Just Had To Write This

When these waves of water works come near, I shall no longer fight them. I shall just give into them and feel better afterwards. I am so tired of being tired. I’m tired of being depressed. I am most definitely tired of crying. These withdrawals symptoms will not get the best of me. I will, by the power that God gives me to fight this all the way. I have a wonderful, supportive husband. That is for sure!! I could not and do not want to find out how to fight these symptoms on my own. There ain’t no way in hell!!! Devil, you can go shoot yourself. I do not want you near me or your negative thoughts trying to take over my brain. YOU will not succeed! I believe in the Father in Heaven, the God Almighty. With his help, I will overcome this mess. I believe in God and trust Him more than anyone can comprehend. I grew up with the Lord instilled in me since I can remember. So, the joke is on you, Devil! I don’t need you and depressing thoughts. I will overcome the fight because I am a BLESSED woman! I am already blessed with a grandson. There is another angel on the way. I cannot wait to meet this little one, so precious and tiny. Besides being blessed with grandchildren, I have a wonderful mom. Thank God, she is still around. She is a saint! If I am having a super bad day, all I have to do is call her up. Just talking with her about nothing makes me feel so loved and blessed. I have been blessed with five wonderful adult children. Talk about water and oil and all that….these five….never ever was a dull moment when they were together. I have to admit that I miss those days. From one son getting a conduct report for cutting a girl’s hair to another son getting one for having a classmate in a headlock.


The adventures of Motherhood never stop once your children are adults. Surprises of all kinds arrive at different times in your life. Just hang on and enjoy!

From Grandma’s Country Kitchen — Cocoa Apple Cake

COCOA APPLE CAKE


Tender, moist cake. Keeps well.


3 eggs


2 cups granulated sugar


1 cup (2 sticks) margarine


1/2 cup water


2 1/2 cups all-purpose flour


2 tablespoons cocoa


1 teaspoon baking soda


1 teaspoon cinnamon


1 teaspoon allspice


1 cup finely chopped nuts


1/2 chocolate bits


2 apples, cored and grated or finely chopped (2 cups)


1 tablespoon vanilla


Beat together eggs, sugar, margarine and water until fluffy. Sift together flour, cocoa baking soda, cinnamon and allspice. Add to creamed mixture and mix well. Fold in nuts, chocolate, apples and vanilla until evenly distributed. Spoon into greased and floured 10″ loose bottom tube pan.


Bake in 325 degree oven 60 to 70 minutes until cake tests done.  Makes 1 cake, 10 servings.

From Grandma’s Country Kitchen — Soft Bacon Twists

I have made these bread sticks so many times, the recipe is worn and tattered, not to mention splotches of grease on it. My kids ate these sticks like they were candy. Never lasted very long at all. :)


SOFT BACON TWISTS


2 cups warm water (105 to 115 degrees)


2 packages active dry yeast (I prefer the rapid rise yeast.)


1/4 cup sugar


2 teaspoons salt


2 tablespoons margarine, softened


5 1/2 cups all-purpose flour (about)


12 slices bacon, cooked and crumbled


1 egg yolk, beaten


1 tablespoon cold water


Sesame, poppy or caraway seed (Optional)


Measure warm water into a large warm bowl. Sprinkle in yeast; stir until dissolved. Add sugar, salt, margarine and 3 cups flour; beat until smooth. Stir in bacon and enough remaining flour to make stiff dough. On floured surface, knead 5 minutes. Set in a greased bowl; turn to grease top. Cover, let rise in warm draft-free place until doubled in size, about 40 minutes.


Punch dough down; divide into 24 equal pieces. Roll each into a 15″ rope. Fold in half and twist together. Place on a greased baking sheet. Cover, let rise in warm-draft free place until doubled in size; about 1 hour.


Beat egg yolk and cold water; brush twists. Sprinkle with sesame, poppy or caraway seeds, if desired.


Bake at 400 degrees for 12 minutes or until done.  Remove from baking sheets. Cool on wire rack.


Watch them disappear, especially if there is melted butter for dipping available.

