How to Plan A Meal with Multiple Courses

How to Plan a MealwithMultiple Courses


Part of the fun for guests when they learn they are sitting down for a three, four, five or especially an eight course meal is the curiosity of what each course will be. After all, as was mentioned last week regarding the idea of eating in courses, when we do, our attention is given solely and completely to the dish in front of us. And while as a hostess/host, knowing your guests are looking forward to what you have prepared is a wonderful compliment; however, the question initially may arise, how to I select the courses for my meal?


That is exactly what we’re going to talk about today. Below you will discover 7 things to consider to approach, plan and successfully implement a multi-course meal.


1. Timing

Hands down, this will be your saving grace once you’ve taken the time at least the day ahead to plan out how you will get everything cooked, presented and still enjoy your guests. After all, you don’t want to be stuck in the kitchen the majority of the time; however, there will be a course or two that will need some preparing right before it is served.


Depending upon how many courses you are serving, make sure at least half can be prepared ahead of time completely. Often the dessert and sides can be done ahead, and even part of other courses. For example, the mise en place for your appetizers or your main entree can often be prepared and placed in the refrigerator which enables you to simply toss it together and place in the oven or on the stove.


Then, write out a time schedule for the day of the dinner (if it is a large gathering). This way, you will know exactly what you have to do when, and not have to stress that you aren’t doing something when you find yourself with some free time (the gift of planning!).


2. Available Dishes, Glassware & Silverware

Before you hone in on the menu, make sure you have enough dishes, glassware and silverware. Everyone’s courses and the order served will vary, so if you are having appetizers you may not need a dish for everyone, but rather cocktail napkins. However, you cannot be in the kitchen cleaning dishes. You must enjoy the gathering. So perhaps you can only have a three course meal. That is perfectly fine. 3. Temperature

Depending upon what time of year you are sitting down to eat, consider which foods/dishes will warm up your guests in the winter and in the summer, provide great refreshment. However, alternate the temperature as well. A cool, crisp salad with a lovely vinaigrette is perfect to pair with a sizzling, hot steak. The key is to strike a balance.


4. Flavors

Once you have planned your dream menu, consider how guests will feel after the last course has been enjoyed. You want them to walk out the door satisfied, not miserable. Give them flavor, not excess. How? Alternate between heavy and light with each course as well as simple and complex courses. Demonstrate a range from one course to the next to provide ease and then intrigue, refreshment and then decadence.


5. Textures

As you become more comfortable in the kitchen, you will learn how to make beautifully paired sauces for your dishes. Adding a lemon cream sauce to poached halibut is a beautiful balance of textures and flavors. What about a simple parmesan chicken with fresh slices of melted mozzarella and homemade marinara sauce? The crunch from the panko and parmesan breading, the creamy mozzarella and the acidic balance with the tomato sauce provide a wonderful mix of textures.


6. Palate Cleansers

According to Rebecca Franklin, AboutFood.com‘s resident French food expert, palate cleansers are not only used to ensure you can fully appreciate the next course, but also to aid in digestion, avoid heartburn and stimulate one’s appetite. The traditional palate cleansers served in between courses can be mint, apple, lemon or lime sorbet, and more modern options include sparkling water (add a touch of citrus if you want), lightly brewed green, black, or mint tea, celery sticks, fresh tart apples, a sprig of parsley, or flat water with a twist of citrus.


Choose one or two and keep them readily available so guests can grab at anytime, or make as part of your courses (sorbet anyone?). A simple picture of lemon water is a great way to include a palate cleanser at the table without taking up much space.


7. Become a story teller

Once you have mastered the above approaches to planning a multi-course meal, consider the story you want to tell. Why the first course followed by the second? It might be a story simply tied to the ingredients and flavors you have chosen or it could be a story that involves memories, your recent travel adventures, anything that adds more intrigue, interest and a touch of mystery as diners eagerly wait to see what the next course will be.


Choosing to incorporate courses into your weekly, or even daily meals is a wonderful way to enhance the quality of your everyday routine with those you love. With each time you choose this approach, it will become easier and easier to determine which dish pairs beautifully with the next and which items are easy to prepare so you can enjoy your guests.


