Grilled Chicken Salad with Strawberries and Spinach is all I’ve been craving now that Spring is in full bloom! I made this with creamy goat cheese and a white balsamic dressing, but this would also be great with Feta cheese and if you want to add more protein, or skip the cheese altogether, add walnuts or slivered almonds.

Skinnytaste Dinner Plan (Week 74). Hope everyone had a great weekend! If you had too many margaritas and chips this weekend, it’s time to get back on track with some healthy dishes, everything from grilled lamb chops to zucchini boats!

Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. Naked Greek Feta-Zucchini Turkey Burgers are so juicy, thanks to my secret ingredient, grated zucchini!





Baked Shrimp Taquitos

Baked Shrimp Taquitos are so much lighter and healthier than frying, and they come out perfect and crisp! The shrimp filling is SO good you’ll be tempted to eat it before you roll them up. I plan on making the filling again to use for shrimp tacos this week!
These are great as an appetizer, or serve them with salad and guacamole to make it a meal. I had two for lunch with salad and homemade guacamole and felt perfectly satisfied, although I would probably have three for dinner.

Asian Peanut Noodles with Chicken, Lightened Up is delicious, made with stir fried chicken strips, rice noodles, scallions, carrots, broccoli slaw, bean sprouts in a spicy peanut sauce. A winning combination of spicy, crunchy, sweet and salty will tantalize your taste buds.

Skillet Cheesy Chicken and Veggie “Rice” made with riced broccoli and cauliflower, sauteed chicken and cheddar cheese. I whipped this up for dinner the other night and my daughter loved it! It’s so fast and easy to make I knew I had to share.
