Day 9 Recipe – POPCORN MARSHMALLOW TREATS (yes, Popcorn)!!!!

Okay, Rae really out did herself with this one, she went and found a recipe that combines some ingredients that would suffice just on their own, but together, well its just bliss. Take a look at the pic, gather the family around and start making them ASAP, you will be the shining star heading into the weekend!!!

POPCORN MARSHMALLOW TREATS
YOU WILL NEED:
1 bag (about 3.3 ounces) microwave popcorn, popped)
1/4 cup butter
6 cups mini marshmallows
1 cup mini chocolate chips
DIRECTIONS:
Coat a 9×9 baking dish with cooking spray.
Sift through your popped popcorn to make sure you’ve taken out all the un-popped kernels.
PLace your butter in a very large microwave bowl. Microwave for about 30-45 seconds until melted.
add marshmallows to the butter bowl. Stir to coat with the butter. Microwave for 1 1/2 minutes, stirring after 45 seconds. Stir to make sure the marshmallows are totally melted. Add your popcorn and stir carefully. Stir in the chocolate chips and immediately add to your baking dish.
Press the popcorn mixture into the pan with greased spatula. Let cool completely before slicing. You can refrigerate them to speed up this process.

Today’s recipe keeps with making sure your sweet tooth is satisfied, I for one just cant get enough of the stuff, so Rae, keep’em coming. I love the “French Fry” cookie idea, very creative and I am sure just as yummy!!!

FROSTING FOR CUT OUT COOKIES
After you make a batch of your favorite cut out cookies, you can frost with this recipe. This frosting recipe hardens on the cookie. You can use a squeeze bottle, spoon or just drizzle on cookies. I used the recipe to make “ketchup” for French fry cookies. (see photos)
You will need:
A batch of pre made cut out cookies, I use Martha Stewart recipe.
½ cup confectioner sugar
½ tsp. almond extract, you could also use vanilla, but I like the almond taste better
1 TBSP. milk, I used skim, any is fine
Food coloring optional
Mix first 3 ingredients, If you choose add color, frost cookies with spoon, squeeze bottle, or drizzle.
Enjoy!

Day 7 – for those of us running late (sorry about the late post) Rae has a wonderful “quick fix” recipe that is not only super easy to make but fast and can get you out of a bind when a nice quick dish is needed. Check it out, post your thoughts and enjoy.

EASY MINT COOKIES
You will need
A sleeve of round crackers (could use more or less depending on how much chocolate you put on each cracker
Mint chocolate baking chips, 1 bag
Put chocolate chips in a microwave safe bowl. Microwave 30 seconds stir, microwave another 30 seconds and stir. If the chips are melted stop, if not continue to microwave 30 seconds until melted. When chocolate is melted place a cracker in chocolate flip with a fork to coat. Tap the fork to remove excess chocolate, place on parchment paper that is on a cookie sheet. Let chocolate set. I usually put in my fridge for a few minutes. When chocolate is fully hardened they are ready to eat.
Tips- If you can’t find mint chocolate chips. Try regular chocolate and add mint extract. I would try 1/2teaspoon first. Taste and adjust to your liking.

Wow, what better way to start the week off that with some HOMEMADE DONUTS!!! Rae’s recipe will bring joy to any Monday blues, the mouthwatering picture speaks all for itself. I only wish our household wasnt so “bake/cook deprived” or I sure would try to make these in a heartbeat.

FASTNACHT KUECHELS (Fat Tuesday Donuts)
3 TO 4 CUPS FLOUR
1 PACKAGE DRY YEAST
½ TEASPOON SALT
¼ CUP SUGAR
1 EGG
¼ CUP COMBINED SOLID SHORTNING (CRISCO) AND BUTTER
1 AND ¾ CUP MILK
MIX 1 ½ CUP FLOUR, DRY YEAST, SALT AND SUGAR IN A LARGE BOWL
HEAT MILK AND 1/8 CUP BUTTER AND 1/8 CUP CRISCO, IN A SAUCE PAN UNTIL LUKE WARM, IT IS NOT NECESSARY FOR CRISCO TO MELT, ADD TO DRY INGREDIENTS IN BOWL.
BEAT IN MIXER 2 MINUTES MEDIUM SPEED.
ADD EGG AND ½ CUP FLOUROR ENOUGH TO MAKE THICK BATTER
BEAT HIGH SPEED 2 MINUTES
STIR IN ENOUGH FLOUR TO MAKE A SOFT DOUGH
KNEAD LIGHTLY, ADD DOUGH TO BOWL COVER BOWL WITH KITCHEN TOWEL, LET RISE IN A WARM PLACE UNTIL DOUBLED IN BOWL, ABOUT 1 HOUR,
PLACE DOUGH ON LIGHTLY FLOURED SURFACE KNEAD LIGHTLY, ROOL TO ½ TO ¾ INCH THICKNESS
CUT INTO SQUARES, APPROX 3 INCHES SQUARE, LET DOUGH SIT A FEW MINUTES, ALWAYS KEEP DOUGH COVERED WITH KITCHEN TOWEL.
HEAT OIL TO 370 DEGREES,
FRY A FEW AT A TIME, BEFORE FRYING PULL THE DOUGH A BIT SO DOUGH IS THIN IN CENTER, BROWN AND THEN FLIP AND BROWN OTHER SIDE
DRAIN ON PAPER TOWEL, SPRINKLE WITH POWDERED SUGAR OR CINNAMON/GRANULATED SUGAR MIX, I PUT MINE IN A BAG AND SHAKE.