My First Home As A Child

The first home that I vaguely remember is my grandparents’ home. (My dad’s parents.) Dad had been in the army and I’m not sure if he was completely out then or what. I know my oldest sister was born somewhere in the state of Washington. A brother and sister followed after my oldest. Then, I came along.


Grandma and Grandpa’s house always smelled so good. Aromas of freshly baked food filled the air often. During the winter months, the house smelled of wood burning. I loved that scent. Grandpa and Grandma’s house was always so warm.


We lived with my grandparents until I was 18 months old. For some reason, I can remember celebrating Easter there. It was early Easter morning, Dad and I were awake and in the kitchen. I found a basket full of candy at the kitchen door. He smiled down at me and said I could have one piece.


Mom, Dad, me and my siblings moved to where Mom still lives today. Her house is 50 years old. There are tons of memories of my grandparents’ house and of my parents’ house.


Time keeps moving on. We just keep getting older. I often wonder where the time goes.

From Grandma’s Country Kitchen — Brownies

Who doesn’t love brownies??


BROWNIES


4 tablespoons cocoa


1/2 cup butter


1 cup sugar


2 eggs


1/2 cup all-purpose flour


1 cup nuts


1 teaspoon vanilla


Melt cocoa and butter (Keep hot)


Beat eggs until creamy.


Add sugar and mix well.


Add cocoa mixture and flour.


Beat well.


Add nuts and vanilla.


Spread in shallow pan.


Bake 350 degrees for 30 minutes.


When cool, cut in squares and roll in powdered sugar


(Double the recipe and spread into a 9×13″ pan.)

From Grandma’s Country Kitchen — Ginger Cookies

GINGER COOKIES


1 cup sugar


1 cup molasses


1 cup lard


1 tablespoon baking soda, dissolved in a little warm water


A pinch of salt


2 eggs, beaten lightly


1 tablespoon ginger


Mix well and add flour to suit.


There were no baking instructions with this recipe.

From Grandma’s Country Kitchen — Pie Crusts

PIE CRUST


2 cups sifted all-purpose flour


1/3 teaspoon Calumet baking powder


1/2 teaspoon salt


1/2 cup cold shortening


Cold water


Sift flour once, measure.


Add baking powder and salt.


Sift three times


Cut in shortening until mixture looks like meal.


Add water a little at a time, mixing until dough cleans bowl of all flour. Use little water as possible. Roll dough 1/8″ thick on slightly floured board.


Bake in hot oven. (450 degrees) for 15 minutes.

From Grandma’s Country Kitchen — Baking Powder Biscuits

BAKING POWDER BISCUITS


To 1 cup of flour take 1 teaspoon Calumet baking powder


1/4 teaspoon salt


2 tablespoons shortening


1/3 cup milk (about)


Sift flour once, measure. Add baking powder salt and sift again. Cut in shortening. Add milk gradually until soft dough is formed. Roll 1/2 inch thick on slightly floured board. Cut. Bake in hot oven (450 degrees) 15 minutes. 1 cup makes 6 biscuits.

From Grandma’s Country Kitchen — Vanilla Wafers

VANILLA WAFERS


1/2 cup sugar


1/2 tablespoon butter


1 egg


3/4 cups flour


2 1/2 tablespoons milk


1/8 teaspoon salt


1 teaspoon baking powder


1/2 teaspoon vanilla


To bake, drop a little batter from a teaspoon onto a greased baking sheet. Mix ingredients. Place spoonful of dough well apart as the dough spreads.


Bake in moderate oven (350 degrees)


This about 30 cookies.

From Grandma’s Country Kitchen — Drop Cakes

This sounds like an interesting recipe.


DROP CAKES


1 cup light brown sugar


1/2 cup butter


2 small or 1 large egg


1/3 cup chopped seedless raisins


1/4 cup cold water


2/3 cup coarsely chopped pecans


2 cups all-purpose flour


1/2 teaspoon baking soda


A little bit of grated nutmeg


Cream the butter and the sugar. Drop in the eggs, one by one beating between sac addition. Add nutmeg and alternately the flour and water in which the baking soda has been dissolved. Dust the nuts and raisins with a little of the flour. Mix in well. Drop from spoon on a lightly floured cookie sheet. Bake until light brown.
