Skinnytaste Dinner Plan (Week 76)

Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. Skinnytaste Dinner Plan (Week 75). Mondays I try to go meatless, so Best Skinny Eggplant Rollatini with Spinach is on the menu. I prep it Sunday night so Monday night I just put it in the oven. The rest of the week I am reviving some old favorites like Asian Peanut Noodles and one of Tommy’s favorites Garlic Shrimp in Coconut Milk, Tomatoes and Cilantro to name a few.

Grilled Chicken Salad with Strawberries and Spinach is all I've been craving now that Spring is in full bloom! I made this with creamy goat cheese and a white balsamic dressing, but this would also be great with Feta cheese and if you want to add more protein, or skip the cheese add walnuts or slivered almonds.
