What’s Cooking Wednesday — Chicken with Asparagus and Mushrooms
Chicken with Asparagus & Mushrooms
4 servings
Ingredients:
4 med skinless boneless chicken breast halves
¼ t pepper
¾ t salt
3 T olive oil
1 med onion, chopped
¼ lb shiitake mushrooms, thinly sliced and stems discarded
¼ lb white mushrooms, thinly sliced
1 ½ lb asparagus, trimmed & cut into 2” pieces
½ c half & half (I skipped this and used chicken broth in place of the water called for in the instructions)
Instructions:
Sprinkle chicken with pepper and ¼ t salt.

Since I posted yesterday, I’m taking the day off (more or less). Okay, I’m not really fishing–all our “lakes” are frozen, and I’m not into ice fishing. And I’m not even lazing around.
