What’s Cooking Wednesday — Chicken with Asparagus and Mushrooms

Chicken with Asparagus & Mushrooms


Chicken with Asparagus and Mushrooms


4 servings


Ingredients:

4 med skinless boneless chicken breast halves

¼ t pepper

¾ t salt

3 T olive oil


Vegetables1 med onion, chopped

¼ lb shiitake mushrooms, thinly sliced and stems discarded

¼ lb white mushrooms, thinly sliced

1 ½ lb asparagus, trimmed & cut into 2” pieces

½ c half & half (I skipped this and used chicken broth in place of the water called for in the instructions)



Instructions:

Sprinkle chicken with pepper and ¼ t salt.

In nonstick 12-inch skillet, heat 1 t oliv...