As far as the order of dishes, don’t worry about doing it one particular way. Yes, dessert should come toward the end, and yes, the fish or meat dish should be after the appetizer, but so long as you are keeping in mind the balance,  you will be just fine. Your guests want to eat well and enjoy your company, so immerse yourself in the preparation, having fun in the kitchen, and then indulge with your guests in the food that you’ve prepared. Style Inspiration: Monochromatic Mastery

Over the weekend I had an hours drive home, so I tuned in to Garance Doré’s podcast, Pardon my French. I was especially looking forward to her most recent episode because she was interviewing the successful beauty business woman Linda Rodin, who has lived it seems many amazing lives: model, stylist, a top photographer’s assistant, but most importantly, a life on her own terms. It is a fantastic episode about independence, feeling comfortable being yourself and living by rules that work for you. I highly recommend you tune it.


Listening to Linda Rodin speak, you would have no idea she was 66. Her smooth voice is vibrant, curious and confident, and it shows in what she wears. Inspired by how a simple single palette can be quite powerful if combined well with other materials and fabrics, I found the image of Linda Rodin above from this interview in which style and simplicity is discussed to spur my investigation to find other monochromatic outfits that work wonderfully. Enjoy today’s Style Inspiration, and remember to keep it simple.

16 Benefits of Self-Reliance

As the owner of a curious mind, there is nothing I enjoy more than conversations with other individuals about ideas, concepts and the civilized banter that from time to time manifests about how or why certain things occur or come to be. And so recently when the topic of luck was brought up amongst friends, I listened intently. Questions began bouncing around the table we were all seated both verbally and mentally: “Anyone who has any amount of success in their life cannot underestimate the amount of luck that helped them attain their goal, no?” and “Why is it that the unlucky blame outside forces and the contemplative ‘lucky’ praise outside sources as well? Isn’t the former habit of blame and the latter habit of humility a signifier of why these two groups are distinctly different in the lives they lead?” and “Isn’t luck the amalgamation of preparation meeting opportunity?”


But I couldn’t help returning to the above English proverb.


Yes, to whom we are born and into what circumstances is entirely luck or misfortune, but just as Gabrielle Bonheur Chanel was born into quite undesirable conditions, it was her determination, as she became Coco Chanel, and self-reliance that brought the life that sells books, perfume, clothing and the French lifestyle of simplicity and style to fruition.


Nearly a century before Chanel opened her first clothing boutique in Deauville, France, and began selling what has remained a classic into the 21st century, the marinière (the sailor blouse), American transcendentalist Ralph Waldo Emerson wrote his 1841 essay “Self-Reliance“. And it was the timing of the aforementioned conversation and listening to a episode of the Inspirational Living podcast, that I was reminded of how much strength, ability and thereby control we have over the direction of our lives.


Self-reliance is rather self-explanatory, but to reiterate it is reliance on one’s own powers and resources rather than those of others. Now, Emerson is not suggesting, although is protege Henry David Thoreau did take this idea a step-further when he made his home in the woods near Walden Pond for two years, that we seclude ourselves from the world. Instead, it is to find the strength to rely upon ourselves while existing and participating in the world in which we reside. “It is easy in the world to live after the world’s opinion; it is easy in solitude to live after our own; but the great man is he who in the midst of the crowd keeps with perfect sweetness the independence of solitude.” This is most certainly difficult, but the rewards for every individual who finds the courage and strength to be self-reliant are magnificent. And that is what we’re going to talk about today.


1.Discover the unique gifts that want to be realized





“A man should learn to detect and watch that gleam of light which flashes across his mind from within, more than the lustre of the firmament of bards and sages.”


As a child, we are not hesitant to walk toward what piques our interest. We are not yet swayed by what society applauds or disapproves of. But as we grow up and look to thrive in the world in which we exist, our inner voice becomes harder and harder to hear. However, that voice, your calling, your passions, these are exactly what you must trust, listen to and heed. Because believe it or not, no one else will ever offer the world what you can give it, and should you not tap into this ability, the world will be denied your uniqueness, never to be seen again.


