods or the mountains, or travel alone to the sea on those bad days where so much of life is against us we need to just get away from life, and the Dragon has taken so many bites out of us that we don't want anyone to see us, as it could bring the Dragon to them also..
Yet, the good thing is, that no matter what mistakes we made yesterday, and if yesterday the "Dragon ate us" alive -- that every single day we get to start over again. We get a fresh start to say that today we "eat the Dragon."
We eat the Dragon by being positive and good people.

Additional advice on how to grill meat, for the shashlik recipe (just added this block to the book):
"Start a fire in an outdoor fireplace. It’s best if you use dry wood from fruit trees, and avoid using the wood from walnut trees because its fumes contain iodine, which may affect the taste of the dish. Allow the wood to slowly burn down to coals. When it starts to smolder instead of burn, crush the larger coals into smaller chunks using a small spade, and spread the coals evenly across the surface above which you will place the skewers. Now it’s time to grill.
Allow the skewers to get brown and crispy on one side, then turn to another side; turn them several times while grilling, until they are cooked evenly.

NOTE 1:
While grilling, feel free to sprinkle the skewers with dry wine (no matter red or white) from time to time, to make it taste even more delicious. Another option while grilling is to sprinkle your shashlik with the left-over marinade liquid and wine mixed together.
If you don’t like to use alcohol for cooking, just use the marinade for sprinkling the skewers.
NOTE 2:
If, during the grilling process, wooden coals start flaring up again, it’s necessary to sprinkle the flames a little bit with water to prevent the dish from getting burned. (But just spray a little bit, as otherwise you may douse the smoldering coals too!)
If you are sprinkling marinade liquid while grilling the shashlik, you can use that to quench any flare ups by pouring a small amount of it over the dish down to the fire; it’s a very convenient way to keep the situation under control.
NOTE 3:
Keep your eye on the dish continuously while grilling, so you can turn each skewer to a different side at the right time. Otherwise you risk burning it and having mostly coals instead of a great, delicious meal!"
