Day 17 Recipe – Mom’s Zippy Taco Salad
Rae, along with Brandy, is giving us a classic today – TACO SALAD – but its even better because its Mom’s and its Zippy!!! You know you all remember taco salad day back in the day in elementary school or middle school, I personally loved it and couldnt wait for that same day every week. So take a trip down memory lane with this one, enjoy!!!

Mom’s Zippy Taco Salad
You will need
1 pound ground beef
15 ounce can kidney beans, drained
½ cup picante sauce, you could use more if you like
8 ounce bag shredded taco cheese
shredded lettuce approx. 3 cups
bag of tortilla chips
2 medium chopped tomatoes
Brown the ground beef in a skillet. Drain completely, If you don’t drain well you will have a puddle of grease in your salad
Add beef back to skillet, with stove on low/medium, add drained beans, and picante sauce.
Cover and simmer 10 minutes, or until beans are soft, stir occasionally
While that is cooking in a large bowl add cheese, lettuce and chopped tomatoes, stir
When meat is done simmering and beans are done add to lettuce mix, stir to combine
Serve with tortilla chips. (I like to crush chips on top of my salad, on my plate, if you add to salad bowl they will get soggy).

Day 16 Recipe – Cherry Drop Cake
Ok, for day 16, Rae has given us a great way to start the week off, by feeding our sweet tooth – works for me!!! The pictures look great and the recipe give options to make it a little different if you so choose..

CHERRY DROP CAKE
You will need:
1 cup butter, softened
1 ½ cup granulated sugar
4 eggs
1 tsp. almond extract
2 cups flour
2 tsp. baking powder
1 can cherry pie filling
Directions:
Pre-heat oven 350 degrees
Cream, softened butter, sugar and eggs
Add extract, flour and baking powder, mix until smooth, batter will be thick
Turn batter out into a 9X13 greased pan, smooth out into pan
Spoon filling by dropping onto batter, DO NOT DUMP CHERRIES, your cake will not turn out right.(see picture for correct method)
Bake for 40-45 minutes
Filling will sink during baking.
Let cool. For decoration you can sift confectioner sugar on top of cake, slice and serve.
Tips: you can try other fillings like apple, but substitute vanilla extract for the almond

Day 15 Recipe – Chili Rellenos Casserole (WOW)
Looks like Rae is starting to bring out the BIG GUNS, I mean wow, one of my favorite foods in a casserole dish. The picture on today’s recipe looks especially good with that added decor around the plate, just really makes the whole thing look GREAT, wouldn’t you say…

CHILLI RELLANO CASSEROLE
You will need:
2 cans (4.25 OZ.) whole green chilies, you may use diced if you can’t find whole, (drained)
12 ounces Monterey Jack cheese, Needs to be shredded
3 eggs, slightly beaten
Salt and pepper to taste, don’t need much a pinch of each is all I use
2 tablespoons milk
Picante sauce for serving
In a greases 8 inch square greased glass pan, add ½ of the cheese, cut the chili so it will lay flat, layer chilies on top. Add rest of cheese
Slightly beat eggs in a small bowl, add salt and pepper, milk, Mix then add on top of cheese.
Cook at 375 degrees for 30 minutes or until set.
Slice and serve with picante sauce or salsa.
Enjoy!