“The power which resides in him is new in nature, and none but he knows what that is which he can do, nor does he know until he has tried.”





2. Become truly fulfilled and content





” . . . that though the wide universe is full of good, no kernel of nourishing corn can come to him but through his toil bestowed on that plot of ground which is given to him to till.”


True contentment will not be felt until you put forth the effort, put forth the time and persevere to understand who you are and what you can create and share with the world. Yes, it is easy to settle with what is given to us or what is just enough to get by, but you will not know the satisfaction of the fulfillment you could attain should you put forth the effort and ability that is within you.



3. Become empowered





“He who knows that power is inborn, that he is weak because he has looked for good out of him and elsewhere, and so perceiving, throws himself unhesitatingly on his thought, instantly rights himself, stands in the erect position, commands his limbs, works miracles; just as a man who stands on his feet is stronger than a man who stands on his head.”


The power to live well, to be truly content, resides entirely within you. The treasure hunt that is often pursued outside of ourselves assuming that we are lacking is actually a hunt we must pursue within ourselves. And the good news is we will not be going on a false pursuit. The treasure is waiting to be discovered, and in its proper time with the necessary effort, it will be revealed. Be patient, but persevere until you find it.







4. Reach your full potential





“A man is relieved and gay when he has put his heart into his work and done his best; but what he has said or done otherwise, shall give him no peace.”


The only thing each of us can do each and every day is our best. And it is only us that can know if we have or haven’t accomplished this feat. So long as you are doing your best with each day your are given, you will go to bed each night with contentment and inch that much closer to your full potential.



5. A refusal to conform mindlessly





“Society everywhere is in conspiracy against the manhood of every one of its members . . . The virtue in most request is conformity. Self-reliance is its aversion. [Society] loves not realities and creators, but names and customs.”


Emerson reminds us that society wants us to conform because it is comforting. Why? Because there are no unknowns, nothing that will occur outside of its expectation. Change, as we know, can be scary, but as we also know, it is inevitable. Where does change come from? Look back to last year, look back 10 years, look back to centuries in the past. It comes from someone, then many someones trying something new, exploring, asking questions and tapping into their full potential. It comes from individuals relying on themselves and not conforming.



6. Discover an inner peace, thereby, not needing outside approval





“My life is for itself and not for a spectacle. I much prefer that it should be of a lower strain, so it be genuine and equal, than that it should be glittering and unsteady.”


Should the authentic life path that you pursue bring with it fame and fortune, such an outcome is merely a byproduct. Because when you are listening to yourself, letting your unique talents soar, you aren’t looking to see if others applaud. Most likely, they won’t for a long time, if ever. But if they do, you won’t care, so long as you are truly pursuing your authentic path. And when you let go of what others think, you set yourself free.



7. A realization that disapproval of others is a reflection of their own unhappiness and has nothing to do with you





“For nonconformity the world whips you with its displeasure. And there- fore a man must know how to estimate a sour face. The by-standers look askance on him in the public street or in the friend’s parlour. If this aver- sation had its origin in contempt and resistance like his own, he might well go home with a sad countenance; but the sour faces of the multitude, like their sweet faces, have no deep cause, but are put on and off as the wind blows and a newspaper directs.”


As I mentioned above, most often, when we charter a course that is not similar to the norm, there will be much disapproval; but a self-reliant person understands that their disapproval is actually not a reflection on what the individual is doing, but rather an unrecognized awareness that they are not truly satisfied or content, or at the very least, aren’t invested as they are simply following external orders. This understanding makes it easy to keep striving down your unique path.











8. Develop strength





“It is easy in the world to live after the world’s opinion; it is easy in solitude to live after our own; but the great man is he who in the midst of the crowd keeps with perfect sweetness the independence of solitude.”


