Eat– for Good Health

As I celebrate the release of FALLING EVERMORE with Filipina heroine Sophia Mercola who backs herself into a near-fatal corner, I’m making grilled chicken and corn courtesy of Panlasang Pinoy.  Garlic and paprika makes this dish unique.  The woman on the book cover lives in Los Angeles and hails from the Philippines (see below).

Grilled Chicken and Corn

Ingredients

2 lbs chicken thighs, cleaned
1 1/2 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
1/4 teaspoon paprika
5 pieces corn on the cob
1/2 cup soft butter



Cooking Procedure

Combine 1 teaspoon salt, garlic powder, ground black pepper, and paprika. Mix well.
Rub the mixture on the chicken thighs. Let stand for 3 hours to absorb the flavor. Note: Refrigerate the chicken during this process.
Heat the grill and start grilling the chicken. Grill each side for about 12 minutes. Note: grilling one side for 12 minutes straight will burn the chicken. Try to rotate the chicken every 3 to 4 minutes.
Remove the chicken from the grill and arrange in a serving plate.
Meanwhile, brush some butter and sprinkle salt on each corn.
Grill the corn for 15 minutes while continuously rotating them to prevent from getting burnt.
Remove from the grill and brush with additional butter.
Arrange in a serving plate with the chicken.
Serve. Share and enjoy!

Eat– for Good Health

Spoon up spinach to power up positivity!  This leafy dark green is bursting with folic acid, and folks with the highest levels of this B vitamin are the least likely to suffer depression according to Tufts University researchers.  Folic acid is crucial for the transportation of feel-good neurotransmitters throughout the brain.  A lack of it can lead to low levels of the chemical S-adenosylmethionine which breaks down theses hormones in your body. Enjoy with citrus water (squeeze a lemon or orange and add to water to).  Red pears add color, but any type of pear is fine.  (Gold Standard of Thin sells for $.99 for Amazon Kindle).



Spinach Salad with Pears Almonds and Cranberries

Ingredients




2 Tbsp red wine vinegar



2 Tbsp water



2 Tbsp olive oil



2 tsp mustard, coarse, ground



2 tsp pancake syrup, maple-flavored suggested



2 tsp uncooked shallot(s), minced



1/4 tsp table salt



1/4 tsp black pepper, freshly ground



6 oz fresh spinach, fresh, baby leaves (about 8 cups)



1 large pear(s), red, ripe, cored, thinly sliced into 12 pieces*



6 Tbsp chopped almonds, unsalted, dry-roasted**



1/4 cup(s) dried cranberries



Instructions

In a small bowl, whisk together vinegar, water, oil, mustard, syrup, shallots, salt and pepper until blended; pour 1/4 cup of dressing into a large bowl. Add spinach and toss until coated.
Arrange 2 cups of dressed spinach on each of 4 salad plates. Top each with 3 pear slices and then sprinkle each with 1 1/2 tablespoons of almonds and 1 tablespoon of dried cranberries. Drizzle each salad with about 1 tablespoon of remaining dressing and serve. Yields 1 salad per serving.

 If your vegetable garden has a huge bounty of zucchini, make zucchini fritters.  They’re so good with a little lemon.                                        





ZUCCHINI FRITTERS
 



4 c. shredded zucchini (leave the skin on)
3/4 c. packaged pancake flour
1/2 c. Gruyere cheese
1/2 c. milk
1 egg, lightly beaten
1/2 c. chopped onion
Place shredded zucchini in sieve to drain off excess liquid. In medium bowl, combine pancake flour, cheese, milk and egg; mix just until all ingredients are well moistened. Stir in zucchini and onion. Drop mixture by heaping tablespoonfuls onto lightly greased griddle or skillet; cook over low heat until pancakes are browned and bubbles appear on surface. Turn, brown other side. Serves 4.

Places– of Charm

Yesterday I cleaned up our backyard fountain and got it going. The soft splash of water adds life and motion to our postage-stamp-size backyard. It attracts more birds than still water alone, and its soothing babble covers up traffic noise.  Our lot backs up to Culver which is a busy six-laner going into the 405.
