Sometimes dieters get into a breakfast and lunch routine that keeps them satisfied, and then they have foods of more variety for dinner. I received an email yesterday from Rebecca Friedman who’d lost fifty pounds on the Gold Standard of Thin plan. For lunch every day Rebecca enjoyed tuna salad made with fat free mayo, celery, grated carrot, scallion on field greens. Her mainstay breakfast was oatmeal microwaved with blueberries, 1/2 cup blueberries, and a whole grapefruit on the size. She brought an apple to work as an afternoon snack. In Gold Standard of Thin there are over a hundred healthy recipes for all meals. Gold Standard of Thin encourages getting out of ourselves, and she began a hobby in photography. She took up yoga and walks thirty minutes a day.

We’re having BEEF AND BROCCOLI STIR-FRY TONIGHT. Planning a nutritious dinner (and then of course making it, ha, ha) prevents haphazard snacking. The “what the heck” scenario derails our efforts to slim down or stay that way. Here’s an example of a setback. Eat a cookie, think “what the heck” and eat more! Of course we know we are supposed to forgive ourselves and get right back on track. Why is it that most people say, “what the heck, I’ll just start tomorrow?” Planning ahead sets us up for success. 3 tablespoons cornstarch, divided 1/2 cup water, plus 2 tablespoons water, divided 1/2 teaspoon garlic powder 1 lb boneless round steak or 1 lb charcoal chuck steak, cut into thin 3-inch strips 2 tablespoons vegetable oil, divided 4 cups broccoli florets, 1 small onion, cut into wedges, 1/3 cup soy sauce, 2 tablespoons brown sugar, 1 teaspoon ground ginger, hot cooked rice
Directions: 1 In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth. 2 Add beef and toss. 3 In a large skillet or wok over medium high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm. 4 Stir-fry broccoli and onion in remaining oil for 4-5 minutes. 5 Return beef to pan. 6 Combine soy sauce, brown sugar, ginger and remaining cornstarch and water until smooth; add to the pan. 7 Cook and stir for 2 minutes. 8 Serve over rice.

Today I’m featuring M. Catherine Berg, author of the Gracie Wentworth cozy mysteries.

Eat– for Good Health
Don’t you love FISH ‘N CHIPS? Bake, don’t fry! Cole Slaw is a perfect side dish.

4 spray(s) olive oil cooking spray
2 medium uncooked potato(es), peeled and cut into 8 wedges each
1/4 tsp table salt, or more to taste (enough for potatoes and fish)
1/4 tsp black pepper, or to more taste (enough for potatoes and fish)
1/4 cup(s) fat-free skim milk
1 Tbsp Dijon mustard
1/2 cup(s) seasoned breadcrumbs
1/4 cup(s) all-purpose flour
20 fillet(s) uncooked Pacific cod, four 5 oz fillets
4 Tbsp red wine vinegar
Instructions
Preheat oven to 400ºF. Coat 2 large baking sheets with cooking spray.
Place potato wedges on one baking sheet and lightly coat with cooking spray; season to taste with salt and pepper. Bake until golden brown and tender, about 45 minutes.
Whisk milk and mustard together in a shallow dish. Place bread crumbs in another shallow dish and put flour in a third shallow dish.
Season both sides of fish with salt and pepper. Place fish in flour and turn to coat. Place fish in milk mixture and turn to coat. Place fish in bread crumbs and turn to coat.
Transfer fish to second prepared baking sheet and lightly coat with cooking spray. Bake fish until fork-tender, about 10 to 15 minutes. Serve fish and potato wedges with vinegar on the side. Yields 1 fillet, 4 potato wedges and 1 tablespoon of vinegar per serving.

Exercise– for Body and Spirit
Olympic Sailing competition is exciting– U.S. sailing winning trio Anna Tunnicliffe, Debbie Capozzi, Molly Vandemoer trained hard for their excellent results! Anna Tunnicliffe, top contender in the 2008 Laser class, brought her team to win the Silver medal at the 2012 women’s match on July 30th. They advanced to the finals by defeating fellow American’s Team Barkow 3-0, but went on to lose a tight series to overall Champions Team Audi Match Race, (FIN).
Finn class Sailor Dan Slater of New Zealand competes near Weymouth Picture: EPA. Hold on! My husband Gerry and I enjoy sailing off Newport Harbor, California but no longer race. We admire the tough skippers and crew who do! Sailing is unbelievable exercise with all the squatting movement which requires great agility.

5 cups diced eggplants, cut in 1 1/2-inch cubes 1 pinch salt (optional) 1/3 cup vegetable oil 1/3 cup soy sauce 1/4 cup red wine vinegar 6 garlic cloves, minced 1/2 teaspoon fresh ground black pepper Directions: 1 Spread eggplant on paper toweling and sprinkle with salt. Let drain for 30 minutes. Rinse and pat dry. 2 In a non-stick skillet, fry eggplant in oil until brown and set aside. 3 In a small saucepan, simmer soy sauce, vinegar, garlic and pepper for 5 minutes. 4 Add eggplant, cover and cook over low heat for 7 minutes, stirring occasionally. 5 Serve hot.


Exercise– for Body and Spirit
When a sport is dear to our hearts (swimming laps is for me) we watch Olympiads with great enthusiasm. After China’s Ye Shiwen set a world record in the women’s 400-meter, she was accused of using drugs. I was appalled and saddened for Ye. As you may know, she was quickly cleared. I admire her for her professional demeanor and of course, her amazing hard work and talent to have become a top athlete. I’m proud of Ye Shiwen.

There are many recipes for veggie burgers, and if you’ve ever tasted the one at The Counter, my recipe is a copycat. Really good! Photo below is courtesy of W.K. Ate. Because potatoes absorb the flavors added to them, this awesome vegan recipe has a satisfying texture. Serve with a slice of tomato, lettuce, Thousand Island dressing (fat free), on a thin whole wheat bun.
Ingredients:
1 cup canned black beans
1 carrot, grated
1/2 onion, diced
3 potatoes, grated
4 scallions, chopped
1 cup corn
salt and pepper to taste
oil for frying
Preparation:
Mash the beans with a fork or a potato masher. Add the remaining ingredients, except the oil and mix until well combined.Shape the mixture into patties. Heat about two tablespoons of olive oil and cook each patty until the done on both sides. My husband Gerry loves these, and your guy will too.

Today I’d like to call attention to a wonderful book I’m reading by author Tina Gayle. BIRTH is the second book of her Executive Wives series.

Brie Sullivan has a new baby girl and there are a million things to do, but Brie doesn’t have the energy to keep up. Why? She’s still grieving for her husband and suffering from baby blues, but she won’t let that stop her. She’s come up with the answer–find a new husband to be the father of her kids.
Jason Clark has been doing everything he can to help Brie. He loves her but can he accept her proposal of marriage knowing she’s not thinking clearly about the future?