As I mentioned at the top of the post, Emerson is not suggesting we shut ourselves away from the world. After all, the world needs us for progress, for inspiration, for improvement. However, it is difficult to find the solitude amongst a society that relentlessly wants us to conform. The good news is, this difficulty becomes less intense as we continue to practice our self-reliance in the everyday. And before we know it, we have developed such a strength that it is an inspiration to others.





9. Cultivate a strong character





“Your genuine action will explain itself, and will explain your other genuine actions. Your conformity explains nothing. Act singly, and what you have already done singly will justify you now. Greatness appeals to the future.”


Why we do anything should be in pursuit of the truth: the truth that resides within us, the truth of why society does what it does, etc. And while our actions may not make sense to others at the time, if we are true to what we are pursuing and revealing, the pieces all come together to reveal our purpose and our strength of character to remain true to who we are.


10. Happier relationships





“I must be myself. I cannot break myself any longer for you, or you. If you can love me for what I am, we shall be the happier . . . I will not hide my tastes or aversions. I will so trust that what is deep is holy, that I will do strongly before the sun and moon whatever inly rejoices me, and the heart appoints. If you are noble, I will love you; if you are not, I will not hurt you and myself by hypocritical attentions. If you are true, but not in the same truth with me, cleave to your companions; I will seek my own. I do this not selfishly, but humbly and truly. It is alike your interest, and mine, and all men’s, however long we have dwelt in lies, to live in truth. Does this sound harsh to-day? You will soon love what is dictated by your nature as well as mine, and, if we follow the truth, it will bring us out safe at last.”


To live in truth with one another is to draw towards us people who give each other strength. Even if the strength is to move on as we realize we are not compatible. Truth is attractive and ultimately will lead us to other people who are in alignment with the gifts we can offer the world. Instead of clinging to a relationship that is not working, let go; for it is in letting go and allowing each individual to discover their truth that happier relationships can bloom.



11. The struggles will result in more knowledge, more strength and more contentment





“[When we conform] . . . We shun the rugged battle of fate, where strength is born.”


When we pursue a life of self-reliance we will run up against obstacles. These obstacles are not to stop us, but to strengthen us. And ultimately, just like an Olympian who has been training for years, met defeat along the way, but keeps learning and improving, we are stronger as we step to the other side of the obstacle. We are more contentment because we know how to successfully deal with any obstacle that presents itself. And that, that brings a tremendous peace of mind.






12. It is in being courageous that your destiny can be lived


“. . . the moment he acts from himself, tossing the laws, the books, idolatries, and customs out of the window, we pity him no more, but thank and revere him, — and that teacher shall restore the life of man to splendor, and make his name dear to all history.”


When we question the societal structures that have been in place that don’t sit well with our understanding of the world, we show courage. After all, it is easy to be a sheep and follow. It is safe, it is calm, it is predictable. But it is in the questioning, it is in the display of courage that history is made, societies improve and generations that have yet to be born will recall the spearhead of the change.


13. Elimination of regret





“Another sort of false prayers are our regrets. Discontent is the want of self-reliance: it is infirmity of will. Regret calamities, if you can thereby help the sufferer; if not, attend your own work, and already the evil begins to be repaired.”


When we choose to be self-reliant we find contentment, and contentment doesn’t acknowledge regrets. Every decision was their own, every lesson attempted to be learned and eventually learned as it is repeated until we absorb it. However, if we let other people make the decisions for us, if we follow instead of lead our own lives, then we have regret. Then we have discontent.


14. Loving your unique self is a magnet for more love





“The secret of fortune is joy in our hands. Welcome evermore to gods and men is the self-helping man. For him all doors are flung wide: him all tongues greet, all honors crown, all eyes follow with desire. Our love goes out to him and embraces him, because he did not need it.”


Choosing to love who we are and who we are discovering we can be is a self-love that lifts us each up. It is not the extreme of arrogance, but rather an appreciation for what we have been given and a promise not to squander the gifts. This realization, this way of living to rely on ourselves and make the most of our gifts, is intoxicating to the outside world. However, we seek this path not for the outside response. The outside response is merely a bonus.


