Skinnytaste Dinner Plan (Week 79). Hope everyone has a wonderful weekend! Here’s the new meal plan for the week, hard to believe this is the 79th one! Pictured below is The Skinnytaste Meal Planner where I plan my dinners for the week (you can of course use any meal planner). Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers.

I just love tacos with eggs, and these breakfast fajitas are no exception. Loaded with peppers and onions, guacamole and a runny egg on top (you can prepare the eggs however you like).

Not just for breakfast, these fresh fajitas would also be great as a meatless main (plan on 2 per person) which you could serve with some Mexican Cauli Rice.

This has become a favorite in my house. I originally got the inspiration for this dish from a comment I read on my sausage stuffed zucchini boats, I love it when you guys give me new ideas! They turned out so good, they are now a part of my summer rotation.


I made these for dinner last week and decided to give the photos a face lift, and revive this from the archives. Hope you enjoy!

Grilled Chicken Bruschetta is a summer staple in my house! Made with juicy tomatoes, mozzarella, basil, red onion, garlic and balsamic, it turns plain grilled chicken into a delicious weeknight meal in minutes!

Make the tomatoes the night before or early in the morning and let all the flavors marinate, then when you are ready to eat grill some chicken and you have yourself a quick weeknight meal.

Grilled Chicken Bruschetta – a delicious, light summer dish!
Grilled Chicken Bruschetta is a summer staple in my house! Made with juicy tomatoes, mozzarella, basil, red onion, garlic and balsamic, it turns plain grilled chicken into a delicious weeknight meal in minutes!

The tomatoes are the star of the show, to quote my husband “you could serve this over cardboard and it would be good!” Typically served over toasted bread as an appetizer, we love it over grilled chicken to make it a meal. Serve this with some crusty bread to soak up the juice if you wish, or just have this over a great big salad.


To make this Whole30 or Paleo, leave the cheese out, you won’t even miss it!
