Vegan Chickpea Faux Tuna Salad
Why faux tuna salad is so much happier and tastier than tuna salad:
1. Because tuna, a beautiful sea creature, didn't have to die (tuna is a large predator fish and many are endangered, eating them is the equivalent of killing a big cat like a Bengal tiger and eating it)
2. There is no revolting fishy smell, because there's no fish!
3. No fish means no mercury.
Ingredients:
1 can of chickpeas/garbanzo beans, drained
2 tablespoons sesame tahini
1/4 cup of white onion, minced
1-2 celery ribs, roughly chopped
Juice of 1/2 a lemon
2 tablespoons vegan mayonnaise such as Follow Your Heart Vegenaise
Directions:
Combine all ingredients in a blender or food processor and process until smooth. The end product will be very similar to hummus.

Bric a brac from the summer festival
Every year we go to one of the many summer festivals. We avoid Naperville's Rib fest because we're vegans but the other ones usually have fun things for us.
We usually pick up one or two souvenirs from our annual festival trip. This year, Rod got me a sensitive plant!!

I keep the sensitive plant at my studio because Kiki would eat it, sensitive or not.
We won this monkey playing Skeeball.
We also got this kitty figurine.

Kiki investigates mousie

After a Flehman response she loses interest in mousie

Our collection from previous year's festivals.

My Vegan Food Diary
I've never been one to keep a food diary, however, I figured people interested in vegan things might want to know.
Yesterday:
2 lemon snaps & iced mint coffee with soymilk
Lunch: oven roasted potatoes & seitan loaf
5 red licorice sticks
mint tea no sugar
iced barley green tea no sugar
Dinner: giant salad with balsamic-miso dressing (I got some nice lettuce from the farmer's market this week)
more seitan loaf
organic corn chips
late supper: peanut rice noodles with tofu and vegetables .
plus a Tofutti cutie ice cream sandwich.