15. Step into your greatness





“Insist on yourself; never imitate. Your own gift you can present every moment with the cumulative force of a whole life’s cultivation; but of the adopted talent of another, you have only an extemporaneous, half possession. That which each can do best, none but his Maker can teach him. No man yet knows what it is, nor can, till that person has exhibited it. Where is the master who could have taught Shakespeare?”


For much of my life, I lamented that I did not have a role model that lived entirely the life I dreamed I could achieve. Yes, I had many people who embodied aspects of the life I dreamed of, but not the entire existence. However, I have since learned my premature (okay, immature) mourning was unnecessary because as Emerson reminds above, there will never be someone entirely like any one of us. We must look within, listen to the quiet voice and trust that the universe knows more than we will ever be able to understand until we step into our greatness and fulfill our true potential.


16. More “luck” occurs in your life





“Nothing can bring you peace but yourself. Nothing can bring you peace but the triumph of principles.”


To circle back to the initial anecdote regarding luck and success. Choosing to be self-reliant is to choose a courageous path in life. It will be hard work, it will involve many set-backs and frustrations. It will involve sleepless nights doubting and questioning your decision to be self-reliant because sometimes it will be lonely. But the knowledge you need to hold close in these times of uncertainty is that you are not alone; the universe is guiding you and is thankful that you are brave enough to listen.


So long as you continue to learn the lessons from the set-backs, not be deterred by frustrations and put forth the effort, more and more luck will seemingly drop into your lap. Continue to help yourself and good fortune will continue to come your way.


Choosing to be self-reliant in a world that is ever “social” with the availability of the internet may at first seem impossible, but in many ways it is of benefit, as we can explore, learn and travel deeper into understanding who we are and challenge the conventional way of thinking if it does not sit well with us. The key is to quiet yourself from time to time. Step away from the noise, step away from the technology that bombards our senses and step away from the many voices of others in an effort to discern what your inner voice is saying. If we do this regularly, if we heed it, if we trust it, little by little, our lives begin to blossom into something that we most likely didn’t predict when asked in school “What do you want to be when you grow up?” However, I have no doubt what-so-ever that your life will be a joy to experience.

Champagne Baby: How One Parisian Learned to Love Wine–and Life–The American Way by Laure Dugas

Often is the case of the book written by the American who settles into her life in France, but now Laure Dugas shares the reverse of the tale: a French woman making her life and finding the life of her dreams in America. Born into a family of wine makers, Laure Dugas shares her journey of being sent by her uncle to represent the family business in New York City and discovering that many of life’s lessons align beautifully with how to choose and approach wine. Praised by French Women Don’t Get Fat‘s own author Mireille Giuliano and released just this past May, a delightful summer read is in store.


Edible French: Tasty Expressions and Cultural Bites by Clotilde Dusoulier

Blogger of the French food and travel blog Chocolate & Zucchini and author of a handful of wonderful cookbooks and French culture books, Clotilde Dusoulier wrote a few years ago (2014) Edible French, and as it sometimes happens, I am just learning of it now. However, if you are someone who is curious about the idiosyncrasies of the French language and its frequent marriage with anything food, this book is for you. Discover 50 of the French’s most popular food-expressions as well as the history of how they came to be. Full of beautiful illustrations by Melina Josserand, Edible French is a fun book for the Francophile who also loves food.


Simplissime: Le Livre de Cuisine le + Facile du Monde by Jean-François Mallet

An interesting fact, most cookbooks in France are considered to have done well if they sell 10,000 copies. So when chef, Paris-based food writer and photographer Jean-François Mallet’s cookbook Simplissime: Le Livre de Cuisine le + Facile du Monde sold 250,000 when it debuted last fall, people took note. Profiled in last week’s WSJ, Mallet shares what he thinks is the reason for its success, “These books are my answer to what people tell me constantly: ‘I’d like to cook but I don’t have the time or the money.’” And so after 10 years of working on the cookbook, he has produced a resource with the goal of enabling someone who knows how to make one dish very well, now “learn to make three or four other things well, and that by doing so, they’ll find the confidence to eventually start cooking without a cookbook.” I must say, I want to take a look at this cookbook and this version is in French which aligns with my French language-learning goal, but if you can wait until September, an English translation of the first book will be published by Black Dog Books.

Absolutely Fabulous

When I first learned of this raucous film Absolutely Fabulous, I had never heard of the British television series from which it was spun. But I quickly learned that Edina and Patsy are two PR agents, now in their sixties and flamboyant in their behavior as well as their fashion choices (in fact in both the Sunday New York Times and The Wall Street Journal‘s weekend section last week, this duo’s fashion label choices were quite the big deal and discussed in depth). The plot is one of humorous desperation as they are in need of resuscitating their business and renewing their business reputation. The film debuted in the south of France last fall and on July 1st in England; finally today, it will premiere in the states. I am patiently waiting for it to arrive in Bend as it looks like a delightfully funny, laugh-out-loud, need-to-step-away-from-the-real-world-for-a-moment film.

After a week of “aha!”s and “oh no”s, Friday has arrived and with more up moments than down, progress is being made. But it was the “aha’s” that won the week, and upon reflection, many of the “oh no”s were indeed powerful lessons that needed to be learned as to continue to build the life I love living.


On Monday and Tuesday, the rain poured down and the thunder roared, and I enjoyed so much simply sitting in my home with the windows open and taking in the sweet scent. These simple pleasures are the most wonderful priceless moments that I can’t imagine living without, and it is such moments that make the everyday exciting to wake up and enjoy.

My fascination led me to inquire if I might meet Nicole Michelle and share with you, TSLL readers why I think this is a must-visit destination the next time you happen to pass through Bend, Oregon.

Opening the doors of the cottage boutique in August of 2014, Nicole Michelle Decor offers linens and tableware sourced from around the world that will offer an authentic, unique touch not something easily replicated or found on the web. Selecting brands that are of high quality and timeless in their subtle, natural hues, as well as socially and environmentally friendly, customers can adorn their homes with peace of mind and satisfaction for years to come.


Nicole Michelle Hunzicker and her husband Andrew originate from Oklahoma, having visited Bend beginning in 2008 and settling down permanently with their three boys in 2011. With an appreciation for the south’s attention and appreciation for decor and having studied the History of Roman Art & Architecture at Oxford University in England, the blend of southern charm and English and European classic finesse without the fuss furthered her dream of opening her own boutique.


Since we share the choice of the word “refined” in each of our brand’s titles, I asked what comes to mind when the word is mentioned. Her response paints a clear picture of what customers will discover and enjoy when they step inside the boutique: thoughtful, conscientious, discerning, durable, signature, functional and of high quality.

Why Not . . . Eat in Courses?

“People who love to eat are always the best people.” – Julia Child


To love food, is to love flavor, to love quality and to allow ourselves to be fully present in the moment we are tasting what has been made for us. One of the habits I have begun to incorporate into my eating regimen more and more frequently especially when I invite people over for dinner or make my family dinner when visiting them is the idea of eating in courses.


While courses can be organized in a variety of ways, and I am still tweaking my approach to include the third course which is the cheese course (an excuse to eat cheese? Yes please!), typically a four course meal is de rigeur; however, even three course can have valuable benefits to not only our health, but our relationships with others and especially with food.


Since many TSLL readers, as well as myself, are intrigued by the French approach to eating, I wanted to share briefly what exactly their approach to the four course meal looked like. To begin, four courses take place at lunch and at dinner, with lunch being the larger, often more decadent meal. Second, the courses go in the order of:



Starter (raw vegetables, salad with a vinaigrette, cold cuts, or pâté)
Entree (typically red meat or poultry, paired with a starch and vegetable)
The cheese course (which acts as a digestive and fights acid erosion, as well as being a great conversation starter or focal point)
Dessert (something sweet, usually fruit)

Again, after researching for this post, I discovered, there are as many ways to organize your courses as there are number of courses from 3-8, but never was the cheese course served after the dessert course. That was the only consistency I discovered. (See how to build your own cheese platter here.)


While family style eating has become more common place in America and offers a casual approach to eating, curiosity and excitement (although kept quietly reserved) is often the response I observe in my guests, family and friends when they notice that the meal will be served in courses. After all, it shows a conscientious choice and reveals the thoughtfulness of the host or cook who wants to sit down and enjoy the company that has gathered for an extended period of time. To feel wanted, to feel that others want to enjoy your company, is a priceless gift you can give anyone. As well, there are many other benefits. Let’s take a look at them.


1. Savor the flavor


When a single item is place in front of you to enjoy, you are able to discern the individual flavors much more easily. Because of this, the cook has often paid careful attention to the individual dish itself because it will be the only thing each of the guests will be eating at that moment. At the same time, as you eat you are not bombarded with choices of which food to eat and can take your time and savor the flavors. In fact, if you are the cook or host, be prepared to answer questions about your dish: the ingredients, etc., as your guests will most likely be curious.


2. Eat exactly as much as your body is asking for


Our stomach takes time to communicate with our brains letting its human know it’s full or satiated. When we eat in courses, we are able to respect this time delay. As well, we are better able to know what our bodies are craving: protein, starches, fats, etc. It is much more difficult to eat too much and feel stuffed and miserable hours after the meal has been enjoyed when a meal of courses has been enjoyed. I can honestly say after the occasions in which I sat down and enjoyed at least three courses, I felt just right regarding how much I had consumed which makes the memory of the evening all the sweeter.


3. Enhance the conversation


Without a question, the conversations that are encouraged while sitting around the table for multiple courses are plentiful, rich and memorable to say the least. The key, of course (no pun intended), is to invite people who can communicate, enjoy communicating and have something to share. But even if you are sitting down with your family every night, as this ritual becomes routine of enjoying courses, engaging and participating in discussion becomes a skill that can be implemented in many other occasions throughout one’s life. 4. Lose track of time


Just last weekend, upon sitting down for dinner al fresco with friends at a local restaurant, as the conversation flowed, the time zoomed by as well. Before we knew it, over three hours had passed, and a couple of courses had been thoroughly enjoyed. What better way to spend our days than participating in scenarios so enjoyable we forget to look at our watches?


5. Reduce the need for snacking


As the blogger of French Foodie Baby points out, if we are to truly enjoy and appreciate a full course dinner or lunch, we must come hungry to the table. Which means . . . little or no snacking prior to the meal. If our minds and bodies know that when we sit down for a meal they will be satiated and completely satisfied, the motivation for refraining from snacking is heightened and made far simpler. I have always found that it is when I am uncertain of what I will be sitting down for, that I typically will nibble on items I absolutely love prior to the meal and sometimes ruin my dinner.


And the additional benefit of no or little snacking and rather enjoying a meal with courses is that we don’t eat mindlessly. Instead we eat exactly what our body needs and no more.


6. Enjoy a well-balanced meal


Organizing, cooking and baking for a three or four or eight course meal takes practice and is not simple initially. However, with practice and careful planning it is absolutely possible. With that said, when planning a multi-course meal, the balance is paid particular attention to. Whether you look at the plate and see thirds or quarters, the ingredients are the same: 1/4 or 1/3 protein or legumes, 1/2 or 2/3 low-starch vegetables and potentially 1/3 high-starch or whole-grain options. As well, the combination of flavors and textures will enhance the experience and help to fully satiate the palette.

7. Be reminded that it really is the simple pleasures every day that make life sweet


Sitting down for this daily ritual is a lovely reminder that it truly is the simple everyday tasks that can bring the most pleasure. Yes, we all have to eat, and we should be mindful of what we eat, so why not make this have-to a truly rewarding and much-anticipated experience? It truly can be and delicious food and flavors can be savored along the way without affecting our health negatively.

The gift of eating in courses is that it does indeed enhance our health, it heightens the pleasure we get to experience and it slows life down. When we slow life down, we let go of the habits and tasks that no longer serve us and begin to enhance those that do which ultimately heightens the quality and contentment in our lives.
